Description

Basic chia pudding recipe layered with fresh berries, cacao nibs, sliced almonds, and crumbled cookies. Perfect to prep for breakfasts, snacks, or dessert.


Ingredients

Basic Chia Pudding

  • 1/4 cup white chia seeds
  • 1 cup unsweetened almond milk
  • 1 TBSP maple syrup

Berry Pudding Parfait

  • 1/2 cup fresh berries, muddled
  • ~1/2 cup chia pudding recipe, above
  • 2 crumbled Vanilla Maple Coco-Roons
  • 1 TBSP slivered almonds
  • 1 TBSP cacao nibs
  • 1/4 cup fresh berries
  • 1/2 kiwi, sliced

Instructions

  1. Add the almond milk and maple syrup to a large bowl, then stir in the chia seeds with a fork.
  2. Allow the mixture to sit for 5-10 minutes, then whisk it again, cover, and place in the refrigerator for 4 hours or overnight.
  3. To make the berry pudding parfaits, muddle fresh berries at the bottom of a jar. Top them with the prepared chia pudding, Coco-Roon crumbles, slivered almonds, cacao nibs, fresh berries, and kiwi in layers. Serve immediately.
  4. Store leftover chia pudding in the refrigerator for up to one week.
