Description

Starbucks copycat blueberry oatmeal made on the stovetop in 10 minutes and served with berries, nuts, and dried fruit. It’s easier to make at home!


Ingredients

  • ½ cup gluten-free old fashioned rolled oats 
  • 1 cup unsweetened almond milk
  • dash of cinnamon
  • ½ cup fresh blueberries
  • 2 TBSP mixed nuts (slivered almonds, chopped pecans, chopped walnuts)
  • 2 TBSP dried fruit (raisins, dried cranberries, dried cherries)
  • 12 tsp pure maple syrup

Instructions

  1. Add the oats, unsweetened almond milk, and cinnamon to a small saucepan over medium-high heat. Bring the mixture to a low boil, then reduce the heat to a simmer and cook the oats for 10-15 minutes. Stir the mixture frequently to prevent it from sticking to the bottom of the pan. Add a splash of almond milk if the mixture gets too dry. 
  2. Serve the oats warm in a bowl and top with fresh blueberries, mixed nuts, dried fruit, and a drizzle of maple syrup. 
  3. Enjoy!
