Ingredients
- Bare Snacks Banana Chips
- 1/2 cup dairy-free dark chocolate, melted + more for topping
- 1/2 cup peanuts, crushed
- 1/4 cup unsweetened shredded coconut
- 1/4 cup goji berries
Instructions
- Open the banana chips and add them to a plate. Measure out the dark chocolate, unsweetened shredded coconut, goji berries, and crushed peanuts and set aside. Line a small baking sheet with parchment paper and set aside.
- Melt the chocolate in a saucepan over medium-low heat, stirring consistently to avoid burning. Transfer to a bowl.
- To assemble your Chunky Monkey Superfood Banana Chip Bites, dip banana chips into the melted chocolate, covering about half of the banana chip in melted chocolate. Drain excess chocolate and transfer the banana chip to the parchment lined baking sheet. Repeat until all of the banana chips are half coated.
- Sprinkle unsweetened coconut, crushed peanuts, dark chocolate, and goji berries on the melted chocolate. Transfer to the freezer for quick-cooling or leave at room temperature for 45-60 mins to allow the chocolate to harden. Enjoy!
