Dijon Tahini Green Beans

Description

Get your greens in with this saucy side that’s oil-free with a creamy dijon tahini dressing. Perfect to complement your holiday spread.


Ingredients

  • 1 lb green beans, rinsed and trimmed

Dijon Tahini

  • 2 TBSP runny tahini
  • 1/2 lemon, squeezed
  • 1/4 cup hot water + more to thin
  • 1 tsp Sir Kensington’s Dijon Mustard
  • pinch of Himalayan sea salt
  • pinch of black pepper
  • Sesame seeds, for serving

Instructions

  1. Add the washed and trimmed green beans to a pot of boiling water and cook them for 3-5 minutes, until they’re vibrant green and just fork tender. Pour them into a colander to strain immediately and rinse with cool water. Set aside.
  2. Prepare the dijon tahini sauce by adding all ingredients to a mixing bowl and whisking by hand until smooth. Add more hot water as needed to reach desired consistency. It should be thick but pourable.
  3. To serve, add the warm green beans to a platter and pour the dijon tahini over the beans. Serve them immediately with a sprinkle of sesame seeds.
  4. Store the leftover green beans and tahini sauce separately in airtight containers in the refrigerator and reheat before serving.
