Description

Protein pancakes packed with all of your favorite greens! Gluten-free, grain-free, refined sugar free, tons of fun to make and even more fun to eat.


Ingredients

Glowing Green Protein Pancakes

  • Nonstick spray (I used avocado oil spray)
  • 1 TBSP flaxseed + 3 TBSP filtered water
  • ½ banana
  • 1/2 TBSP unsweetened almond milk
  • 1/4 cup (~1 scoop) protein powder ( I used Tone It Up Vanilla– some brands may work better than others)
  • 1 TBSP pistachios
  • big handful of spinach (or sub your favorite leafy green)

For Serving

  • hemp hearts
  • maple syrup
  • sliced kiwi

Instructions

  1. Warm a skillet over medium heat with a little bit of nonstick spray or avocado oil.
  2. In a blender or food processor, combine 1 TBSP flaxseed + 3 TBSP filtered water and let sit for a few minutes to create your “flax egg”.
  3. Next, add banana, almond milk, protein powder, pistachios, and spinach and blend until well combined.
  4. Spoon mixture onto the skillet to form several pancakes.
  5. Heat for 5 minutes, or until golden brown underneath, then flip and heat for 3-5 on the other side. Transfer pancakes to a plate and top with fresh sliced kiwi, hemp hearts, pistachios, and maple syrup.
