Description
Protein pancakes packed with all of your favorite greens! Gluten-free, grain-free, refined sugar free, tons of fun to make and even more fun to eat.
Ingredients
Glowing Green Protein Pancakes
- Nonstick spray (I used avocado oil spray)
- 1 TBSP flaxseed + 3 TBSP filtered water
- ½ banana
- 1/2 TBSP unsweetened almond milk
- 1/4 cup (~1 scoop) protein powder ( I used Tone It Up Vanilla– some brands may work better than others)
- 1 TBSP pistachios
- big handful of spinach (or sub your favorite leafy green)
For Serving
- hemp hearts
- maple syrup
- sliced kiwi
Instructions
- Warm a skillet over medium heat with a little bit of nonstick spray or avocado oil.
- In a blender or food processor, combine 1 TBSP flaxseed + 3 TBSP filtered water and let sit for a few minutes to create your “flax egg”.
- Next, add banana, almond milk, protein powder, pistachios, and spinach and blend until well combined.
- Spoon mixture onto the skillet to form several pancakes.
- Heat for 5 minutes, or until golden brown underneath, then flip and heat for 3-5 on the other side. Transfer pancakes to a plate and top with fresh sliced kiwi, hemp hearts, pistachios, and maple syrup.
