Orange Ginger Tofu Marinade

Easy and flavorful tofu marinade perfect for the center to your plant-based meal! Orange, maple, and ginger make tofu taste anything but tasteless.


  • 1 16-oz package extra-firm tofu, drained and rinsed
  • 1/4 cup fresh squeezed orange juice
  • 1 TBSP tamari lite
  • 2 tsp maple syrup
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger

For serving

  • quinoa
  • hemp hearts


  1. Press a package of tofu while making your marinade. If you don’t have a tofu press, wrap the tofu in paper towels and set a heavy pan on top to remove the moisture.
  2. To a 9 x 13 baking dish, add all marinade contents and whisk to combine with a fork.
  3. Cut pressed tofu block into long 1/2″ slabs and add to the marinade. Top with fresh orange slices if desired. Place dish in the refrigerator and marinade for at least 1 hour, longer if you have time, flipping once halfway.
  4. Remove the baking pan from the refrigerator and preheat the oven to 375°F.
  5. Once the oven is preheated, cover the tofu dish with foil and bake it for 20 minutes, covered.
  6. After 20 minutes, remove the foil, flip your tofu slabs, and bake for another 15- 20 minutes, or until almost all of the marinade is absorbed and the tofu is lightly browned on the edges.
  7. While the tofu is baking, prepare your side dishes. I chose steamed asparagus, carrot, and cherry tomatoes.
  8. Serve the Orange Ginger Tofu on top of a bed of steamed vegetables and quinoa. Brush the tofu with any remaining orange ginger marinade from the pan and garnish with a sprinkle with hemp hearts and sliced avocado.
  9. Store leftover Orange Ginger Tofu in the fridge for 3-5 days and reheat before serving.
