Description
3-ingredient “sugar” cookies made gluten and grain-free with SunButter! Finish them with red and green sprinkles for a festive treat.
Ingredients
- 1 flax egg (1 TBSP ground flaxseed + 3 TBSP filtered water)
- 1 cup Organic SunButter
- 1 cup unrefined coconut sugar
- Red and green sprinkles (optional)
Instructions
- Preheat the oven to 350°F and line a baking pan with parchment paper.
- Mix up your flax egg in a large mixing bowl and set aside to gel for five minutes.
- Add in the SunButter and coconut sugar and mix until well combined.
- Using a cookie dough scoop, form 1 Tablespoon balls. Drop the balls into red and green sprinkles, then flatten with a fork using a crisscross pattern, OR drop the balls directly onto the cookie sheet and use a fork to flatten. Top with red and green sprinkles, if desired.
- Place the cookies 1-2″ apart to prevent overlapping while baking.
- Bake the cookies for 10-12 minutes, or until golden brown underneath. Cookies will appear underdone when first removed from the oven. This is normal! Cookies will continue to harden as they cool.
- Store leftover cookies in an airtight container for 3-5 days or freeze for long-term storage.
