Description

3-ingredient “sugar” cookies made gluten and grain-free with SunButter! Finish them with red and green sprinkles for a festive treat.


Ingredients

  • 1 flax egg (1 TBSP ground flaxseed + 3 TBSP filtered water)
  • 1 cup Organic SunButter
  • 1 cup unrefined coconut sugar
  • Red and green sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking pan with parchment paper.
  2. Mix up your flax egg in a large mixing bowl and set aside to gel for five minutes.
  3. Add in the SunButter and coconut sugar and mix until well combined.
  4. Using a cookie dough scoop, form 1 Tablespoon balls. Drop the balls into red and green sprinkles, then flatten with a fork using a crisscross pattern, OR drop the balls directly onto the cookie sheet and use a fork to flatten. Top with red and green sprinkles, if desired. 
  5. Place the cookies 1-2″ apart to prevent overlapping while baking.
  6. Bake the cookies for 10-12 minutes, or until golden brown underneath. Cookies will appear underdone when first removed from the oven. This is normal! Cookies will continue to harden as they cool. 
  7. Store leftover cookies in an airtight container for 3-5 days or freeze for long-term storage.
