Description
Vegan Sourdough French Toast made with gluten-free sourdough bread topped with berries, maple syrup, and SunButter. Perfect for an easy breakfast!
Ingredients
Vegan Sourdough French Toast
- 1 TBSP ground flaxseed
- 2 TBSP cornstarch
- 2/3 cup unsweetened almond milk
- 1 TBSP pure maple syrup
- 1/4 tsp ground cinnamon
- 6–8 pieces of vegan sourdough bread (depending on the size of your bread)
- 2 tsp vegan butter
For serving
- No Sugar Added SunButter
- Berries
- Maple syrup
- Coconut whipped cream
Instructions
- Add cornstarch and ground flaxseed to a large mixing bowl. Slowly add in the almond milk while whisking. Continue whisking until the cornstarch is completely dissolved into the almond milk without any lumps. Next, add in the maple syrup and cinnamon. Whisk everything together until it’s well combined.
- Heat a large skillet over medium heat with a bit of vegan butter.
- While the skillet heats, add the sourdough bread slices to the batter and allow it to soak on each side for ~10-15 seconds. The bread should be well coated but not soggy.
- When the skillet is warm and the butter is melted, add the french toast to the pan and swirl to coat well with the butter. Cook for 5 minutes on each side, or until both sides are golden brown and crispy.
- Serve the french toast immediately with optional toppings, like No Sugar Added SunButter, berries, maple syrup, and coconut whipped cream. This recipe is best when fresh, but leftovers can be stored in an airtight container in the refrigerator for 1-2 days and reheated in a skillet before serving. Enjoy!
