Description
Veggie lover’s pizza made grain-free with Bob’s Red Mill Flatbread Mix. Add sauce, vegan cheese, and toppings for a plant-based pizza night!
Ingredients
Flatbread Crust
- 2 flax eggs (2 TBSP ground flaxseed + 5 TBSP filtered water)
- ¼ cup avocado oil
- ¼ cup filtered water
- 1 package Bob’s Red Mill Grain-Free Flatbread Mix
Toppings
- 1/3 cup sugar-free pizza sauce
- 1/2 cup dairy-free shredded cheese
- 1/4 TBSP red onion, diced
- 1/2 cup bell peppers, diced
- 2–3 mushrooms, sliced
- 4 TBSP black olives, sliced
- 1/2 cup tomato, diced
- pinch of red pepper flakes
Instructions
- Preheat the oven to 400°F and line a pizza pan or baking sheet with parchment paper.
- Mix together flax egg in a large mixing bowl and allow to sit for 5 minutes to gel. Next, add in the oil, filtered water, and bread mix. Mix well to combine. Let it sit for another 5 minutes.
- Spoon dough into the center of the prepared pan. Use wet hands to press dough into an 8–10-inch pizza crust, crimping the edges up to form a crust. Alternatively, you can create two 6-inch crusts instead.
- Bake the crust until set, and lightly golden; about 10 minutes.
- Remove from the oven and add sauces and toppings of choice. Return to the oven to finish baking with toppings another 7-8 minutes.
- Slice into pieces and serve immediately! Store leftovers in the fridge for 2-3 days and reheat in the microwave before serving.
