Everywhere around me there are fall festivals, pop up markets, and Oktoberfests happening.
Life has been such a blur lately (summer, where did you go?!), that I haven’t had the chance to attend to any community fall events.
If you’re in a busy season, too, I see you!
And there’s no need to leave all of that fall flair for outside the house.
I decided we could bring Oktoberfest to your house, and make it vegan and gluten free (a feat in itself, if you know traditional German food!).
While I can’t pretend that my version of Bratwurst is authentic, it is delicious and looks enough like the real thing to be a charming stand in.
Most of you know that my boyfriend, M, is originally from Germany so he keeps me honest when it comes to my German inspired recipes.
He also happens to be my chief taste tester and F&V HQ.
And while he did remark that these Vegan Brats, and I quote, “aren’t real bratwurst”, he did say they were quite tasty and scarfed down a couple.
So, I give you, an Oktoberfest meal for your next busy weekend that you don’t need to leave the house to make.
This Vegan Bratwurst with Sauerkraut is made with oats, legumes, and spices pan-fried and served with Eden Foods Organic Sauerkraut and fried apples.
It’s delicious for an Oktoberfest at home that’s both vegan and gluten free!
What You Need to Make Vegan Bratwurst
This Vegan Bratwurst is easy to make without any fancy equipment or ingredients.
Here’s what you need to make Vegan Bratwurst:
- ground flaxseed
- gluten free old fashioned rolled oats
- walnuts
- Eden Foods Organic Great Northern Beans
- white onion
- Eden Foods Organic Garlic Powder
- tomato paste
- Eden Foods Organic Paprika Powder
- Italian seasoning
- Himalayan sea salt
- Eden Foods Organic Cumin
- Eden Foods Organic Extra Virgin Olive Oil
That’s it!
How to Make Vegan Bratwurst
In a small bowl, mix the ground flaxseed and water to create your flax egg.
Set aside for 5 minutes to allow the mixture to gel.
Add the oats and walnuts to a high speed blender or food processor and pulse until you have a fine meal.
Add in the flax egg, white beans, white onion, garlic powder, tomato paste, smoked paprika, Italian seasoning, sea salt, and cumin.
Process until it’s well combined and thick.
Transfer the mixture to a bowl and move it to the refrigerator to chill for ~30 minutes.
This will make the bratwurst easier to form later!
Once the mixture is chilled, use a ⅓ cup measuring cup to form 6-7 oblong sausage shapes with your hands.
If the mixture sticks to your hands, try using plastic wrap or parchment paper to shape the sausages instead.
Place the bratwurst on a large plate lined with parchment paper.
Add the olive oil to a large skillet over medium heat.
Once it’s warm, carefully transfer the bratwurst to the pan and fry them for ~10 minutes, alternating position frequently so all sides get browned.
The bratwurst will be delicate, so be gentle with them when flipping and moving!
Remove the bratwurst from the pan and set them aside.
What You Need to Make the Sauerkraut with Apples and Onions
While Eden Foods Organic Sauerkraut is highly delicious by itself, I love adding pan-fried apples and onions for a seasonal spin!
Here’s what you need to create the sauerkraut:
- Eden Foods Organic Sauerkraut
- apple
- yellow onion
That’s it!
How to Sauerkraut with Apples and Onions
Add another drizzle of olive oil to the pan if it’s dry and place back over medium high heat.
If the pan still has some oil remaining from the bratwurst, you don’t need to add any at all.
Once it’s warm, add in the sliced onion and apple and sauté for ~10 minutes, or until the onion is fragrant and the apple is soft and tender.
Drain the entire jar of sauerkraut in a colander for a few minutes and then add it to the pan.
Mix everything well and heat for several minutes until the kraut is warm and well combined with the apples and onions.

I used my favorite Eden Foods products to create this Vegan Bratwurst.
This is my all-time favorite kraut for sandwiches, salads, and sides.
Clearly, the star of the show is Eden Foods Organic Sauerkraut.
This sweet cabbage is harvested, finely shredded, and fermented with sea salt for at least 6 weeks.
I love that this kraut comes in a glass jar without any funky ingredients.
It adds the perfect acidity and saltiness to any bland recipe.
Many times I’ll throw it on my salads and sandwiches when they’re lacking flavor.
It’s the perfect base paired with apples and onions for Vegan Bratwurst!
Even my German boyfriend agrees.
To make the Vegan Bratwurst, I relied on some other Eden Foods favorites.
I used Eden Foods Organic Great Northern Beans to build bulk and add protein to the bratwurst mixture alongside oats and walnuts.
Eden Foods Organic Garlic Powder, Eden Foods Organic Paprika Powder, and Eden Foods Organic Cumin keep the bratwurst beautifully seasoned.
And Eden Foods Organic Extra Virgin Olive Oil is our trusty pantry staple oil for all of your dipping, frying, and sautéing needs.
How to Serve Vegan Bratwurst
Add the vegan bratwurst to the pan and cook an additional 1-2 minutes to reheat the bratwurst.
To serve, add the sauerkraut and vegan bratwurst on a plate and top with optional fresh herbs.
I like adding minced parsley for some color contrast and a hint of freshness.
While I used the Eden Foods Organic Sauerkraut, I think Eden Foods Organic Three Onion Sauerkraut would be beautiful here, too!
Store leftover bratwurst and sauerkraut in the refrigerator and reheat in the microwave before serving.
This is a delicious fall recipe to enjoy for Oktoberfest.

Ingredients
Vegan Bratwurst
- 3 flax eggs (3 TBSP ground flaxseed + 1/3 cup filtered water)
- 1 cup gluten free old fashioned rolled oats
- ½ cup walnuts
- 1 15-oz. can Eden Foods Organic Great Northern Beans, drained and rinsed
- ½ small white onion, chopped
- ¼ tsp Eden Foods Organic Garlic Powder
- 1 TBSP tomato paste
- 2 tsp Eden Foods Organic Paprika Powder
- 1 tsp Italian seasoning
- 1/2 tsp Himalayan sea salt
- ½ tsp Eden Foods Organic Cumin
- 1 TBSP Eden Foods Organic Extra Virgin Olive Oil
Sauerkraut
- 1 jar Eden Foods Organic Sauerkraut
- 1 large apple, cored and sliced
- 1 small yellow onion, sliced
For servings
- Minced herbs
Instructions
- In a small bowl, mix the ground flaxseed and water to create your flax egg. Set aside for 5 minutes to allow the mixture to gel.
