Coconut Curry Rice Bowl

This week we checked out a new coffee house in our area on a weekday morning before work. 

It felt like a bit of a hassle at the time, because we (read:I), get into these routines that feel nonnegotiable. 

Like, how am I supposed to brave the Maryland traffic without a coffee at 7 AM?! 

The horror. 

To be fair, I do have a successful morning routine at home which involves coffee, meditation, gratitude, movement, and planning my day.

Oh, and of course getting to at least level “Amazing” on the NY Times App Spelling Bee game, because Genius is just too much work.

Next I walk with M and Flora and then we eat breakfast and I set up for my day, either a photoshoot, recipe testing, or computer day. 

It’s true, we have fine-toned our mornings to achieve the intersection of maximum productivity and enjoyment. 

However, I think it’s important to remember that we’re actively *choosing* this routine, or otherwise everything just becomes a chore. 

That’s why breaking the routine for something like a coffee date felt so disruptive, rebellious, and in the end, fun. 

So, your assignment for the week from your friend Lauren is to disrupt your routine a little.

Because you create your routine, your routine doesn’t create you. 

And you always have the authority to change it. 

For example, perhaps this week we turn our rice a vibrant yellow. 

You rebel, you!

Lately I’ve been feeling good in my skin, strong in my body, and confident in my presence. 

Maybe it’s the warm weather that cocoons our condo by noon, maybe it’s the dumbbells I’m lifting before breakfast, or maybe it’s the shorts and t-shirt uniform. 

I really think summer is my season, and every time it rolls around, I wonder if I might be 10% happier if I lived in a place that was habitually 70 degrees and sunny.

Maybe.

But I also want summer to be like the candle I only light on Friday, Saturday, and Sunday evenings; special and significant when it comes and glows. 

Because it’s been warmer here, I’ve been enjoying a lot more fresh vegetables in our meals.

This past week M and I mapped out our new daily walk around the neighborhood. 

We used the blinking blue dot on Google maps to pinpoint our location and make connections between intersecting streets and trails. 

28 minutes– the number we ended up with as we stood outside of our new place with the old doormat, reading “There’s No Place Like Home” in the bristles. 

M has never seen The Wizard of Oz, so I’ve added it to the top of our To-Do list.

“I feel like it’ll be better to watch in the Fall,” I explained, dreaming of crunchy leaves and cooler winds and muted colors. 

But for now, it’s still hot, and I’m living on bowls at the new place. 

Today’s recipe isn’t complex, but it’s tasty, packed with plant-based protein, an oil-free dressing, and plenty of kraut.

I’ve been happy lately, friends.

Maybe it’s the warmer weather, or maybe it’s just a newfound perspective this summer.

It feels like things are shifting, changing, and becoming.

Like good things are on the tip of my tongue, about to spill over my lips and into fruition.

I’m emerging from quarantine feeling the vibration of potential and possibilities that the remainder of the year allows.

My intention for 2020 was *forward* and I’ve definitely tested that two syllable word to the fullest in the past month.

Shedding old identities, stories, and thought patterns and trying on new ones.

In the midst of all of this self reflection and discovery, I haven’t really wanted to cook fancy meals.

In fact, I haven’t been thinking much about food at all.

There, I said it.

But, in the midst of so much change, we still need to eat and eat well.

Guys, I need to decorate.

My friend and photographer came over to take some photos of me in my home this week for the blog.

I had the idea to use my couch for the scene, my beige couch with an expansive blank white wall above it that stretches from the window to the wall.

A blank white wall that could *really* use a painting, a decorative shelf, a framed photo….SOMETHING.

But I didn’t have anything, so instead we worked hard to place plants and bright pillows and cheerful coffee mugs to give the scene some zest.

The white walls were acceptable when I moved in 5 months ago, but now they feel a bit harsh and unwelcoming.

I just don’t quite know where to start, you know?

One of my best friends told me, just put one thing up and go from there.

Well, OK, that sounds easy enough.

Maybe I should just put up some food photos and call it a day.

Hi!

How are you new year intentions going?

I didn’t really set any hard fast goals other than that I wanted to start meal-prepping again.

Somewhere in the midst of moving and holiday deadlines I decided that it was OK to eat out on the daily.

Yes, even food bloggers can spend way too much money on prepared food.

“But Lauren, don’t you eat the food you make?”” my friends often ask, perplexed.

Well, yes, but the eats don’t always work out that conveniently.

Allow me to explain.

During my busy holiday season, for example, I might have cookie recipes to share with you all week.

Cookies on the counter, cookies in the freezer, cookies in the fridge, cookies on my photography backdrop board, more cookies in the oven.

Yum. Cookies galore.

But it’s either eat cookies for lunch and dinner or suck it buttercup and dirty up the dishes I just spent an hour cleaning to making something savory.

This is where meal prep comes in clutch for me, and maybe for you too, friend.

You might not be surrounded by multiple cookie recipes but you might be in a work environment where you can’t break to make a feel good meal.

I’m not talking making 25 meals on Sunday evening pre-portioned in Tupperware.

I am talking about having readily available washed and chopped vegetables, fruit, and plant-protein prepared with potential in the fridge.

Where did the summer go, friends?

I feel like I blinked and missed it.

Sure, we still technically have a month left according to the calendar, but as soon as September hits I know that warm weather days are numbered.

At the same time I do get all tingly when I think about crunchy fallen leaves, the inescapable pumpkin everything, and crisp cool autumn air.

I’m starting to add hints of fall to my food and my favorite combination lately has been this macro bowl

It has sweet baked butternut squash, toasty quinoa, salty olives, sauerkraut, creamy avocado, and a bright lemon tahini dressing.

If you’re not feeling the fall feels yet, allow this Sweet & Savory Macro Bowl to be the most seamless transition for you.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
