2-Minute Lemon, Spinach, & Chickpea Salad

By Flora & Vino 5 Comments

2-Minute Lemon, Spinach, & Chickpea Salad in a fresh lemon and avocado oil dressing. Perfect for workweek lunches!

2-Minute Lemon, Spinach, & Chickpea Salad served on a plate with a fork with chickpeas and spinach and lemon on the side by Flora & Vino

Are you team kale or team spinach?

For years I was decidedly team kale, lacinato, or curly.

Maybe that’s because I ate a lot of frozen growing up so kale felt new and exciting.

But lately I’ve been all about that fresh baby spinach life.

I buy a giant tub each week at the store each week and what I don’t eat in salads I freeze and add to my shakes.

I don’t care how much you love kale, you’ve got to admit, you can *always* taste a bit of it in your shake, right?

Anyway, I’m not here with a shake recipe today, friends, I’m here with a fresh salad recipe!

This 2-Minute Lemon, Spinach, & Chickpea Salad is ready in under 5 minutes for a light and breezy summer meal.

Do you still have cable?

To be honest, I’m not a huge TV-watcher.

And by that I mean, when I turn on the TV, I usually turn it on with the intention to watch a recorded episode of Grey’s Anatomy or a romcom on Netflix.

So when Dan asked me if I wanted to cancel cable, I shrugged and said, “Sure, why not.”

(He’s gone down a recent rabbit hole of YouTube TV– did you know that was a thing?)

So today is our first cable-less evening– no big deal– until I realized that the our HBO subscription was a gift through our newly canceled cable contract.

And the only thing I really care about watching on television right now is HBO’s new Gentleman Jack.

But it’s OK because I signed up for a free trial that I will absolutely forget to cancel before the billing begins next month.

So I’m all set up to watch the latest episode on my laptop with a brownie square that I’m sharing with you today.

These Super Fudgy Vegan Brownies are made in just 1-bowl with a 15 minutes bake time!

Rainbow kabobs with summer vegetables and a quick-mix spicy lime yogurt sauce. The perfect skewer to enjoy for summer grilling!

Vegetable Kabobs with Spicy Lime Yogurt by Flora & Vino

It’s Memorial Day weekend!

Which means it’s unofficially (but so officially) summer.

It was a perfect 75 degree day today here in Virginia and every second spent indoors away from the sunshine hurt!

So.

If you stayed in town, are you grilling this weekend?

Grilled veggies are to summer what roasted veggies are to fall.

A staple.

We haven’t fired up our grill yet, but I love using my grill pan to achieve the grill marks without actually manning the fire.

Dan wants to dust off the real deal tomorrow– weather permitting!

If you’ve already got yours out and ready, throw these Vegetable Kabobs with Spicy Lime Yogurt on the fire for a quick plant-based option to classic kabobs.

Chocolate Avocado SunButter Pudding by Flora & Vino

I’m going to ask you to reach into lunch boxes of lunches past.

Are you there?

What’s for dessert?

Did you ever eat those little snack pack pudding cups in your elementary school (or grown up) lunches?

My mom used to get them sometimes and I savored each sweet spoonful.

The vanilla was good, too, but decidedly less exciting than the chocolate.

Yes, there’s something about chocolate pudding in particular that’s hard to beat.

This Chocolate Avocado SunButter Pudding is the best way to recreate that pudding nostalgia with just 5 whole food ingredients and a blender.

So, is it summer yet?

I ordered a swim suit this past week in anticipation of sunny summer activities.

The swimsuit was a ruffled two-piecer that didn’t fit quite right out of the cardboard box but looked super cute on the model online.

I’m trying to rock the whole high-waisted swimsuit thing but this one looked more like a wrinkled tutu than a bikini bottom.

I guess you could call it a mint green.

It’s also called a return!

You know what else is mint and green?

These Avocado Mint Cacao Chip Ice Cream Sandwiches that is sure to fit into your summer lovin’ and livin’!

It’s made no-churn with just 5 simple ingredients including avocado, coconut milk, and cacao nibs.

1-Pan Tofu Cacciatore with Zoodles

By Flora & Vino 1 Comment

1-pan Tofu Cacciatore with Zoodles, bell pepper, onions, tomato, and tofu cubes for protein. Perfect for easy weeknight dinner!

1-Pan Tofu Cacciatore with Zoodles served on plate with fork and bowl of parsley with blue and white striped towel

How long have you been digging the plant-based life?

When the doctor asked me recently how long I’d been vegan, I had to stop and do that thing where you mentally count on your fingers.

1…2…3…4…5…

“Six years this fall!” I said, surprising myself.

Wow, that’s a whole lot of plants, friends.

Considering it’s my 6-year “plantiversary”, let’s cozy up to this 1-Pan Tofu Cacciatore with Zoodles.

One pan to rule them all packed with peppers, protein, and simply delicious seasoning over zucchini spirals!

Dan’s been gone on travel the past few days and Harper has been moping around acting like she lost her only friend.

She spent the entirety of the first night downstairs, just waiting on the door to open that never did, only coming upstairs around 5 AM to whine and communicate to me that dad was still gone and that she wasn’t at all happy about it.

By Day 2 she resigned herself to hanging out with dear old mom, ears pricking up whenever there was a promising dad-like noise from outside.

Needless to say, it’s going to be emotional reunion tonight when he walks in the door.

Something about having the house to myself makes me all the more motivated to make a home cooked dinner, so this easy cacciatore has been on repeat.

I spent the past two nights happily spooning bites into my mouth while watching Game of Thrones and trying not to cry into my zoodles.

Oatmeal Tahini Chocolate Chip Scones

By Flora & Vino 20 Comments

Easy oil-free, gluten-free, and refined-sugar-free scones with tahini, oatmeal, and chocolate chips. Perfect with a warm beverage in the morning or evening!

Oatmeal Tahini Chocolate Chip Scones served on blue plate with dark chocolate chips and a fork with tahini on the side

To get through tedious homework in elementary school I used positive conditioning in the form of candy.

I opened a bag of bag of plain or peanut M&Ms next to my textbook and wide rule paper.

For every time I finished a math problem, I popped an M&M or two (or three) in my mouth.

On to the next question.

Solve, savor, swallow, repeat.

Kind of what I did while testing these Oatmeal Tahini Chocolate Chip scones, except instead of M&Ms I popped chocolate chunks.

What, did you think I was going to say an entire scone?!

Friends, this is my first ever scone recipe on the blog!

And because art imitates life, it’s also my first in real life.

Why the first?

Well, I spent most of my adult life baffled by scones.

Maybe it’s because I’ve never been across the pond to England, or maybe it’s because triangles in geometry were never my favorite shape.

Regardless, these triangles of oat-y goodness are now my new favorite dainty treat.

Chickpea Patties with Cashew Mayonnaise

By Flora & Vino Leave a Comment

Easy chickpea patties made with garbanzo beans and hearty oats. Perfect for meal prep to add to salads, bowls, and plates.

Chickpea Patties served on plates with dollop of Cashew Mayonnaise and forks

Happy Friday, friends!

Do you have Mother’s Day plans this weekend?

We’ve got back to back mom days planned; lunch with my mom Saturday and lunch with Dan’s mom Sunday.

Personally, I want to know what Harper has in store for her dog mom (AKA ME), because I feel like I could use some puppy love.

Speaking of moms, I’ve got a recipe to share with you today that is mom-approved.

These Chickpea Patties with Cashew Mayonnaise are easy enough to whip up for 30 minutes for a hearty plant based protein!

Why mom-approved?

Because this easy recipe is based on a salmon- patty recipe my mom used to make on school nights growing up.

We usually ate them with tomatoes and mayonnaise for dipping amongst other sides.

After my parents mentioned having them for dinner on the phone, I knew I had to recreate them for the blog.

My mom texted me the recipe and I set out making substitutions.

I was able to easily make it vegan by swapping in canned chickpeas for canned salmon and a flax egg for the egg.

Everything else follows my mom’s scrolling handwritten instructions, save for the few spoonfuls of tahini, because…tahini.

Savory toast with a white-bean and cashew based ricotta spread topped with baby artichokes and fresh dill. Perfect for brunch or a light lunch!

White Bean Ricotta & Artichoke Toast by Flora & Vino

It’s getting harder to work indoors lately.

The pollen is starting to disappear, and with it all of my restraint for staying indoors.

Even though it’s been a while since I was in school, I still feel the anticipation of summer coming, as is all of us were about to take an epic vacation from life.

Today I stood in my studio, camera in hand, gazing out at bright blue skies and wondering if F&V would mind if I took the day off…

The answer is yes, because I have a recipe for you that needs to be shared and needs to be shared today!

It’s been a second since we did a classic Toast Tuesday, so I thought I’d share this White Bean Ricotta & Baby Artichoke Toast with you.

My new favorite savory toast that’s perfect for casual breakfast, lunch, but elegant enough to serve for (Mother’s Day!) brunch!
