TGIT, friends.

All of the anticipation of the holidays is lifted and we’re left looking around wondering…what’s next, 2018?

Well, I’ll tell you what’s next.

On Instagram I polled you guys on what you wanted posted this week and I was secretly happy to see that 1-Pan Meal won!

I created this Butternut Squash  & Chickpea Bake recently when Dan was out for a guy’s night for the evening.

Naturally, I took an excessively long shower, put on a facemark, poured a glass of kombucha, and went about chopping veggies for dinner.

It was so good that I deemed it my go-to solo-lady cozy dinner.

The mixture is so simple– requiring only three whole foods on your sheet pan with a no-fuss seasoning!

Happy New Year’s Eve Eve.

It’s been freezing here all week, you guys!

The kind of cold that makes you grab hats and scarves and all the accoutrements just to take the pup outside.

To be honest, I didn’t get outside much because I’m still getting over a lingering post-Christmas cold.

We got our first “real” dusting of snow last night, and I skipped my usual Saturday spin class to (try to) enjoy a slower morning.

Partially to procrastinate de-frosting my car…because I’m not entirely sure where my ice-scraper is or if it’s even in my car.

Also to rest up this red Rudolph nose so that it’s presentable to go out tomorrow for New Year’s Eve.

As you might have guessed, we’re going to try out a new winery in the area, and I can’t think of a better way to ring in 2018!

So I’ve been holed up here at home, going a bit crazy, planning for the new year, making soup…

I’m definitely ready to get back into a steady routine in the new year and I’m convinced that it should involve a steady stream of feel-good and good-for-you soups.

Foodie minimalism at its finest, right?

Virginia had it’s first snow of the season this weekend!

It didn’t stick much, but it was that wet snow-man kind of snow that makes the world look like a real-life snow globe.

We discovered that Harper loves snow, and Harper discovered that she can eat that white stuff on the ground, so it was a good time for all of us.

Being “snowed in” had me craving hearty meals that warm you from the inside out.

Before the countdown to Christmas dinner begins, I wanted to share a colorful light dish that has healing gut superpowers!

These Rainbow Rice Noodle Bowls are the perfect meal to munch on this December between heavier holiday feasts.

A few years back, the only miso in my diet was the steaming miso soup Dan and I got at the Japanese steakhouse where we had our first date.

Actually, the only probiotic in my diet at all was yogurt.

Boooooring.

Now, all fermented foods are my jam, miso included!

Miso, along with all fermented food, increase the amount of good bacteria existing in your gut.

It has a satisfying salty flavor that works perfectly in sauces in dressings to add to your meals.

Dan and I were lucky to spend time with tons of family, some that we haven’t seen in years.

Do you ever get the post- holiday blues?

You know, that awkward feeling of, oh, now what?

After the table is cleared and family starts to dissipate, I always start to feel a little funny as my mind shifts from “holiday-mode” to the post-holiday-world.

Who’s planning out their Thanksgiving menu?

Being plant-based, my family and friends like to give me a hard time about bringing a “Tofurkey” to dinner, or some other pesudo-meat creation.

No offense to you Tofurkey eaters out there, (I’ve actually never tried it!) but I usually take a pass on the “Frankenstein” food products, as I like to call them.

You know, the ones that try oh so hard to imitate dairy products but will never quite get there?

I prefer to throw to throw all of the seasonal harvest in a bowl and call it a holiday.

My last college course was French, and I took it over the summer in an accelerated schedule so that I could finish on time for graduation.

I spoke French every darn day that summer and now I can safely say I don’t remember a word of it.

Memory is a fickle thing. All of those tireless lessons hung out short-term storage and then said “Au Revoir!” after I had my diploma in hand.

Point being, I won’t tell you how many times I had to look up the spelling of “Ratatouille” before sharing this post.

This Vegan Chickpea Ratatouille, however, I can’t forget, even if I can’t always spell it right.

From now until spring, I plan to live on one-pan meals.

Anyone else?

They’re so simple to throw together and never ever get boring.

Especially when you give them fun dish-themes, like Vegan Chickpea Ratatouille.

Of the many variations on ratatouille, this one with chickpeas and eggplant is my absolute favorite!

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
