How was your fourth of July?

Did you see any fireworks?

I spent Independence Day from the comfort of my own home with good food and good company.

The only fireworks I saw this year were the sparklers that lit up the asphalt on my neighborhood streets.

Every time we heard a bang I ran to the window, craning my neck left to right for any trace of glowing sky.

You’d be proud to know that I took the entire weekend off work to really relax and commemorate the red, white, and blue.

It’s honestly been hard to get back into the swing of things this week after a long holiday weekend.

This past Monday I woke up and had to take a few hours to center myself back into the work and kitchen mindset.

Can’t I just eat leftover watermelon and plant-based burgers all week?

Well, maybe…

But one of the things that always makes me feel more grounded and prepared is make ahead breakfast.

These Trail Mix Overnight Oats are so easy to mix up and top with my favorite trail mix blend of organic nuts and seeds!

So, let’s get a little spicy with our oatmeal toppings this week, shall we?

Maybe you’ve put nut butter in your oats.

Maybe you’ve even put nuts and dried fruit in your oatmeal for texture and crunch.

But have you ever tried putting trail mix into your overnight oats?

You’re going to love the crunchy, salty, sweet texture that trail mix lends to this classic overnight oats recipe!

Here’s what you need:

  • 1 cup gluten-free old-fashioned rolled oats
  • 4 tsp chia seeds
  • 1/2 tsp cinnamon
  • 2 TBSP maple syrup 
  • 2 TBSP cashew butter (or nut butter of choice) 
  • 1 cup unsweetened almond milk
  • O Organics® Organic Cranberry Nut Trail Mix
  • O Organics®. Organic Roasted Unsalted Almonds
  • O Organics® Organic Roasted Unsalted Cashews

That’s it!

The method here is simple– mix everything together in mason jars, store in the fridge overnight, then top with nuts and seeds in the AM.

I topped my overnight oats with cranberry nut trail mix, roasted unsalted almonds, and roasted unsalted cashews for the perfect trail mix feel.

Enjoy these Trail Mix Overnight Oats for an easy and nutritious anytime breakfast.

I think they’d be great to make and take with you on your summer adventures.

Enjoy them while camping, on a hiking adventure, or beachside.

The combination is totally vegan, gluten-free, and packed with plant-based protein.

The recipe below serves 2, but you can easily multiply the quantities to make double or triple to prepare multiple jars for the entire week.

Try adding in a tablespoon of your favorite vanilla protein powder for an additional boost of protein!

Add more or less trail mix to achieve your perfect texture and crunch.

I used roasted and unsalted nuts for my Trail Mix Overnight Oats, but you can use salted nuts as well for more of a salty sweet pairing.

Description

Meal prep trail mix overnight oats naturally sweetened with maple syrup and topped with dried fruit, nuts, and nut butter. Perfect for make ahead breakfast!


Ingredients

  • 1 cup gluten-free old-fashioned rolled oats
  • 4 tsp chia seeds
  • 1/2 tsp cinnamon
  • 2 TBSP maple syrup 
  • 2 TBSP cashew butter (or nut butter of choice) 
  • 1 cup unsweetened almond milk
  • O Organics® Organic Cranberry Nut Trail Mix
  • O Organics®. Organic Roasted Unsalted Almonds
  • O Organics® Organic Roasted Unsalted Cashews

Instructions

  1. Combine all of the ingredients in mason jars and mix to combine.
  2. Place in the refrigerator overnight.
  3. In the morning, uncover and top with Organic Cranberry Nut Trail Mix, Organic Roasted Unsalted Almonds, Organic Roasted Unsalted Cashews, and a spoonful of cashew butter.
  4. Serve immediately!

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.
