Sometimes I look at my older more “complex” recipes and the general feeling is similar to looking at my wedding pictures with  knee-length dress and a pixie cut.

It feels something like– how exactly did I pull that off?

Meals the past week have been all about healthy convenience as I juggle lots of balls.

I’m not sure I’m ready to chop off my locks or anything, but I am thinking I might need to take some cooking lessons from my past self.

When I stop juggling.

Yesterday I looked up from photographing banana bread to see giant balls of white drifting across the view of my deck door window.

I did a double take, taking my attention away from the loaf on my cream backdrop board to stare at snowflakes.

I guess it’s not weird, considering that it’s February and all, but it was also 43 degrees outside with zero chance of accumulation.

But it’s been an unseasonably warm here in Virginia, with more days in the mid 50’s than days in below freezing.

Sometimes it feels like we skipped the whole winter thing and went straight to a pseudo-spring situation.

I’m not really complaining, because when it comes to winter I prefer more of a highlight reel than the real real, you know?

Anyway, I’m still baking indoors like it’s winter outside to stay seasonal.

And you’re going to want more than the highlight reel on this new vegan and gluten-free banana bread I have to share.

Happy Christmas Eve!

What’s that one iconic holiday breakfast that instantly brings you back to Christmas morning as a youngster?

I used to wake up in the wee hours of the morning, terrified that if I moved even an inch under my quilted comforter that I might scare away old Saint Nick.

If I didn’t smell orange danishes and sausage egg and cheese breakfast casserole wafting up the stairs to my bedroom I knew it was too early.

These days I usually try to sleep in and let Kris Kringle make the rounds undisturbed before I start the oven and bang pots and pans.

Anyway, it’s been a tradition here for me to publish one final recipe on the day before Christmas.

Hi!

Long time no talk.

I’ve been feeling a little short on words lately, as if my communication is congruent with the darkening days.

The winter solstice is this Saturday– the darkest day of the year.

I know this because I googled it and I googled it because I still use natural lights for all of my photoshoots.

So the darker earlier days really rains on my food photography parade, you know?

I also know this because I have a 90-min Winter Solstice Yoga Flow class on Thursday night where we do 108 sun salutations to welcome winter with warmth.

Anyway, you haven’t missed a whole lot behind the scenes.

Yoga teacher training and photoshoots keeps me busy during the day and in the evenings I cozy up and watch Christmas movies on Netflix.

In fact, I think I’ve watched more Christmas movies this year than any other year on record.

They’ve got a lot going for them: they always have happy endings and the soundtrack is all Christmas music.

Hello!

Since we last chatted daylight savings time went into “Fall backwards” mode, leaving us with an extra hour of  sleep and an abruptly dark dinnertime.

Everyone says that the day after Halloween is officially the start to the “holiday season”.

Nothing felt drastically different on November 1st save the mostly full bowl of Halloween candy by the door.

(I got a whopping TWO trick-or-treaters, guys!)

Bu when I scheduled my 8-week hair appointment with my stylist yesterday she said “Enjoy the holidays!”– that’s when it hit me.

I won’t see her until January and the holiday hustle is upon us, hair highlighted or not.

It’s Halloween Eve!

Do you have any spooky traditions that you do every year?

Nada over here.

I have heirloom pumpkin on the stoop and a candy-filled ceramic pumpkin bowl perched by the door in anticipation of trick-or-treaters at the new place.

Growing up, my parents used to get us donuts and apple cider to snack on before the trick-or-treaters showed up.

I’m not sure if that’s just a my family thing or if it’s a your family thing, too, but for this reason, I always associate donuts with Halloween!

Guys, apparently I missed the apples.

WHAT?!

At my farm photoshoot last week I was seriously excited to pick some apples but as it turns out the apple orchards were closed for the year.

So I played with pumpkins instead and later bought some gorgeous Granny Smiths for the sole purpose of baking with.

They were clearly destined for cake, although I didn’t know it then.

If you’re thinking, Lauren, the last thing I need right now is another dessert recipe with Halloween candy laying around in plain sight.

Well, this is the kind of cake you can enjoy all fall long once the candy is long gone.

Also, can I just add that this 1-Bowl Apple Oat Cake is so much more than dessert.

It’s nutritious and filling with gluten-free oats, tart apples, and crunchy almonds.

Apple season is when we say it is and I say it’s now and it’s in our kitchens!

The inspiration for this 1-Bowl Apple Oat Cake comes from an old family recipe!

My mom used to make apple cake that we enjoyed after brisk fall walks around the neighborhood with the sun low in the sky.

The original recipe called for two cups of sugar, oil, and eggs, so I made some F&V swap outs to make the recipe vegan, gluten-free, and oil-free.

Did you know that some clothing stores allow dogs inside?

Like, actually allow them to stroll in the mannequin flanked double doors on all four paws?

Well, I didn’t.

I’m watching Harper this week and on Wednesday we had an epic shopping spree.

It started out walking around the town center and ended up inside the dressing room at J-Crew, Harper smiling through her panting as I tried on flannel for a fall photoshoot.

I paid for two plaid shirts at the register while one of the sales associates crooned over Harper, now sprawled across the the floor in complete retail therapy bliss.

Guys, I’m pretty sure I never want to go shopping without my best girlfriend again.

Despite the retail therapy, this week has been pretty rough.

Lots of recipe fails, yoga homework, and quick meals to sustain late nights.

I do, however, have an excellent fall-inspired granola recipe to share with you.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
