By Flora & Vino 12 Comments

Hearty quinoa bowls with a pumpkin twist with blackened brussels sprouts, avocado, and an easy balsamic reduction. Great for a gluten-free grain bowl!

Pumpkin Quinoa Bowls served in bowls topped with balsamic reduction

I’m happy to report that it’s finally starting to feel like fall here in Virginia.

We got back from Indiana on Monday and were cooly greeted with sweater weather.

I stepped our of the car, shivering in my T-shirt, and instantly started craving all things soothing and warm.

You know what goes well with sweater weather?

Hot chocolate, big pots of soup, oh, and cozy quinoa bowls with flavors that represent the season.

These Pumpkin Quinoa Bowls with Balsamic Reduction are my current go-to power bowl.

Grab a sweater and let’s get brusselin’.

Strawberry Quinoa Salad with Zesty Lime Tahini

By Flora & Vino 1 Comment

Fresh and light 1-bowl quinoa salad celebrating strawberry season and spring vegetables with a zippy oil-free lime tahini dressing.

Strawberry Quinoa Salad served on plate with forks with blue and white striped towel with zesty lime tahini dressing

Did I ever tell you about that time I went strawberry picking?

I showed up at the farm with my sunhat and gardening gloves, ready for the romance of picking beautiful red fruit from the ground while seated daintily in the shade.

Well, let me tell you, strawberry picking is not that picturesque.

I stood hunched over under the beating sun, squinting through the shrubbery for flashes of red berry, sweat collecting in the rim of my sunhat, my basket of berries only a quarter full.

Every berry into the bucket was a success, and every berry chucked onto the ground…was probably overripe and buggy.

But friends, the good ones were SO GOOD.

It’s strawberry season again and I know just what to do with them.

Something like…toasted quinoa tossed with sweet strawberries, peppery radishes, crunchy snap peas, tender peas, and fresh herbs, tied together with a bright lime tahini dressing.

These days I mostly purchase my strawberries from the store, but that doesn’t mean I’m not willing to work for my berries.

This Strawberry Herb Quinoa Salad, however, hardly requires much work at all; just 1-bowl and less than 30 minutes.

That way you can spend more time outside, enjoying the warmer weather, or, picking more berries.

Maple Balsamic Tempeh Bowls

By Flora & Vino 2 Comments

Maple Balsamic Tempeh Bowls with quinoa, and roasted rainbow vegetables. Perfect for protein packed lunches and dinner.

Maple Balsamic Tempeh Bowls served in bowls with rainbow vegetables with sheet pan on side

Being entirely plant-based, I institute periodic self checkins where I ask myself (in very serious and stern self-monologue)…

“Are you getting enough protein?”

If my only recent food recollections are flashes of veggies dipped in hummus (oops),  the response to myself is a bashful “no”.

Maple Balsamic Tempeh Bowls to the rescue.

I’m excited to share these Maple Balsamic Tempeh Bowls with you because it’s one of my absolute favorites.

Have you tried tempeh yet?

If you want to try tempeh, but aren’t sure what the heck to do with it, this recipe is for you.

If you’ve tried tempeh and decided you’re definitely not a fan, give this recipe a try and reassess.

This magical maple and balsamic marinade has a way of swaying even the most hard and fast of tempeh opinions.

Kale Caesar Salad with Avocado Dressing

By Flora & Vino 1 Comment

Vegan caesar salad with crispy chickpea “croutons” and a creamy oil-free avocado tahini dressing. Perfect for meal prep and weekday lunches!

Kale Caesar Salad with Avocado Dressing served on a plate on a white distressed wooden board with two forks and skillet of chickpeas in the corner by Flora & Vino

When I first delved into finer dining on dates and amongst friends, I got nervous ordering off of the food menu.

I always ordered a Caesar salad in those instances because it’s easy to pronounce and tasty to eat.

You know exactly what you’re going to get with a Caesar.

Plentiful salad green smothered in creamy white dressing with buttery croutons and flecks of parmesan.

My ordering anxiety is gone now, which is good, because this Kale Caesar Salad with Avocado Dressing isn’t as easy to say, but it’s easier to fall head over heels for.

I recreated this comforting classic in a salad that is plant based and healthy with just a few substitutions.

Okay, maybe everything is a substitution, but when you taste it you’ll agree you wouldn’t have it any other way.

It manages to still have that refreshing creamy “Caesar” feel without any of the dairy, oil, and gluten.

Plus, you get the added benefits of healthy fats and protein where your typical Caesar can sometimes be lacking.

Paprika Power Bowl with Apple Cider Tahini

By Flora & Vino 1 Comment

Power bowl with paprika roasted veggies paired in a creamy Apple Cider Tahini Dressing. Prepare the ingredients in advance for easy lunches!

Paprika Power Bowl served in bowl with Apple Cider Tahini

Big bowls of everything are all I want lately!

After I mix everything together with a fork and knife, bits of kale and veg always overflow and my heart aches at the sight of them lying shipwrecked on the countertop.

This Paprika Power Bowl with Apple Cider Tahini has major overflow potential, because it has everything.

It’s got texture, crunch, savory and sweet, and a creamy dressing that ties it all together.

Leafy greens, ancient grains, roasted veg, protein packed legumes, hearty nuts, sweet dried fruit, a killer oil-free dressing, and a dusting of seeds!

Do you think I could have fit anything else in there?

Believe me, I tried.

Chunky Chickpea Noodle Soup

By Flora & Vino Leave a Comment

1-pot chickpea noodle soup in 30 minutes! A healthy take on the classic packed with veggies to keep you well.

Chunky Chickpea Noodle Soup served in bowls with an orange towel and crackers on the side by Flora & Vino

I used to love getting sick as kid, because it meant I could eat all the Campbell’s Chicken Noodle Soup I wanted, washed down with Fruit Punch Gatorade that turned my tongue and lips redder than my stuffy nose.

Fighting my first cold as a vegan, I definitely daydreamed about those sodium laced red and white Campbells soup cans.

There is something so healing and restorative about broth.

Everyone around me seems to be coming down with something lately, so I figured I’d head off any potential bugs by making a vegan version of this classic.

So, just in case I catch the sniffles, I’ll be adequately prepared, you know?

This Chunky Chickpea Noodle Soup has all of the same flavors I loved about being sick as a kid, with some significant healthy upgrades, like a lower sodium content, three times the chunky veg (including the unexpectedly amazing addition of brussels sprouts), and protein to boot.
