Hi, friends! 

January is stereotypically the time of year of start plans. 

New workouts, new diets, resolutely resolving to break bad habits and add healthy routines. 

By now, you might have heard me talking about the cookbook that I’m working on.

The theme is Vegan Meal Prep and includes mix and match recipes for how to be plant-based even when life is crazy (which it always is– right?).

It’s funny, because I feel like I’m carefully crafting a product that I would  love to consume.

Meaning, that yes, I too, would covet a collection of vegan & gluten-free recipes that take the guesswork out of meal time. 

So I’ve been working my way through the F&V archives, drawing inspiration from my favorite easy-to-prep plant-based recipes. 

While making my meal prep list, I thought, why not share this resource with you guys, too? 

If you’ve been here a while you know that all of the recipes on Flora & Vino are pretty darn simple with minimal ingredients. 

Therefore, it could easily be argued that *all* F&V recipes are meal-prep-able.

However, there are definitely some that fit more conveniently into the meal prep lifestyle more than others!

Yesterday I completed a socially distant gift drop off at my parents’ house. 

I piled brown paper bags to their full capacity with wrapped presents and managed to corral them into the car with only one red bow jumping ship.

Huzzah. 

I felt a bit like Santa Claus, humming to classic Christmas music with gifts in tow, driving down highways to where I used to live.

I dropped their gifts perched on my old front porch and scooped up gifts addressed “To: Lauren” in their stead. 

I inwardly laughed, because they had used the same Whole Foods brown paper bags to transport the gifts as I had. 

It was a bit strange, waving at my parents behind a mask and a storm door, but I know they could tell I was grinning. 

When I got home, M said that the mini tree was too small; the sea of new gifts dwarfed its green needled stature. 

It’s going to be a good Christmas, friends. 

Do you typically have your big Christmas meal on Christmas Eve or Christmas Day? 

Typically, we’ve always done the “nicer” dinner on Christmas Eve and saved leftovers for Christmas Day. 

This year, let’s try roasting carrots as a colorful side!

But my wallet can, because I just placed a giant Whole Foods order for pick up tomorrow.

For the past few weeks I’ve been sharing holiday recipe inspiration on Instagram. 

Thanksgiving sides, cozy plant-based mains, and festive desserts. 

It might make you laugh that when it comes to planning my holiday menu, I use my own website as inspiration.

I fat finer key words like “holiday” and “thanksgiving” into the search box on Flora & Vino to see what I made in years past.

My quads are *still* sore from hiking Old Rag Mountain this past Tuesday. 

The last time I hiked this 10.2 mile loop trail was back in 2015 and I don’t quite remember my quads screaming at my in this acute fashion. 

My one goal in setting out was to stay well hydrated because last time I trekked up 3,284 feet I ran out of water at the tippy top. 

Luckily, a fellow hiker tossed me a spare bottle that I chugged with Dan before the descent. 

So this time I vowed to have plenty of  H20. 

I took multiple bottles, which ended up being a *really* good idea. 

In the first 10 minutes, I unscrewed my purple Lifefactory glass bottle and, in a tragic slip, dropped it on the ground; 22 oz of filtered water watering the leaves around my hiking shoes. 

It ended up fine because my 48 oz Nalgene magically sustained me for the remainder of the climb. 

I even passed some energy bars to a hungry hiker on the way up, to give back that Old Rag good karma that I received last time. 

The autumn colors at the top were absolutely beautiful, guys! 

M and I sat shaded by a boulder, eating food smashed for our packs and looking out over a sea of burnt sienna, evergreen, and amber tree tops. 

The only thing missing on a long hike are the greens.

This Garlic & Lemon Roasted Broccoli is my current favorite side dish that’s sure to ehance any of your plant-based meals!

Some of the most commonly asked questions I receive on the blog and Instagram are about ingredient substitutions.

If you’ve been around here a while, you know that in each blog/recipe post, I typically share some simple substitution options, but I figured it might be nice to have a more overarching post to direct you to.

Now more than ever, I figure we could use some solid subs, yeah?

I don’t know about you, but some of my best recipes have come from making a ton of substitutions to a recipe.

It’s so fun and easy to adapt recipes to mix things up when you don’t have all of the ingredients!

Whether you have a food allergy or intolerance, don’t have the ingredients on hand, or just don’t like an ingredient—I got you!

A few years ago my parents served a warm butternut squash cranberry salad for the Thanksgiving Day spread.

One fateful forkful and I was in love and obviously I went back for seconds.

It was simple and elegant; equal parts sweet and savory.

After our plates were cleared I asked my mom about the recipe and she admitted that it was a Whole Foods pick up.

No shame in the catering game, friends.

Anyway, years later, (this year, to be exact!) I discovered the same squash dish at Whole Foods in the hot foods section.

I picked it up and checked out the simple ingredients: butternut squash, cranberries, onion, sage, and seasonings…etc.

Cart frozen in action, blocking the hot bar, I had an epiphany.

“Hey, I can make this. And I might be able to make it even better.”

TRUTH: Doing any indoor activities outdoors immediately elevates the entire experience.

Ex: yoga, running, wine-tasting, reading…

I remember one day in college my English professor stood up in the middle of class and said without warning, “Let’s have class outdoors today!”

All of us undergrads grabbed our paperback books and notebooks and sat under oak trees discussing Shakespeare’s sonnets.

It was the best class ever.

I’m sitting outside as I write this and it occurred to me that I should probably do this more.

“This” being take advantage of working outdoors if and when I want to.

Early on in solo entrepreneurship, I was absolutely guilt of idealizing the “be your own boss” life.

Working for myself, I assumed it was going to be a spontaneous flow of lunch dates, walks with Harper, and skipping out of the studio early for the early yoga class.

Turns out it’s more of an 80 hours workweek model, and my lunch date tally is still in the single digits.

But then there are moments, working on the deck cradling my laptop between crossed legs, that I feel free-er than I ever have.

Especially with this Kidney Bean Arugula Salad to my left!

Are you team kale or team spinach?

For years I was decidedly team kale, lacinato, or curly.

Maybe that’s because I ate a lot of frozen growing up so kale felt new and exciting.

But lately I’ve been all about that fresh baby spinach life.

I buy a giant tub each week at the store each week and what I don’t eat in salads I freeze and add to my shakes.

How is January halfway over?

We’re past the midway month point and I haven’t even shared a salad recipe with you.

I’m going to blame the snow.

It’s still mostly white here in Virginia, but I laced up my Sorel snow boots this afternoon and took Harper on a long snow-walk anyway.

We paused for a second 30 minutes in, surrounded by soft snow and gray branches against pink skies– and guys, it was so quiet and so beautiful.

I wanted to bottle up that silence and add it to a permanent highlight reel in my brain.

This month has been anything but quiet, kicking off 2019 in southpaw stance.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
