My girlfriends and I have a group text chain we use to keep each other moving, healthy, and inspired during the week.

We chat meal prep, scheduled workouts, water consumption, running goals, and a smattering of wildly appropriate gifs.

If my phone starts buzzing at 6 AM, I know who’s on the other side of the frantic beeps.

A few weeks ago, in said text chain, my girlfriend posed the question, “Best afternoon snack ideas- GO.”

Since food is kind of my job, I felt inclined to go all out.

This post is a little different but if you live with a furry friend or see one on the regular then they’re going to love it so you should stick around.

It’s Harper’s third birthday today so I thought we should celebrate!

For the past three years I’ve been making her these super simple baked dog treats to ring in her big day.

Each year I have to dig it up the recipe to make and share, so I’m finally sharing here so none of us lose it ever again!

It’s hard to forget, because these biscuits are done in under 30 minutes with clean pantry ingredients.

Recently, I started turning my phone off at the gas station after realizing it was a safety hazard.

I’m probably the biggest rule follower you’ve ever met, so you bet I abide by all of the safety guidelines.

Anyway, those 60-100 seconds sometimes feel like the longest of my entire day.

Filling my tank tonight, I stood there, feeling a foreign sense of disconnection and unease.

Have you been to the pool yet?

I went for my first time this season on Memorial Day with a girlfriend.

It was late on the holiday and I really just wanted to lay there motionless in the sun until dark, but I recognized with a sigh that the workweek was quickly approaching.

So we shifted out convo to preparation for week, which sifted to food and meal prep and easy things to throw together with the limited time we had.

I confessed that lunches had me particularly perplexed lately.

Do any of you have green thumbs?

What I want: A house filled with green plants like the striking minimalist photos I thumb past on Instagram.

The Reality: To be honest I’m really bad about caring for plants.

The few we do have around the house, a healthy money tree, a snake plant my parents gave me when we moved in, and a large Ivy that Dan trained to wrap around the speakers and windows of his “man cave”, are only alive and well thanks to Dan’s diligence.

Dan is good about watering them, pruning them, and positioning them in the right amount of sunlight

….and I’m good at admiring them and that’s about the extent of it.

So when my friend gifted me some home-grown mint this past weekend at book club brunch, I accepted it with excited determination.

I vowed to use the mint in a recipe, and to keep the darn thing alive.

I did one of those things already…

For years I was decidedly team kale, lacinato, or curly.

Maybe that’s because I ate a lot of frozen growing up so kale felt new and exciting.

But lately I’ve been all about that fresh baby spinach life.

I buy a giant tub each week at the store each week and what I don’t eat in salads I freeze and add to my shakes.

I don’t care how much you love kale, you’ve got to admit, you can *always* taste a bit of it in your shake, right?

How long have you been digging the plant-based life?

When the doctor asked me recently how long I’d been vegan, I had to stop and do that thing where you mentally count on your fingers.

1…2…3…4…5…

“Six years this fall!” I said, surprising myself.

Wow, that’s a whole lot of plants, friends.

Considering it’s my 6-year “plantiversary”, let’s cozy up to this 1-Pan Tofu Cacciatore with Zoodles.

One pan to rule them all packed with peppers, protein, and simply delicious seasoning over zucchini spirals!

Dan’s been gone on travel the past few days and Harper has been moping around acting like she lost her only friend.

She spent the entirety of the first night downstairs, just waiting on the door to open that never did, only coming upstairs around 5 AM to whine and communicate to me that dad was still gone and that she wasn’t at all happy about it.

By Day 2 she resigned herself to hanging out with dear old mom, ears pricking up whenever there was a promising dad-like noise from outside.

Needless to say, it’s going to be emotional reunion tonight when he walks in the door.

Something about having the house to myself makes me all the more motivated to make a home cooked dinner, so this easy cacciatore has been on repeat.

I spent the past two nights happily spooning bites into my mouth while watching Game of Thrones and trying not to cry into my zoodles.

Happy Friday, friends!

Do you have Mother’s Day plans this weekend?

We’ve got back to back mom days planned; lunch with my mom Saturday and lunch with Dan’s mom Sunday.

Personally, I want to know what Harper has in store for her dog mom (AKA ME), because I feel like I could use some puppy love.

Speaking of moms, I’ve got a recipe to share with you today that is mom-approved.

These Chickpea Patties with Cashew Mayonnaise are easy enough to whip up for 30 minutes for a hearty plant based protein!

Why mom-approved?

Because this easy recipe is based on a salmon- patty recipe my mom used to make on school nights growing up.

We usually ate them with tomatoes and mayonnaise for dipping amongst other sides.

After my parents mentioned having them for dinner on the phone, I knew I had to recreate them for the blog.

My mom texted me the recipe and I set out making substitutions.

I was able to easily make it vegan by swapping in canned chickpeas for canned salmon and a flax egg for the egg.

Everything else follows my mom’s scrolling handwritten instructions, save for the few spoonfuls of tahini, because…tahini.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower!
