Last week I hung a rectangular printed canvas sign on my wall.

“Never Stop Exploring”, it reads.

All I did was press a push pin into the wall and steady the sign on it until it balanced, but it felt like a bold move.

My first intentional piece of artwork in my home.

Huzzah!

It’s funny how long I’ve gone with bare walls devoid of decorating.

To be honest, I’ve never been very confident in my indoor decorating choices.

Like, do I need a color scheme, a theme, a purpose, or do I just start throwing stuff on the walls?

I joked with a friend (who is amazing at decorating her home, I might add), that I need a design consultation. STAT.

Anyway, sometimes I catch glances of my sign while I’m eating breakfast in the morning.

Never stop exploring.

Peanut butter and berry combos have been popping up all over my Instagram feed more often than it popped up in my brownbag lunch as a kid.

I’ve been a bit nostalgic this past week, friends, remembering simpler times and the family reunions every summer growing up.

On my family’s annual trip to Indiana to visit extended family, we always stopped at Cracker Barrel before returning to the endless highway.

So I have one question for you.

Have you tried Cracker Barrel fried apples?

No?

Well, it’s one of the best sides on the menu.

Every member of my family ordered a side of fried apples with our entrees regardless of whether we stopped for breakfast, lunch, or dinner.

These Apple Pecan Pie Oats with Sautéed Apples remind me of a much healthier spin off of that addictive southern comfort side.

And we could *all* use a little comfort food right now, right?

Copycat “Jammed Yam”

I’ve *reallly* been missing some of my favorite takeout meals lately, guys.

On busy recipe testing days when the sink brims with dirty dishes, my most delicious form of self care was to hop in the car and leave it all behind.

Indulge me in a little pre-pandemic nostalgia.

I drove to grab dinner; usually takeout and always packed with plants I didn’t prepare.

Coming home with a warm meal someone else assembled always made the full sink feel a little less intimidating.

Anyway, one of my favorite spots to get a quick clean meal was Naked Lunch.

I ordered their signature “Jammed Yam” frequently.

It’s plant-based comfort food at its finest: a sweet and tender baked yam halve loaded with black beans, raw veggies, cooked corn, and fresh herbs.

I recreated it in this copycat “Jammed Yam” that’s easy to bake and build with yams, cooked black beans, and a mix of raw and cooked toppings.

Let’s jam a yam.

As long as we’re staying safe at home, I’m saying it is.

Happy Sunday, friends!

Does anyone else have major dish washing fatigue right about now?

As if it wasn’t enough to eat every stinking meal at home, we have to clean all those pots and pans, too?

I’ve set aside some time today to *actually* meal prep.

If you’re thinking, but Lauren, why meal prep during a quarantine?

Well, it occurred to me chatting with friends this week that it might be better to make larger portions in advance rather than making small meals on the spot.

We might have the time and space free to cook and bake at home constantly, but do we really want to?

As much as the kitchen is my happy place, I have other happy places that I’m missing.

Luckily, the recipe I recommend you meal prep today is made with just one blender and a cookie sheet!

I was Marco-Polo-ing with a friend today discussing our food rut probs.

Mine came on slowly with building disdain, like playing a song on repeat during a workout when each chorus inspires a little less feeling.

When I realized that I had consumed a variation of steamed vegetables + plant protein + tahini for every dinner in recent memory, I knew I needed a menu intervention.

And don’t get me started about dishes. (They’re never-ending!!!)

Guys, it’s been a long freaking month.

I think it’s safe to say that March came in like a lion and went out like…a bigger lion.

I’ve been trying to prioritize making my home my sanctuary for the foreseeable future.

But, F&V wouldn’t be in business if there wasn’t a huge kitchen mess.

Did I tell you guys that I’m working on a cookbook?

OK, don’t get *too* excited.

By “working”, I really mean polishing the idea in my mind, tumbling the concept from synapse to synapse in hopes one of them will fire up and spit it out.

One of my friends recently joked that I consider putting out a cookbook called “Quarantine Cuisine” with fun plant-based recipes to make during the pandemic.

I mean, it does have that ring to it, right?

For the most part, though, this space on the internet and my content on Instagram keeps me busy, even during these tumultuous times.

In the light of recent events, I do feel called to show up in different ways, like getting back to staple recipes.

There are so many combinations I enjoy on a regular basis but don’t share with you, because I feel like they’re too “elementary”.

These Peanut Butter & No-Jelly Overnight Oats are one of those said combos.

For the last few weeks I’ve been preparing them in mason jars in the fridge with plenty of drippy peanut butter, smashed strawberries, and flaxseed meal.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
