We go through a lot of bananas a week.

Like a lot.

I’m talking three bunches of bananas at the check out line with zero shame a lot.

Usually I get 1 really green bunch, 1 slightly underripe bunch, and one perfectly ripe bunch for eating right away.

This way the bananas ripen throughout the week and we use them in shakes and stuff as they come into their prime.

I periodically check throughout the week, freezing any super bruised and brown bananas for smoothies and leaving their better looking buddies on the counter.

Sometimes during a particularly hectic week I forget to do a freezing sweep and I’m stuck with a bunch of ugly bananas on Saturday/Sunday.

That’s when I take a hint from the universe that it’s time to make some Banana Chia Chocolate Chip Muffins.

I’ve been talking for a while about recreating a family recipe for Oatmeal Banana Chocolate Chip muffins that my mom used to make when I was a kid.

I even highlight these muffins in my About Me section, they’re that good.

My mom timed it perfectly so they’d emerge from the oven right as my sister and I walked into the door after hopping off the school bus.

I’d sit at the kitchen table, talking about homework and school cliques between mouthfuls of banana goodness with chocolate covered fingertips.

Let’s recreate that scene in adult life, shall we?

This bowl is one of those I stumbled upon while cleaning out the fridge on Sundays.

You know, one of those throw everything is a bowl and hope it tastes good kind of deals?

I love the feeling of emptying out Tupperware containers of chopped veggies and quinoa and piling them by the dishwasher to get squeaky clean before Monday.

Assembling my bowls with the stragglers of the week forces me to make some creative combinations I wouldn’t normally put side by side.

And on this particular Sunday, I had handfuls of kale, steamed broccoli, sliced cucumber, and avocado.

I’m sensing a color theme here.

Give me all the GREENS!

So I was devouring it on the way to a winery for our visit.

It was one of those grab and go kind of meal situations where I was shoving bites into my mouth while the car rocked, eating under Dan’s watchful gaze.

He just got a new Jeep and was probably freaking out about the potential of me spilling turmeric tahini coated kale leaves everywhere.

I don’t blame him, because turmeric stains are no joke. 

We have old Tupperware that I established as my “turmeric” containers, because the mustard yellow is there to stay.

Between big mouthfuls, I said to him, “This is really good. Like really good. This is amazing.”

It’s meals like this that remind me WHY I’m so passionate about being plant-based.

And that’s when I knew I had to share it with you.

Is there anything better than a warm bowl of curry?

It’s definitely up there on my list of things that make me happy in the colder weather, along with unexpected snow days, steaming mugs of hot cocoa or tea, and roomy fuzzy sweaters (not itchy, though!).

All of your favorite veggies bobbing up and down in that fragrant creamy coconut based broth…

This time of year, everyone has green on the brain.

Green for spring, the unspoken word on everyone’s parched lips.

The majority of the cold is over but spring feels like it’ll never get here.

I was hoping to score a few cozy snow days in before my birthday (April 2nd), but it looks like that might not happen.

If you’re like me, you’re pretty much over the cold weather after the charm of Christmas is in the rear view mirror.

If it’s going to be cold, the weather could at least be pretty about it and give us some fluffy white stuff.

I’m getting through the seasonal dissonance by experimenting with new curry combinations in the kitchen.

The house is slowly starting to feel like Christmas.

We’re in the middle of getting everything ready to host M’s parents and brothers visiting from Germany for the holidays, and I can already feel the anticipation building.

I’ve been deep-cleaning, arranging furniture, and making lists of everything I want to cook and share with them.

We don’t have our tree up just yet, but the stockings are already hanging, and I’m playing Christmas music every chance I get.

That means while cooking, cleaning, and recipe testing alike!

There’s something so special about sharing my American holiday traditions with M’s family for the first time, and it’s making this season feel even more magical.

In true holiday fashion, I’ve already started testing cozy, shareable treats for when everyone arrives, and these Apple Butter Truffles were one of the very first recipes I made.

These past few weeks have been different settling into a routine with M home from work due to the government shut down. 

Flora and I have loved having him home more, despite the circumstances at hand. 

This means I have a built in taste tester, and, of course, Flora thinks she has a 24/7 playmate. 

When friends ask how M is spending the time off, I respond, “Oh, doing a lot of training (read: PLAY) with Flora…”

“What do you need?” M asks Flora with her piercing blue gaze, and she immediately runs to grab her most beloved toy, Frisbee. 

Frisbee, a yellow silicone disc that has survived over a year of tugging, throwing, dirt, and dog slobber, is an adored member of the fam. 

Round and round main level they run, Frisbee flying and narrowly missing lights, furniture, and, my face until I scold that someone (read: ME) is going to get hurt. 

It’s times like this that I wonder exactly what I was thinking putting an Australian Shepherd in a two level condominium. 

But aside from the play sessions with our energizer bunny Aussie, I decided that it was a great time to make a cheesecake. 

Cheesecake is M’s favorite dessert, and I realized that I don’t have a pumpkin pie version on the blog yet. 

This Pumpkin Pie Cheesecake is made with a gluten-free oat crust, dairy-free coconut cashew cream cheese filling, and a SunButter frosting.

It’s a beautiful tribute to Fall in a fun dessert that’s worth sharing!

You know how you look back in photos and *always* romanticize your past fashion choices, haircut, and body? 

And you can probably remember the day that photo was taken along with the thoughts running through your head when it was taken. 

My hair doesn’t lay right, my dress is too tight, my makeup is too loud. 

Lies! 

It’s interesting that these insecure moments become the rose-colored glasses memory we envy later. 

But if the girl in the picture isn’t happy and neither is the one looking back on the picture, then what is there to be envious of? 

Basically, we (read: I) need to learn to be present and appreciate what we (again, read: I) have right *now*. 

This week I caught myself looking back at some photos with long hair with wistful eyes. 

How much better life would be right now if I had longer hair! I thought to myself. 

For context, earlier this year I chopped my hair off in what could best be described as an asymmetrical pixie cut. 

At first I loved it; the freedom and lightness of it, the short blow dry time, the quirky asymmetry from right to left. 

Now, I found myself seeing the very same cut with annoyance. 

I get bedhead (and not the slightly disheveled cute kind) just by looking at a pillow, and I long to put it back in a french braid or pony tail. 

So I’ve decided to grow out my hair again, slowly but surely, but the challenge to try to enjoy all of the in-between phases. 

And with an asymmetrical short haircut, I’m sure there are going to be a *lot* awkward in between-ness. 

I’m also sure that one day I’ll look back at photos of this time and think, “Wow, that haircut was so damn cool. I wish I could pull it off now.”

Life is cyclical, and so are my food recipes. 

This week, I’m excited to share a cold noodle bowl that’s easy to put together. 

A rare moment when I was happy within these photos but even happier to be eating it afterwards!
