Peanut Butter Pumpkin Overnight Proats

By Flora & Vino 4 Comments

Pumpkin peanut butter protein oats for one! Mix up these easy oats for a pumpkin and protein-packed breakfast that’s perfect for busy fall mornings.

Peanut Butter Pumpkin Overnight Proats in mason jars by Flora & Vino

This past weekend I had a plant re-potting party here at F&V.

M and I squatted on the deck and transferred my spider plant, split leaf philodendron, and aloe vera to bigger pots.

Scooping dirt into ceramic pots and patting the earth around my plant babies was totally therapeutic.

The move was inspired by my split leaf philodendron, which has grown at an exponential pace since I bought it on a whim from Whole Foods last year.

Did you know that plants need to be moved to bigger pots about once a year for optimal health?

When I last repotted my philodendron it surprised me by exploding with happy green leaves and new vines.

I mean, it makes sense that they need a pot that properly fits their expanding root system.

Just like us, they need room to grow.

Give yourself some room to grow by making breakfast in advance this autumn.

These Peanut Butter Pumpkin Overnight Proats are perfect to prep ahead for a fun fall breakfast.

No-Chicken Chickpea Nuggets

By Flora & Vino Leave a Comment

Plant-based and protein packed nuggets made with chickpeas and seasonings and baked to perfection. Serve with your favorite dip!

No-Chicken Chickpea Nuggets by Flora & Vino

This past weekend M and I switched studio spaces.

We decided that, as much as I wanted my studio space to be separate and tucked away from “real life”, it just made sense logically to have me closer to the kitchen.

And M further from the noise of the kitchen.

So I lugged my photography boards, standing lights, and tiered shelves of props down to the main level while M disassembled and reassembled my standing desk.

For some reason it was emotional to leave my studio nook upstairs.

Yeah, that separation between personal and business life as a work-from-home entrepreneur is always hard.

Except lunchtime.

Lunchtime everything kind of falls into place.

Today I’m sharing these No-Chicken Chickpea Nuggets.

They’re baked and are the perfect plant-based back-to-school snack for all ages!

Turmeric Dark Chocolate Chunk Cookies

Turmeric Dark Chocolate Chunk Cookies made with salted dark chocolate chunks, cashew butter, and almond flour. Bakes in 15 minutes!

Turmeric Dark Chocolate Chunk Cookies served on a plate with a yellow towel and a side of ground turmeric and dark chocolate chunks by Flora & Vino

This past weekend M and I woke up at 4 AM to drive to Shenandoah with two of our friends to hike Old Rag.

Arriving in the parking lot a little after sunrise reminded me of why I’m a morning person.

We beat the crowd and had the trail primarily to ourselves, and the weather temps were still in the lows and not the highs.

But the high of the hike was when, at the summit, Nate got down on one knee and asked Anna to marry him.

I’ve never witnessed a proposal in person, especially not one involving two of my favorite people.

These two amazing humans who so clearly bring out the best in each other.

When she said yes the onlookers from rocks above us cheered and clapped and M snapped photos on his camera.

On the descent I couldn’t stop smiling and in that moment I believed the universe really does bring people together for a reason.

Like, you, dear friend, are here to make Turmeric Dark Chocolate Chunk Cookies.

These grain-free, gluten-free, and plant-based cookies are made in just 1-bowl in 15 minutes!

Pineapple Guacamole

//#ad This post is brought to you by Bare Snacks, but all words and eats are my own. Thanks for supporting the sponsors that keep me hungry!

Easy guacamole with plenty of avocado and a sweet pineapple finish! Serve as a fun summer appetizer or side for dipping or a spread for the main meal.

Pineapple Guacamole by Flora & Vino

I may be in the process of moving, but I refuse to miss a taco Tuesday.

Which is really just a weekly excuse to make guacamole.

How do you make tacos at your house?

Every Tuesday I count the squishy avocados and lay them on the counter for M to open and smash.

He’s unofficially the resident in-house guacamole maker.

He makes the guacamole while I prepare the fajita veggies and black bean filling.

If you’re looking for an excuse to make guacamole this summer, try this Pineapple Guacamole!

It’s adapted from the stuff I enjoy with M weekly with the addition of a fruity flair.

This minimalist guacamole is made with all of your tried and trues plus the addition of pineapple chips for sweetness and crunch!

Vegan baked s’mores dip made with dark chocolate and vegan marshmallows. Serve with graham crackers and fresh fruit as a summer dessert or appetizer!

Vegan S'mores Dip by Flora & Vino

Remember how we counted sleeps before Christmas?

Well today is my last sleep before the big move.

Tomorrow I have friends and family come and help me muscle stuff from Virginia to Maryland.

I’m slowly accepting the chaos that is life in flux right now.

I finally realized that letting all of the uncertainties and unknowns remain uncertain and unknown is a lot easier than desperately trying to control them.

You’ve heard of the hot girl summer, right?

Well, here I am, proud of my hot *mess* summer.

My time and creativity in the kitchen has been limited, too.

I’m mostly working my way through the fridge and freezer; using up random jars of sauerkraut and frozen peas in a desperate attempt to lighten up the U-haul situation.

But that’s okay because the recipe I have to share with you today requires minimal ingredients and prep!

This Vegan S’mores Dip is so easy to bake and enjoy for whatever season you’re in this summer.

It’s made vegan, gluten-free, and refined-sugar-free with just three ingredients and your choice of dippers!

Vegan Poke Bowl with SunButter Sauce

By Flora & Vino Leave a Comment

Vegan poke bowl with quinoa, marinaded tofu, pickled onions, and a spicy oil-free SunButter sauce. Perfect for a nutritious lunch or dinner!

Vegan Poke Bowl with SunButter Sauce served in a bowl with quinoa, edamame, marinated tofu, pickled onion, avocado, kimchi, and sesame seeds

Hi, friends, how’s your summer going?

It’s been a *whirlwind* here.

Packing, moving, and shuttling brown boxes labeled with black Sharpie back and forth across the Maryland/Virginia border.

July is my last month in Virginia, and I’m getting excited to start over in a new state.

Every time I create a new row of boxes in the new condo’s living room, I lock it and leave it feeling like the space is a little more mine; a little more ours.

Anyway, with all of the hustle and bustle of moving, I haven’t been creating a lot of delicacies over here.

There’s a collection of Sweetgreen, Cava, and Chipotle takeout bags in my recycling.

Maybe you’re doing a lot of takeout, too, this summer, or maybe you’re in the mood for a chilled bowl.

This poke bowl was on repeat before I signed my lease and I can’t wait to recreate it in my new kitchen.

This Vegan Poke Bowl with SunButter Sauce is made with quinoa, marinaded tofu, quick pickled red onions, and a spicy oil-free SunButter sauce.

It’s the perfect summer meal for a quick lunch or dinner!

Date-Sweetened Donuts with Chocolate Frosting by Flora & Vino

Hi, friends.

It’s been a while since we last chatted.

June has been an absolute whirlwind for me and I can’t quite believe just *how* much has changed in the past two weeks.

For one, I’m moving!

I’m in the process of packing boxes and making plans to move to Maryland with M.

Secondly, I’m reconnecting with friends and family in a major way; scheduling dinners and hikes and hugs.

After a *very* trying 2020, all of this feels like a new beginning, a clean slate, a fresh start.

But between all of the positive changes in life, summer keeps running on, hot summer days spilling into cool summer mornings.

And what do you know, this weekend is dad’s day!

Let’s put all of the busy-ness aside for a second and celebrate dad, OK?

These Date-Sweetened Donuts with Chocolate Frosting are just what any man in your life needs this Father’s Day.

They’re totally vegan, gluten-free, and refined-sugar-free with a cake-y interior and a 2-ingredient chocolate ganache!

Cherry Tomato Salsa

By Flora & Vino Leave a Comment

Fresh homemade salsa made with sweet cherry tomatoes! Enjoy as a dip with your favorite crackers or as an addition to tacos, burritos, and bowls.

Today I had a coffee date with a girlfriend that I haven’t seen in over a year.

We parked our cars outside of the Starbucks drive-through and socially distanced sipped on coffee, bridging the gap between our cars with conversation.

Guys, I had forgotten how nice it is to be in the company of another woman and catch up on life as we know it.

I came home with an empty coffee cup and a full heart, ready to take on a photo shoot and blog post writing.

Lately I’ve been all about mixing up my routine; making small changes to embrace an awakening world.

I’m currently enrolled in not one but TWO 7-day free trial via workout apps.

Which kind of goes hand in hand with the 6 AM alarm that startled me into waking up after the third snooze this morning.

I feel like I’ve been in a deep sleep or meditation for the past year and I’m just starting to regain consciousness.

Like, Rip Van Winkle level sleepiness.

An in-person game night with my cousins and sister is planned for two weeks out; the first date we’re all fully vaccinated.

We joked that no games would be played– the entire night will probably revolve around hugging.

So much hugging. And food!

What better way to embrace summer celebrations, in person and afar, then with a fresh dip?

This Cherry Tomato Salsa is made with just six ingredients and served with my favorite grain-free crackers!

Chickpea & Wild Rice Soup

By Flora & Vino 1 Comment

Chickpea & wild rice soup packed with garbanzo beans, wild rice, and savory herbs in a light broth. A classic soup staple for all year round!

Chickpea & Wild Rice Soup served in bowl with spoons by Flora & Vino

It’s a good day, friends.

Today I woke up early to make the trip to my local Giant pharmacy to get my first COVID vaccine.

Other than a sore arm that smarts every time I lift my shoulder, I’m doing great, and I’m grateful.

Grateful to have had the opportunity to receive something that a year ago was only a dream, a hope, a wish.

I’m thankful for this protection for my health and the health of all those around me, along with the peace of mind it brings.

I’m starting to excitedly plan to see family and friends in a more intimate way after we’re fully vaccinated.

The thought of enveloping my family and friends in a giant bear hug makes me outwardly squeal with anticipation.

It’s going to be so good.

I want all of this for you, too, friend, and more.

But until then, I’m going to gift you with a new soup recipe that’s sure to make you feel cozy and comforted in the mean time.

This Chickpea & Wild Rice Soup is made in 1-pot in 30 minutes with garbanzo beans and real wild rice!

Grain-Free Flatbread Wraps

By Flora & Vino Leave a Comment

Grain-free flatbread wraps with crispy chickpeas, baked kale, dill hummus sauce, and your favorite toppings. Perfect for a date night in!

Grain-Free Flatbread Wraps served on plate with baked kale, chickpeas, red onion, and dill hummus sauce

This week one of my girlfriend’s asked in a group text to share one word that best summed up our week.

“Overwhelmed”, I found myself typing, grateful for the space to be open and honest.

It’s true, there is a lot going on here at F&V lately.

This week I finally started photographing for the cookbook; making all of the dishes pretty propped on a white marble backdrop.

For the first time in my adult life, I finished my taxes by myself; squinting at a monstrous Excel spreadsheet to enter formulas and expenses and payments.

I created a resource for cookbook updates so anyone interested can sign up and receive updates on cookbook progress, pre-ordering, and publication.

Oh, and I presented to my cousin’s middle school class on what it’s like being a digital creator and entrepreneur.

The interesting thing about the word overwhelmed is that it doesn’t have to be a bad thing.

You can be overwhelmed by joy, overwhelmed by love, overwhelmed by gratitude.

With this post, dear friends, I hope you are overwhelmed by deliciousness.

These Grain-Free Flatbread Wraps with Tandoori Chickpeas are an easy plant-based meal that is easy to create and fun to share!
