I love how days feel sort of endless in summer, you know?

Longer days mean lazier later dinners.

To be honest, I’m usually throwing things together in a pan while Dan and Harper are unwinding on the couch around 8 PM.

“Mmm…what’s for dinner?” he’ll ask curiously, as things start to sizzle and pop and smell inviting on the stovetop.

“Er…” I say, trying to think of a creative name for what truly is a bit of everything left in the fridge served stir-fried.

Hi friends!

How was your Fourth of July?

We took Harper to her first fireworks show, and, to be honest, she seemed a lot more interested in the pizza Dan was eating than the bursts of color exploding into the night sky.

Priorities.

Like mother like dogger, right?

My priority lately has been colorful cauliflower rice.

Specifically, these Turmeric Cauliflower Rice Bowls with “Eggy” Tofu.

They’re packed with bright colored veggies, anti-inflammatory turmeric, and some seriously good tasting tofu.

Ah, cauliflower rice.

A definite staple in my meal rotation.

Don’t get me wrong, I love me a good cauliflower rice burrito bowl, which is really my (and probably yours, too, right?) go-to cauliflower rice recipe.

Lately I’ve been doing this thing when I don’t have dinner, I just rip open a pack of frozen cauliflower rice into the skillet and LOAD. IT. UP.

It’s totally normal to eat an entire bag of cauliflower rice for dinner, right?

Lie to me.

Anyway, I decided that I was tired of the whole Mexican thing, and decided to go for a different take on things with a shake of turmeric and the addition of a colorful vegetable blend.

I had tofu left in the fridge, so I made a quick scramble on the side for protein and then threw both creations together.

The most random meal ever, right?

But this is how the best recipes are born, buds.

Honestly, I’ve been feeling a bit in a rut myself, making different variations of the same thing on repeat.

I love my macro bowls and salads, but sometimes you need to throw a curveball in to keep the hunger alive.

It’s probably no surprise to you that I’m a bit obsessed with avocado and tahini.

The separate obsessions are real but now I have a new one: Avocado tahini.

As in, avocado and tahini together.

Well hi, hi, hello!

I don’t know what’s gotten into me this week, but I’ve been all about routines and positive outlooks.

Somewhere along my 2018 journey I lost the structure that keeps my days and eats from all running together in one big MEAL.

This new protocol includes waking up early, sweating a little before breakfast, and taking time to check in with myself mentally and physically before the day begins.

Somehow, these little steps instantly take my mindset from stressed to strengthened.

Who else watched the royal wedding over the weekend?!

I didn’t set my alarm to watch like some of my friends did, but I might have teared up a little while making my lazy Sunday breakfast when Prince Harry and Meghan *finally* embraced.

I milled about the kitchen listening to the light commentary that followed on the news stations all morning, feeling good about the whole affair and the state of the world and all that.

Can we have more moments like that, please?

I’ve been feeling for a while now that “this is the year”,  and when I opened up the monthly newsletter from my yoga studio (something I never do) and saw the notice about the training this fall, I emailed back immediately for more information.

It starts in September.

It’s happening.

I’ve never felt so strong, powerful, and fit as I do after accomplishing a sweaty Vinyasa flow, and I’m excited to learn more about the practice and to share it with others.

As with any active lifestyle, what you choose to fuel you is equally as important to keep those vibes high.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
