Do you still read magazines?

Not online, but physical magazines that come to your house with glossy covers and colorful contents dripping with advertisements.

I used to sit on the floor of my college bookstore between classes nestled between the magazine racks, fashion magazines strewn in an arc around me.

I was obsessed with how pretty and polished everything looked, staring at red bottoms dressed in sneakers and wishing my fairy god-mother might show up and send me to the ball instead of my next exam.

After college I took a break from mags because, well, they kind of just made me want to buy everything.

Today, I’m kind of getting back into magazines, but instead of looking for the latest “it” bag I’m seeking the latest “it” bowl.

My parents used to tell me that if I kept frowning like that, my face would stay that way, which really only made me frown harder.

Recently, I saw a meme that read, “It takes XX (insert low number) muscles to smile and XX (insert high number) muscles to frown. Frown harder, let’s get ripped!”

Laugh. Out. Loud.

Lately, though, I feel like my face is frozen in permanent photographer face; the Canon body pressing firming into my third eye while my right eye is all squinty.

Last night Dan and I had the pleasure of babysitting my niece and nephews.

We went over, ordered pizza, and watched the kids get sleepier and sleepier on the couch watching Nick Jr. before the procession upstairs to read a Paw Patrol book before bed time.

And I’ve got to say, they were so well behaved, they made parenting almost look easy (although I’ve heard that’s not the case!!!).

The hardest part was staying up a bit past our usual bedtime.

I caught Dan falling to sleep on the job several times while I stayed awake dreaming of cozy recipes to be.

And what else do you dream up a quarter to midnight but a big comforting stew?

Well hello there!

How was your weekend?

This past week/weekend I went to Natural Products Expo East and visited with all of my favorite brands and scoped out the newest products in natural foods.

It was a lot of walking, a lot of talking, and a lot of sampling!

Somehow I had the bright idea to hit the grocery store on the way home from the trade-show, to, you know, kill two birds (two tofus?) with one stone, so to speak.

After being surrounded by food and chatter about food all day PLUS lugging of all of the loot from the show AND all of my groceries up three flights of stairs (we’re on the top unit of a stacked condominium!)– I decided I didn’t want to see or hear about food again. Like ever.

But then of course that changed because…a girl’s got to eat.

I eased back into the kitchen today with this fail-proof 1-Pan Meal that’s perfect for meal prep!

When I worked at the library in college, my then boss introduced me to my first taste of Indian buffet down the street.

Not having ever tasted Indian food before, I did what any hungry college kid would do when faced with a sea of interesting new food for the grabbing.

I tried a little bit of everything.

I sat down with my plate a patchwork of dishes with names I didn’t know how to pronounce and grubbed out.

Hours later at the library, my body told me (not so subtly, I might add)  that it wasn’t very unhappy with my decision to consume all of those new flavors and spices.

I was all, “Keep it together, body, I have books to shelve!”

Then it was all, “<insert nauseous green emoji>”

…and I haven’t been to an Indian buffet since.

I was starving to begin with, as one usually is when foodie tragedy strikes.

I remember pulling a single stuffed pepper out of the oven piping hot.

Anxious to eat but not anxious to burn my tastebuds off, I started quickly cutting into the pepper to allow it to cool.

In slicing into it, something went wrong, silverware fumble, and the pepper slid, seal- like, onto the floor, a hundred specks of salsa peppering the carpeted circumference around me.

I did what any fierce famished foodie would do– I sank to my knees and bawled my eyes out.

Aren’t you glad that isn’t your dinner story?

Luckily, it isn’t the story of these particular peppers either.

I managed to eat them unscathed.

I used to make these Veggie Burger Stuffed Peppers all of the time a few summers back, and they always remind me of that ONE TIME.

That time when I lost it over spilled peppers.

I’m pretty sure I dried my tears and threw another one in the oven, because when you’ve got stuffed peppers on the brain, nothing else will really do, you know?

It was all I could do to eat the rest of my meal, because I was busy cherry-picking for eggplant.

I decided right then and there that I need more eggplant in my life!

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
