I’ve always loved brussels sprouts, but that usually meant they were roasted, baked, or steamed. 

I’ve never prepared them raw myself, and only had them raw a handful of times while ordering out.

Happy Valentine’s Day, buds! 

I hope you’re giving your loved ones, and most importantly, yourself, a big hug today. 

Lately, I’m focusing on talking to myself like I would a friend. 

The next time you catch yourself in a shame spiral or a negative thought sinkhole, ask yourself what you would be saying to your friend if they were in your position?

Likely, it would be words of kindness, encouragement, and love.

So….why can’t we treat ourselves with as much compassion, understanding, and unconditional love? 

Well, we can.

And a good way to start is by nourishing your mind, body, and soul with some beautiful and nourishing food.

Let’s do a 2023 check in so far…how has it been? 

It’s been so very full on my end– and all good things. 

By morning I’m working through an inversion practice, using blocks and straps and prep to help me get upside down. 

My goal is to be able to successfully hold an inversion by the end of the year! 

By evening I’m learning German in a virtual course that just kicked off this week. 

Sprechen Sie Deutsch? 

It feels good to actively pursue my goals and dreams, and it feels even better to fuel them with my favorite foods. 

I’m fiercely protective of my nourishment right now, because with all of the go-getting, there isn’t as much time for rest. 

So, let’s make sure we have a cozy and nourishing lunch for the weeks ahead.

5 Warm Salads to make when the weather is cold and you’re craving something cozy but fresh. Pair these with protein or grains for a side or main meal! 

It feels like M and I have been away more than we’ve been home for the month of October. 

I’m currently writing to you from Lexington, Kentucky, where we are visiting M’s family! 

We’ve already seen a horse race and completed a tour at a local distillery. 

From Kentucky we’re driving on to Indiana to see my family for our annual family reunion.

So, this trip in total will be a lot of driving, a lot of family, and, so far, a lot of fun!

I’m honestly not a road tripper, and being in the car usually makes me a bit nauseous and a lot antsy, restless, and moody. 

Something about being trapped in a tiny space hurdling down highways makes me feel all kinds of existential and pensive. 

However, it has its perks, like being able to pack whatever I want: i.e. a bag dedicated only to shoes and two coolers packed with meal prepped food.

It’s surprisingly warm in Kentucky, so I’m currently loving my classic chilled overnight oats and wraps. 

However, it’s the time of year where I start craving warm cozy things all day long. 

I’ve always been a firm believer in the warm salad, because when it gets cold raw salads just sound less appealing. 

Today I’m sharing my favorite 5 Warm Salads to Make this season! 

Try pairing them with grains or plant-based protein for a heartier meal or enjoy them solo for a light lunch or dinner! 

They’re also perfect as a side dish to add some color to your upcoming holiday spread.

If you’ve been following me on social media, you know that I joined TikTok this year. 

Because social media is big part of my job, I rarely find myself scrolling without a purpose. 

TikTok, however, is an entirely different story, friends. 

In the evenings when I’m too tired to make the move from the couch to the bed, I fall down a Tik Tok rabbit hole.

My thumb seems to move entirely of its own volition, descending through messy kitchens, viral sounds, and couples humor. 

It’s like the wild, wild west. 

Many evenings the app makes me laugh out loud, causing me to shove my phone in M’s face and plead, “Just WATCH this,” between giggles. 

He’ll roll his eyes and say, “I don’t understand TikTok!”

Well, you don’t have to understand or even like the app to appreciate the recipe that I’m sharing today. 

This Green Goddess Salad is my version of the salad from Baked By Melissa that was EVERYWHERE on the internet earlier this year. 

And I saw it first on…you guessed it…TikTok!

I’m back from my second European adventure!

If you’ve been around here a while, you know that I made my first trip to Germany last December to meet M’s family in friends.

It was really special to be back again for warmer weather and see the countryside green and alive. 

When I arrived it was strawberry, cherry, and Spargel (asparagus) season! 

I also saw my first Schwimmbad (swimming pool) and Biergarten (beer garden) in M’s home town. 

We went on a camper van adventure to Austria and Switzerland, hiked the Zugspitze (tallest mountain in Germany), and attended the beautiful wedding of a friend. 

But probably my most favorite parts were hanging out at M’s house.

Plucking cherries straight from the tree, yoga on the patio, chess lessons from M’s little brother, reading with M sprawled across the couch. 

It was a busy but beautiful trip and my only regret is that I didn’t improve on my German more before going! 

I returned to the U.S. this past weekend tanned, tired, and craving all of the greens. 

This Summer Salad Inspiration is a collection of my favorite salads for warmer weather.

Are you doing all of the fall things?

This weekend I carved pumpkins with my sister, cousin, and M!

I’m not sure if the pumpkin will “make it” it to October 31st, but early October was the only time where all of our weekends synced up. 

We sat on my living room floor, fingers covered in pumpkin pulp, listening to the monster mash. 

I won’t win any pumpkin-carving awards anytime soon, but we had a blast anyway.

When it got dark we lined the pumpkins up on the front step and dropped a tea light candle in their orange concavity. 

I still have 5 un-carved pumpkins of assorted sizes on the front step, waiting for their debut. 

Strangely, I’ve been craving kale salads even though the weather is getting crisper and cooler.

Which is lucky, because kale is a wintergreen, after all, right?

This past week M and I mapped out our new daily walk around the neighborhood. 

We used the blinking blue dot on Google maps to pinpoint our location and make connections between intersecting streets and trails. 

28 minutes– the number we ended up with as we stood outside of our new place with the old doormat, reading “There’s No Place Like Home” in the bristles. 

M has never seen The Wizard of Oz, so I’ve added it to the top of our To-Do list.

“I feel like it’ll be better to watch in the Fall,” I explained, dreaming of crunchy leaves and cooler winds and muted colors. 

But for now, it’s still hot, and I’m living on bowls at the new place. 

Today’s recipe isn’t complex, but it’s tasty, packed with plant-based protein, an oil-free dressing, and plenty of kraut. 

This vegan reuben is served in a bowl with romaine lettuce, cabbage, tempeh bacon, and sauerkraut, served with a creamy hemp heart ranch.

It’s kind of a strange time of year.

The novelty of the new year has worn off and the next big holiday in sight is Valentine’s Day.

I’ve been hunkering down and working on the cookbook with the fire of a fast approaching manuscript deadline.

Honestly, the hardest part of cookbook recipe creation is keeping said recipes from you! 

I’m so accustomed to the instant gratification of the blog posting process that hoarding all of this content feels downright miserly.

Which is why I’m letting one of the recipes slip through the cracks today…

New year, new hair? 

I haven’t done *true* bangs in almost 15 years, since I was obsessed with Anne Hathaway’s thick bang in the Devil Wears Prada.

Remember how chick she looked, guys!?

Well, I didn’t look like that at all. 

The hacked locks stacked on my forehead like a massive mop, a hair helmet of sorts.

So yeah, I’ve been avoiding bangs for a bit. 

But change is good, and I’m getting used to the feeling of movement across my forehead. 

Aaand coming to terms with the fact that, if I actually want them to lay right, I need to style them. 

Doh. 

I’d much rather just style my salads…

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
