Moroccan Mason Jar Salad

By Flora & Vino 1 Comment

This is a sponsored post written by me on behalf of Safeway. All opinions are 100% my own.

Mason jar salads with raw chopped vegetables, chickpeas, quinoa, herbs, and  a zesty Moroccan-inspired dressing. Perfect for meal prep!

Moroccan Mason Jar Salad in layers surrounded by slivered almonds, shredded carrots, shredded cilantro, chickpeas, and cranberries

Psst.

Did I tell you that I’m writing a cookbook?

If you’ve been following me on social media, you might have heard the news about my first book.

Because the cookbook is meal prep inspired, I’ve been living the meal prep lifestyle here at home.

This means reserving time on Sunday and stuffing lots of fresh food into Tupperware and mason jars.

You might not equate the holiday season with meal prep, but honestly, it’s one of the times I crave stability the most.

Amongst a string of holiday commitments and festive food, it’s easy to feel a bit frazzled and malnourished.

So, it’s amazing to have a fresh meal from the fridge to balance things out between all of the happy chaos.

These Moroccan Mason Jar Salads are so easy to prepare for a portable lunch that’s packed with raw vegetables, herbs, and a zesty Moroccan inspired dressing.

Roasted Squash & Arugula Salad

Roasted squash & arugula salad with pine nuts, dried cranberries, and apple cider vinegar dressing. Perfect for fall and winter lunches!

Roasted Squash & Arugula Salad by Flora & Vino

Being a new rock climber is definitely an ego boost.

I would be lying if I didn’t feel pretty darn cool carrying ropes through the state park on the approach.

Hearing kids shout and point to skeptical parents, “Wow, look, mom, rock climbers!” made my helmeted head just slightly bigger.

But learning how to rappel down a cliff yesterday definitely shook my cool.

The hardest part (for me) was lowering myself over the edge to effectively test the safety with my body weight and set up the dual ropes through my ATC.

I clung from the edge of the rock while my feet dangled, digging for comfy footholds that never came.

Looking up at M wildly I said, “I feel like Mufasa from the Lion King right now,” and burst out laughing.

Yeah, I laugh a *lot* when I’m nervous.

But it was all good because my safety latched like I knew it would and I set up my rappelling ropes no problem.

M fireman belayed me from the bottom and I repelled like a freakin’ rockstar.

When my two feet were finally on the ground again, I laughed at how simple it had all been.

This Roasted Squash & Arugula Salad is almost as satisfying as the delicious post-climbing soreness I felt waking up today.

It’s made easily with roasted winter squash, arugula, pine nuts, and dried cranberries for a

Light summer salad with arugula, blueberries, and toasted pecans. Toss with a zippy blueberry vinaigrette made with blueberry kombucha.

Blueberry Pecan Arugula Salad served with Blueberry Vinaigrette on a plate with a fork

It’s thunder-storming as I write this post and I’m counting the seconds between the lighting and thunder.

One mississippi, two mississippi, three mississppi.

Earlier today it was bright and sunny, and I used the abundance of blueberries in my fridge to make a salad.

Summer thunderstorms in Virginia come and go about as quickly as this sweet and satisfying summer salad.

This Blueberry Pecan Arugula Salad with Blueberry Vinaigrette is simple, light, and refreshing.

It’s perfect to mix up for summer when the weather is warm!

Cannellini Bean, Quinoa, & Kraut Bowl

By Flora & Vino 2 Comments

Satisfying macro bowl with greens, cooked quinoa, roasted sweet potato, avocado, and plenty of sauerkraut. Perfect for meal prep and workweek lunches!

Cannellini Bean, Quinoa, & Kraut Bowl by Flora & Vino

Guys, I need to decorate.

My friend and photographer came over to take some photos of me in my home this week for the blog.

I had the idea to use my couch for the scene, my beige couch with an expansive blank white wall above it that stretches from the window to the wall.

A blank white wall that could *really* use a painting, a decorative shelf, a framed photo….SOMETHING.

But I didn’t have anything, so instead we worked hard to place plants and bright pillows and cheerful coffee mugs to give the scene some zest.

The white walls were acceptable when I moved in 5 months ago, but now they feel a bit harsh and unwelcoming.

I just don’t quite know where to start, you know?

One of my best friends told me, just put one thing up and go from there.

Well, OK, that sounds easy enough.

Maybe I should just put up some food photos and call it a day.

What do you think about blowing up this Cannellini Bean, Quinoa, & Kraut Bowl in all it’s colorful macrobiotic glory as the focal point for my living room?

This bowl is packed with plant-based protein, healthy fats, probiotics, and complex carbs to keep you healthy and satisfied!

Red Carrot, Apple, & Beet Detox Salad served in a bowl with a fork by Flora & Vino

Hey, everyone!

It’s half way through January and we are making moves.

Did I tell you that I’m enrolled to take a course in plant-based nutrition starting in February?

I’m really excited to learn more about how eating more veg can impact your overall health and wellness and share that with you!

I know we talk a little about nutrition here on the blog, but I try to keep it vague and unspecified because, DISCLAIMER, I am not a medical professional or licensed nutritionist/dietician.

Usually I like to frame my recipes in the context of what works for me and what makes me feel my best in hopes that it might do the same for you.

I definitely have a “feel good” recipe to share with you today that’s packed with fresh produce, healthy fats, and cleansing qualities.

This Red Carrot, Apple, & Beet Detox Salad requires just 6 ingredients you can mix on the spot to feel fresh and rejuvenated.

Tri-Colored Roasted Cauliflower Salad by Flora & Vino

Can we talk for a second about how close the holidays are?

Today is two weeks until Thanksgiving and yesterday was six weeks until the new year.

Not that I’m counting or anything.

To be honest, I haven’t even fully acknowledged that it’s November, let alone the side I’m going to bring to Thanksgiving Day dinner at my parents’.

Luckily, I hope this Tri-Colored Roasted Cauliflower Salad can help us with our holiday dish scramble.

It’s the perfect side dish to add some cozy color to any plant-based plate!

You just need one pan, three heads of cauliflower, the perfect neutral, high-heat cooking oil, and your favorite fresh herb to bring this salad to your dining room table.

Root Veggie Chip Arugula Salad with crumbled cashew cheese, and caramelized onions. Perfect for a light autumn lunch or side salad.

Root Veggie Chip Arugula Salad served on blue towel with scattered vegetable chips and fork

Today I left the house at 7 AM in shorts and felt 60 degree breeze hit my bare thighs.

I proceeded to jump into the car and blast the heat and seat heater, because how else do you get warm in September?

It’s definitely starting to feel like fall here in Virginia; colorful leaves cascading off of trees and a definite chill in the mornings and evenings.

With the first “official” day of fall in just a few days, all I can see are shades or sepia and burnt orange and gold.

When I think of fall, I immediately think of ruby-colored root veggies.

How about root veggies in chip form?

You’re going to love this Root Veggie Chip Arugula Salad for a light autumn lunch or side salad this season!

Delicata Squash Quinoa Power Bowl

By Flora & Vino 2 Comments

Power bowl with roasted delicata squash, quinoa, spinach, basil, and toasted pine nuts. Oil-free, gluten-free, and packed with protein and leafy greens!

Delicata Squash Quinoa Power Bowl by Flora & Vino

At yoga teacher training last weekend we wrote our fears (about beginning training) on scraps of paper and burned them standing in a circle in the parking lot.

When it was my turn, I read my fears aloud (public speaking, lack of time, judgement) and then added sheepishly, “One of my other fears is fire, so, uh, could someone else light this for me?”

One of my yoga teachers grabbed my paper, squatting towards the asphalt and lighting my folded fears with ease.

The truth is that all of my fears wouldn’t fit on that scrap piece of paper even if I wrote SUPER small.

They’ve been a little out of control lately adjusting to living, cooking, and working in a new space.

Change. Is. Hard.

For example, I used an electric stovetop my *entire* life, and was more than apprehensive about the gas cooking range in my new townhome.

“You mean I have to cook over an open flame???”

Fear of fire, friends.

Well, and the very real fear of accidentally leaving the gas on, because I can be so haphazard in the kitchen.

This Delicata Pesto Quinoa Power Bowl is the first thing I’ve cooked in my new home and I’m pretty proud of it.

These power bowls are an excellent basic meal to make this fall for an easy protein-packed lunch or dinner.

Feel the fear (and the fire) and do it anyway!

Kidney Bean Arugula Salad

Simple and flavorful kidney bean salad packed with arugula, cherry tomatoes, pine nuts, and avocado. Perfect for a quick protein-packed lunch.

Kidney Bean Arugula Salad served on plates with forks with serving circle in corner with pine nuts, tomato, lemon, and sliced tomatoes by Flora & Vino

TRUTH: Doing any indoor activities outdoors immediately elevates the entire experience.

Ex: yoga, running, wine-tasting, reading…

I remember one day in college my English professor stood up in the middle of class and said without warning, “Let’s have class outdoors today!”

All of us undergrads grabbed our paperback books and notebooks and sat under oak trees discussing Shakespeare’s sonnets.

It was the best class ever.

I’m sitting outside as I write this and it occurred to me that I should probably do this more.

“This” being take advantage of working outdoors if and when I want to.

Early on in solo entrepreneurship, I was absolutely guilt of idealizing the “be your own boss” life.

Working for myself, I assumed it was going to be a spontaneous flow of lunch dates, walks with Harper, and skipping out of the studio early for the early yoga class.

Turns out it’s more of an 80 hours workweek model, and my lunch date tally is still in the single digits.

But then there are moments, working on the deck cradling my laptop between crossed legs, that I feel free-er than I ever have.

Especially with this Kidney Bean Arugula Salad to my left!
