I heard a quote recently that compared humans to nature that really struck me.

The gist of it was, that if nature has periods of rest that allows for an abundant, blossoming spring, why do we believe we should always maintain the same pace? 

Maybe it’s because it’s winter and I can see the houses across the woods from me through stick-man-like trees, but it made me stop and think.

Honestly, I feel behind on the race that is 2024.

But, if this year is a race, the only person I’m competing against is myself. 

And even then, why should I expect myself to always operate on one level of productivity? 

Let’s chew on this for the rest of the month:

Maybe beauty comes out of rest and relaxation. 

I have been inspired to get back to making plant-based foods after taking some time away. 

We also just watched “You Are What You Eat” on Netflix, which just inspired my love of sharing vegan recipes that much more. 

I’m writing down lots of new recipes to share, focusing on easy meal prep recipes packed with protein.

This week has been fueled by Pumpkin Apple Baked Oats for breakfast, in a never ending supply. 

That’s because last weekend I tested not one, not two, but three different variations! 

And, yes, I’m still working through my five bags of apples that I accidentally ordered 2 weeks back.

However, I’m putting them to good use in this recipe. 

It smelled *so* good in the kitchen while recipe testing; pumpkin spice and cinnamon and sweet baked apple permeated the air. 

Sometimes I can’t decide between pumpkin and apple this time of year. 

So the version I settled on has equal parts pumpkin and apples with a delicious vegan cream cheese frosting.

It’s been raining here nonstop, remnants from Tropical Storm Brett. 

I haven’t needed to water my outdoor plants in a few days, which has been nice. 

But then again, I also haven’t been able to take my daily neighborhood walk, either. 

So I’m going to blame Brett for my lack of energy this week, and the fact that I fell asleep in my recliner while working, not once, but twice. 

But hey, it’s also good weather for snuggling up with a book, binge-watching a show, or….baking.

Did I ever tell you that I named my car? 

Well, technically M did. 

If you ever watched episodes of the old show “Psych” (M and I binge-watched during pandemic) you might remember that Shawn and Gus’s car was referred to as “the blueberry”, because it was a brilliant color of blue. 

That’s when M started calling my car the raspberry, because it’s candy apple red.

The nickname stuck, and 3 years later we still refer to it as “the raspberry” in conversation. 

Which I’m sure might be confusing for eavesdroppers…

“The raspberry is totally covered in pollen!”

“The raspberry could really use an oil-change.”

“Did you lock the raspberry?” 

But it’s fine, because it makes car conversations cute and approachable (not usually the case in my experience) and also because I love raspberries.

Speaking of raspberries, I have a new raspberry recipe for spring.

Happy new year, friends! 

I hope you had a wonderful holiday and a very happy new year. 

It always feels like we have *so* much time off, and then it flies by, right? 

We spent Christmas with my family in Virginia and in the week between Christmas and New Years did all of my favorite things. 

We visited a new Maryland vineyard, went indoor rock climbing, hiked at Harper’s Ferry, and dined at the Fancy Radish in DC.

I relished those quiet days between 2022 and 2023; suspended between past and future, I felt purely present. 

Yesterday I went to an intention setting yoga workshop and scribbled in my journal between asana, meditation, and breath work.

Your girl has some big intentions for the new year and some big changes to embrace. 

Then I completed a massive meal prep session because nothing makes me feel more calm and collected than a fridge full of food.

I’m going to get straight the point of this post: I love this Chocolate Baked Oatmeal so much!

I packed both pans in our cooler and took them to southern Virginia this summer to visit family.

Sometimes reality TV is weirdly comforting to me. 

The day I first made this a single serve breakfast cookie I was simultaneously binge-watching Love Is Blind Season 2 on Netflix. 

Judge me, but watching these “love stories” unfold from the comfort of my living room was wildly cathartic. 

And inspired me to make an equally cozy baked breakfast. 

I alternated between sitting on the TV couch and standing by the oven to check on the cookie progress. 

When it was done I enjoyed mouthfuls of cookie while watching drama unfold on the TV screen. 

I’ve made plenty of breakfast cookies on Flora & Vino, but I’ve never made a *single* breakfast cookie.

When I stop and think about how far into 2021 we already are, it gives me whiplash.

Is the year going quickly for you, too?

Anyway, April 2 was my birthday, my second birthday in careful quarantine. 

My sister dropped of hand-wrapped gifts to my doorstep and my amazing cousin delivered an exquisite bouquet of flowers. 

I video-chatted and texted with my friends, believing that this time next year I’ll be squeezing them instead of the volume button on my phone. 

And let’s not forget food! 

M made me pancakes– the first pancakes he’s ever made– and they were delicious.

For dinner, we ordered Sweetgreen, because it’s the most “Lauren” thing I could think of that was within the delivery range for Uber Eats. 

The week of my birthday I tested a cake (coming soon!!!) and made a delicious Carrot Cake Baked Oatmeal.

It’s easily mixed up and baked in advance for easy springs breakfast during the week.

This is a recipe where you can have your cake and prep it for breakfast, too, boo.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
