It’s been stupid hot here in Virginia for the past few weeks.

Every day the forecast threatens 100 degrees with a chance of thunderstorms that fail to break the blanket of heat.

My daily power walks have become more of a mosey as I try to keep cool but still see the great outdoors.

So, how are you doing?

I know it’s been a while since I posted so I wanted to check in.

I’ve been OK.

Content on the blog has taken a bit of a backseat as I focus on new projects and big picture goals.

And then there’s the ever present backdrop of life in a post-quarantine but not post-pandemic world.

Honestly, I have no idea how to navigate this new normal and not much desire to try.

So, instead, I stay home and make Cranberry Almond Breakfast Cookies.

Raw Carrot Hummus

As I type this my fingers are smarting.

Last night I dusted off my guitar for the first time since I moved to see if I still remembered how to play.

If you live next door to me, I sincerely apologize, because you might have heard me strumming and belting out Wonderwall at something close to 11 PM.

Oops.

I kind of forgot how much volume my acoustic guitar has.

The good news is that, yes, I do, in fact, remember how to make chords with my left hand and hold a pick in the right.

The bad news is that my fingertips do not remember the callouses that cushioned them back when I used to play with regularity.

So my fingers are pretty darn sore today, which I’m reminded of every time I press them into my MacBook Pro keyboard.

Luckily, it’s only my left hand, because my right hand is ready for snack time.

I’m excited to share this colorful new cracker and dip combo to make your snacking both pretty and delicious.

I’ve been seeing flashes of black out of the corner of my eyes for the past few days.

I chalked it up to glare in my glasses or a trick of the peripheral vision.

Last night as I was about to click off the lamp and head upstairs to bed, I saw the same flash of black with an accompanying tail scurry across my living room floor rug and behind the AC unit door.

The good news is that I’m not hallucinating after long days behind the camera and I don’t need to get my eyes checked.

The bad news is that it appears I have a mouse in the house.

Or a rat, to be honest, I didn’t get a good enough look to carefully categorize by species.

Having never cohabitated with anything bigger than a spider, you can imagine my shock to suddenly share my living room with a pet I didn’t purchase on all fours.

He’s probably scouring the house for any bits remaining from my recipe shoot yesterday with SunButter and dates.

While I’m dealing with rodents, you guys should probably make these SunButter Date Squares.

They’re made with just 5-ingredients in 30 minutes for an easy vegan and gluten-free breakfast, snack, or dessert!

On photoshoot days I immediately wake up and check my weather app to see if the light will be good for shooting.

I’m still shocked on mornings when I see the temperature will be soaring into the 80’s.

And even more shocked that this Sunday is the last day in May– excuse me?

Anyway, it looks like we’re well on our way to summer, so let’s bring in the summer staples.

One of my favorite summer staples growing up was baked beans.

The Bush’s Vegetarian Baked Beans were my absolute favorite as a kid.

We often opened a can to serve alongside chips, burgers, and coleslaw on messy paper plates on the deck overlooking the backyard.

I used to spoon them onto my plate and watch the mixture expand in a think syrupy puddle.

Sometimes I actually used to delight in dipping my potato chips in the puddle (don’t judge me!).

When I asked on Instagram what summer recipes you needed, baked beans was a top request!

These Vegan Maple Baked Beans don’t disappoint.

Some of the most commonly asked questions I receive on the blog and Instagram are about ingredient substitutions.

If you’ve been around here a while, you know that in each blog/recipe post, I typically share some simple substitution options, but I figured it might be nice to have a more overarching post to direct you to.

Now more than ever, I figure we could use some solid subs, yeah?

I don’t know about you, but some of my best recipes have come from making a ton of substitutions to a recipe.

It’s so fun and easy to adapt recipes to mix things up when you don’t have all of the ingredients!

Whether you have a food allergy or intolerance, don’t have the ingredients on hand, or just don’t like an ingredient—I got you!

In this Easy Vegan & Gluten-Free Ingredient Substitutions post, I list some of my favorite ingredient swaps so you can use what you have available to you to make something delicious and uniquely yours.

I have a small fridge that is constantly overflowing with all of my recipe creation leftovers, hummus containers, resealable bags of superfoods, and fresh produce.

You know you’re an adult when you start planning months or even weeks ahead to pencil your friends in for a simple lunch-date.

One friend and I scheduled ours in for almost two months out; the first Saturday free blank on both our day-planners.

Lately my calendar is been a scary place lately; one I force myself to enter each morning as I sip matcha and plan for the day ahead.

Between balancing yoga teacher training and rigorous work schedule around it, I feel like I should have a permanent away message slapped on my forehead.

But even with my daily scheduling check-in, I’m still baffled at how fast January went by.

I mean, weren’t we just setting new years intentions and goals and stuff?

Next weekend is already the first weekend in February, and also happens to be Super Bowl Sunday.

If you’ve been here a while, you know I’m about as confident watching football as I am public speaking.

AKA not very.

However, I AM very confident in the concept of game-time snacks.

Is it cookie season yet?!

I kind of can’t believe that my big December calendar shows only a little over two weeks to Christmas.

Don’t tell my family and friends, but I haven’t even started my Christmas shopping yet.

Aside from my mini blue spruce tree adorned with all of my childhood ornaments and the Christmas music on repeat, I feel pretty unprepared for the holiday.

This past weekend I had yoga teacher training every day with a 15K race early Sunday, so I have quite literally been on the run.

But I did make cookies.

In yoga teacher training recently we talked about our cold-weather food cravings.

Which makes sense because the room we congregate in for teacher training is FAH-REEZING.

BRRR.

It also makes sense because doing all the yoga makes you crave all the food.

Anyway, we (the collective YTT group) agreed that all we want to eat lately are carbs, and by carbs, we mean sweet potatoes.

Hi, friends!

This past weekend I saw Downton Abbey, the film, with my parents and sister.

Have you seen the show?

I binge-watched all six seasons in long sittings in my first apartment almost five years back.

My parents were simultaneously watching the show at their house, so on our phone calls circa 2015 we chatted about what all of Downton’s characters were up to.

When I discovered this year that there was now a full feature movie I knew we had to all go see it family-style.

And by family style I mean rolling the 10 AM matinee showing like we own the place.

I won’t go into any details in case you’re planning to see it, too, but the film does give all of our favorite characters a mini storyline to triumph and grow a little.

My storyline lately has been continuing to organize the new house, and organizing always involves snacks.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower!
