This week I finally finished the 30 Day Minimalism Game and donated, trashed, and gifted a whole lot of stuff.
I also finished a massive spring cleaning that unearthed every square inch of my condo.
There is finally order in the the bathroom pantry, the kitchen cabinets, and *gasp* the refrigerator.
Now comes the truly hard part; keeping it that way.
I’m already witnessing difficulty in closing the junk drawer, and vegan products without designated pantry places.
You can only do so much with the space and time given to you, right?
At least I can keep order in any toast situation.
This Shiitake Avocado Toast is made with sourdough bread, smashed avocado, and sautéed shiitake mushrooms.
It’s the perfect for a savory breakfast packed with umami flavor, healthy fats, and complex carbs.
My Shiitake Era
Well, I’m officially a mushroom person now.
After four years, M’s mushrooms obsession has *finally* rubbed off on me.
I’m currently in my shiitake era and loving every moment of it.
Lately, I love sautéing them in a pan with a little bit of olive oil, sea salt, and dried thyme.
You’d think this might be a good thing; an obsession that M and I share.
But I see mushrooms wars in the future, friends!
Because I’m not backing down on those last few shiitakes in the fridge, and M is a mushroom monster.
Lately, my favorite way to enjoy them is loaded on avocado toast.
What You Need to Make the Sautéed Mushrooms
Here’s what you need for the shiitake mushrooms:
- olive oil
- shiitake mushrooms
- dried thyme
- garlic powder
- Himalayan sea salt
That’s it!
How to Prepare the Shiitake Mushrooms
First, heat the olive oil in a large skillet over medium-high heat.
Once it’s warmed, add in the sliced shiitake mushrooms.
Allow the mushrooms to cook over medium-high until they start to release their liquids.
Add in the dried thyme, garlic powder, and sea salt.
Once the moisture is mostly cooked off, reduce the heat to medium and continue to cook the mushrooms, stirring occasionally, until they’re lightly browned.
In total, mushrooms will cook for 10-12 minutes, give or take a few minutes based on how browned you want them.
What You Need to Make the Avocado Toast
Here’s what you need:
- Simple Kneads Gluten Free Sourdough Bread
- avocado
- lemon
- Himalayan sea salt
- Hemp hearts

How to Make the Avocado Toast
Meanwhile, toast the bread in the oven or a toaster.
Listen up, because here is my method for making the best avocado toast base.
Slice your avocados in half and score the inside with a knife.
Squeeze a bit of fresh lemon into each avocado halve and sprinkle with a bit of Himalayan sea salt and set aside to marinade.
Notes on Meal Prep
While this is one of those recipes that you make on the spot, (nobody likes soggy toast…!), I love to prepare the mushrooms in advance.
The sautéed mushrooms will keep in an airtight container in the refrigerator for up to one week.
This way, I can enjoy my avocado toast in less then 5 minutes on busy workweek mornings.
Reheat them in the microwave before adding them to freshly made avocado toast.
How to Serve Shiitake Avocado Toast
To assemble the Shiitake Avocado Toast, scoop out the lemon sea salt avocado mixture and smash ½ avocado on each toast with a fork.
Top the toasts with warm sautéed mushrooms and a sprinkle of optional hemp hearts.
I love this combination for an easy savory breakfast or a side to your tofu scramble.
It also makes for a nice lunch or snack when you don’t have much else going on in the refrigerator.
If you don’t have shiitake mushrooms, any sliced mushroom will work in this recipe instead.
