I started out with this whole “food” thing as a baker, not a cook.

My first introduction began at a young age was emptying out packages of Betty Crocker baking mixes into a bowl, adding all of the ingredients, and stirring like my life depending on it.

Even though I knew the effort was minimal, I couldn’t help but feel so proud of myself when everything came out of the oven *perfect*.

If only things could be that easy now…

Oh wait, they can!

These Baked Banana Bread Balls only require my favorite baking mix and a few easy additions to make a 1-bowl portable snack!

I was so excited to use Simple Mills Muffin & Bread Mix to make these Banana Bread balls!

This gluten-free, grain-free, and dairy-free baking mix is made with 7 simple ingredients.

Baked Banana Bread Balls in crushed walnuts

Simple Mills Muffin & Bread Mix is has an almond and coconut flour base mixed with real banana that’s lightly sweetened with organic coconut sugar.

The ingredients are things I use in my kitchen already, mixed into one convenient pouch that you can find at Target!

You can add it to your shopping cart, the one full of stuff you didn’t realize you couldn’t live without until that very moment.

Thanks, Target.

Although in my case, I’m guilty of going to Target just for the mix!

While this mix is perfect for your basic banana muffins and bread, I went a bit bananas and used it to make Banana Bread Balls!

It has a sort of ring to it.

Because sometimes you want banana bread on the go, you know?

These balls are lightly sweet, banana-y, nutty, and packed with protein.

The anatomy of a banana ball is….

Soft and tender, yet sturdy enough to be portable.

I rolled mine in crushed walnuts for extra protein and crunch.

I made some simple substitutes to the Simple Mills recipe to keep these balls vegan and oil-free.

“Flax eggs” work in place of the egg, and use applesauce instead of oil.

I also tested a chia egg version, too, if you prefer chia instead!

Enjoy these Baked Banana Bread Balls whenever you want a delicious and healthy treat on hand for the week!

They’re ideal to make ahead of time and store in a glass container in the fridge for quick and easy snacking.

Make them quickly during a lazy weekend meal prep session or extend the fun with friends and family!

Try them served warm with a smear of coconut butter– YUM.

Description

Easy baked banana bread balls made simple with Simple Mills Banana Bread & Muffin mix! Perfect for meal prep and easy snacking on the go.


Ingredients

  • 1 box Simple Mills Banana Muffin & Bread Mix
  • 3 flax eggs (3 TBSP ground flaxseed + 9 TBSP filtered water)
  • 1/4 cup applesauce + more for rolling
  • 1 cup walnuts, finely chopped

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Add the flaxseed and water to a large mixing bowl and whisk it to combine. Allow the mixture to sit for 5 minutes to gel, then add the Simple Mills Banana Muffin & Bread Mix and applesauce. Mix well, the dough should be stir-able but thick.
  3. Scoop the dough into ~1″ TBSP scoops with a cookie dough scoop and roll them into ball with your hands. If your hands stick to the dough, try wetting them with a bit of water first. Roll the balls in the crushed walnuts until covered, then place them on the parchment covered baking pan. (If the walnuts aren’t sticking to the balls, you can lightly dip the balls in applesauce first!) Repeat this process until all of the dough is gone.
  4. Bake the balls in the oven for 15-20 minutes, or until they’re golden brown on the outside and starting the crack.
  5. Remove the balls from the oven, allow them to cool slightly, then serve.
  6. Store leftover banana bread balls in a glass container in the fridge for up to one week and freeze for longterm storage.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.
