Where did August go, friends?!
I just chastised M after I saw that the calendar in his room still read, “April”.
But I feel like that 5-month gap in page turning is a pretty good representation of 2025 so far.
It started out slow, and now here we are somehow barreling into Fall.
This month, we took Flora to the beach for the first time.
We were surprised to find Flora initially terrified of the roar of the tide and the consistency with which it threatened to wet her paws.
It chased her back and forth until finally, on our last day there, she got brave and walked in salty water.
We cheered and praised her and my heart swelled because she looked like such a small animal standing in such a large ocean.
And that’s really all that can be said for any of us, right?
Just drops in an ocean, but, just like Flora, we can do hard things!
Speaking of hard things, this month I also completed another weekend of my 300 hour YTT program.
This weekend we started to learn how to cue a mandala-style vinyasa class, where you turn students on the mat.
The back of the mat becomes the front of the mat and visa versa so you’re shifting directions and perspective while you flow.
It’s this shift in perspective that makes it fun to adopt a beginner’s mindset, or allowing each experience to stand on its own as a fresh start.
And that’s really what Fall feels like for me.
A fresh start, a chance to make new routines, an opportunity to set new rhythms, an invitation to grow, learn, change.
My favorite foods are full of seasonal fall favorites, like these Apple Butter Crumble Bars.
These easy apple butter crumble bars are made with just 6 whole food ingredients.
They’re perfect for a quick breakfast, snack, or healthy dessert.
What You Need to Make Apple Butter Crumble Bars
Here’s what you need to make Apple Butter Crumble Bars:
- oat flour
- old fashioned rolled oats
- Eden Foods Organic Brown Rice Flakes
- pure maple syrup
- coconut oil
- Eden Foods Apple Cherry Butter
That’s it!

How to Make Apple Butter Crumble Bars
Preheat the oven to 350°F and line an 8-inch x 8-inch baking pan with parchment paper or lightly grease with coconut oil.
In a large mixing bowl, combine all the crust ingredients: oat flour, rolled oats, Eden Foods Organic Brown Rice Flakes, maple syrup, and melted coconut oil.
Eden Foods Organic Brown Rice Flakes are a great pantry staple for breakfast porridge, baked goods, and soups.
This California organic short grain brown rice is gas fire roasted and rolled into delicate flakes!
The dough should stick together when pressed between two fingers.
If it’s too dry, add a splash of filtered water or unsweetened almond milk.

Press 2/3 of the prepared dough into the base of the baking dish, using a spatula to create an even crust.
Spoon the Apple Cherry Butter on top of the prepared crust and spread it into an even layer.
With your hands, crumble the remaining dough on top of the apple butter layer to form the topping.
Transfer the dish to the oven and bake the bars for 30-35 minutes, or until the crumble starts to turn golden brown.

Notes on Meal Prep
These Apple Butter Crumble Bars are perfect for meal prep!
I like to make a pan on Sunday and M and I enjoy bars for breakfast during the week ahead.
They store well in an airtight container in the refrigerator for up to one week or in the freezer for several months.
The crumble topping might get a bit moist after a while in the refrigerator as it absorbs the moisture of the apple butter.
This doesn’t effect the taste whatsoever!

How to Serve Apple Butter Crumble Bar
Remove the dish from the oven and allow it to cool completely before slicing into 9-12 bars.
