I remember the first time I added avocado to my shake.

I tapped my spoon on the edge of the blender, releasing a big green hunk of avocado into the pool of protein powder, fruit, and almond milk.

I didn’t have a good feeling about it.

Then I pressed blend anyway.

Thank goodness I did, because I’ve been adding avocado to my smoothies ever since.

I love starting my day off with healthy fats to stay satiated through the morning and avocado is up there with nut butter for me in my smoothie- additions!

Not only do they provide amazing health benefits, they also make your shakes and smoothies super creamy and decadent.

Have you ever eaten breakfast in bed?

I can’t say that I have.

It’s one of those things that sounds so perfect in theory, but when it comes down to it is actually kind of hard to pull off.

Once I’m up, I’m up.

And then there’s the logistics of serving and eating without getting breakfast ON your bed…

If I had to pick a breakfast in bed meal, though, it would be these Strawberry Rhubarb French Toasts.

They’re the perfect balance of cozy and fancy to brighten up your bedspread.

And since it’s Mother’s Day and all, you should probably make them for your mom and serve them to her in bed Sunday morning.

I thought this recipe was appropriate for Mother’s Day because rhubarb always reminds me of my mom’s rhubarb pies.

The best part was the rhubarb filling.

I used to dig my spoon deeper and deeper into the interior of the pie, extracting all of the sweet pink until finally I was left with a concave pie crust.

It was really good filling. I’ve never been a big pie crust eater, unless it’s graham crackers crust.

But that’s a story for another post.

I remember ripping open a packet and being overwhelmed by that sugary sweet blueberry bakery smell.

Needless to say, I’m really excited to share these Double Chocolate Zucchini Muffins!

They’re kind of the superhero of muffins because they have special powers.

They take ordinary greens and transform them into mouth watering bites of chocolate.

Pretty cool, right?

I’m going through a serious “hidden greens” phase right now and these muffins are my latest experiment in their disappearing act.

They not only have one, but TWO greens hiding under their oatmeal exterior.

In the last phases of mixing, I remembered some extra spinach in the fridge and on impulse threw it in the blender with the zucchini to grate.

Double chocolate, double green.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
