Two weekends ago I had to miss my yoga teacher training because I was sick with the first cold of the season.
It’s been an ongoing goal of mine to connect with more local yoga studios in the area.
The hope being that I find a place that I can practice regularly and perhaps even one day teach at.
Ever since the pandemic, I’ve been all too comfortable practicing yoga from the room I fondly refer to as…the yoga room.
I am so fortunate that I have a space to work out at home, but, as my teacher said when encouraging me to connect locally, the energy just feels different in the studio.
So I’ve been pushing myself to get outside of my comfort zone and take classes with the public.
After the third class, I started to feel a connection to the community and myself I hadn’t felt in years.
It was like realizing a version of myself that I’d forgotten; a Lauren that went out for evening yoga regularly because it lit me up.
However, with the public yoga comes the public germs.
I remember looking askance during my third class at the girl next to me, sniffling heavily in downward facing dog.
She sounds unwell, I thought to myself, and then went on with my practice because what else can you do when you’re flowing next to a germ monster?!
So now I’m on the upswing of a bad cold, sitting with the irony that a public yoga class potentially caused me to miss my yoga training weekend.
However, I have to believe that that striving for connection, community, and movement outside of my house is worth the risk.
Being sick, I’ll admit, I haven’t been the most creative with food.
However, I did come up with a new waffle recipe for you that’s perfect for upcoming “spooky” season.
These Pumpkin Turmeric Waffles made with oats, pumpkin purée, and Navitas Organics Turmeric Powder.
Serve them with melted cacao drizzle for an elevated breakfast!
What You Need to Make Pumpkin Turmeric Waffles
Here’s what you need to make Pumpkin Turmeric Waffles:
- organic gluten free rolled oats
- baking powder
- ground cinnamon
- pumpkin purée
- unsweetened almond milk
- lemon juice
- Navitas Organics Turmeric Powder
- pure maple syrup
- neutral nut or seed butter
- Fresh berries
- Navitas Organics Bittersweet Cacao Wafers
- Navitas Organics Unsweetened Cacao Nibs
That’s it!
How to Make Pumpkin Turmeric Waffles
Add the dry ingredients (oats, baking powder, and cinnamon) to a high speed blender and process until you have a fine flour.
Empty the flour into a large mixing bowl and set it aside.
Next, add the pumpkin, almond milk, lemon juice, turmeric powder, maple syrup, and nut butter to the same blender and process until the mixture is thick and creamy.
Add the blended wet mixture to the dry ingredients in the mixing bowl.
By this time, your waffle maker should be preheated and ready to go.
My waffle maker has a green light that turns on when it’s hot enough!
Spoon ~½ – ⅔ cup batter into your waffle maker and close the lid to spread the batter to fill the mold.
Cook the waffles for 2-5 minutes, depending on your waffle maker and heat settings.
I tested 2-4 minutes and my preferred time on my waffle maker was 3 minutes.
Experiment with your waffle maker to find your desired cook time.
Waffles are done when they are brown on both sides.
You want them to be slightly crispy on the outside and fluffy on the inside.

I used my favorite Navitas Organics to bring these waffles to your plate.
The gorgeous color of these waffles comes from a combination of pumpkin and Navitas Organics Turmeric Powder.
I love that Navitas Organics Turmeric Powder is organically cultivated and ethically sourced.
This gorgeous powder had a peppery earthy flavor while helping reduce inflammation in the body.
I love using turmeric in soups, lattes, rice dishes, oatmeal, and now…in waffles!
I also used Navitas Organics cacao products to top these waffles with a hearty dose of chocolate.
Because, why not?!
I melted Navitas Organics Bittersweet Cacao Wafers to create a chocolate drizzle for serving and Navitas Organics Unsweetened Cacao Nibs for sprinkling!
Navitas Organics cacao products are my favorite because they’re made with real cacao and high in antioxidants and minerals.
I always have a few bags in my pantry to add a serving of superfoods to my meals!
Swaps and Substitutions
While I love pumpkin in this recipe, you can also swap the pumpkin purée out for sweet potato or squash.
Any nut or seed butter will work in this recipe, but I recommend something neutral like almond, cashew, or sunflower seed butter.
If you’re entirely nut-free, try using another plant-based milk instead of almond milk.
I haven’t tested any other flour except oat for this recipe.
Notes on Meal Prep
This recipe makes about 4-6 giant waffles or 6-8 smaller waffles, again, depending on your waffle maker.
If you’re not feeding lots of people breakfast, chances are, you will have leftover waffles.
That’s great, because these waffles can be saved!
Store leftover waffles in an airtight container in the refrigerator for up to one week and freeze them for long-term storage.
Reheat waffles in the microwave in 30 seconds intervals or in the oven at 350°F for ~10 minutes, or until warmed throughout.
How to Serve Pumpkin Turmeric Waffles
Serve these Pumpkin Turmeric Waffles plated topped with optional toppings.
I love mine topped with fresh berries, pure maple syrup, chocolate drizzle, and cacao nibs.
Some other topping ideas are coconut whipped cream, seasonal fruit, or nut butter.
They’re perfect to make for an elevated vegan brunch or breakfast to share.
It’s also notable that they taste excellent with a warm cup of coffee.
However, if you’re making these waffles for yourself, they store well for meal prep for the week ahead.

Ingredients
Dry
- 4 cups organic gluten free rolled oats
- 1 tsp baking powder
- ¼ tsp ground cinnamon
Wet
- 2 cups pumpkin purée
- 2 cups unsweetened almond milk
- 1 TBSP lemon juice
- ¼ tsp Navitas Organics Turmeric Powder
- 3–4 TBSP pure maple syrup
- 2 TBSP neutral nut or seed butter
For serving
- Fresh berries
- Pure maple syrup, for drizzle
- Navitas Organics Bittersweet Cacao Wafers, melted
- Navitas Organics Unsweetened Cacao Nibs
Instructions
- Preheat your waffle maker to the desired setting; I used medium high heat.
- Add the dry ingredients to a high speed blender and process until you have a fine flour. Empty the flour into a large mixing bowl and set aside.
- Next, add the pumpkin purée, almond milk, lemon juice, turmeric powder, maple syrup, and nut butter to the same blender and process until the mixture is thick and creamy.
- Add the blended wet mixture to the dry ingredients in the mixing bowl. Use a spatula to gently combine everything until you have a thick smooth batter without any lumps.
- Next, spoon ~½ – ⅔ cup batter into your waffle maker and close the lid to spread the batter to fill the mold. Cook the waffles for 2-5 minutes, depending on your waffle maker and heat settings. Waffles are done when they are brown on both sides. You want waffles to be slightly crispy on the outside and fluffy on the inside. Continue making waffles until all of the batter is used up. Depending on the size and shape of your waffle maker, this recipe will make anywhere from 4-8 waffles.
- To serve, add waffles to a plate and top with fresh berries, pure maple syrup, drizzled melted cacao wafers, and cacao nibs.
- Store leftover waffles in an airtight container in the refrigerator for up to one week and freeze for long-term storage. Reheat waffles in the microwave in 30 seconds intervals or in the oven at 350°F for ~10 minutes, or until warmed throughout.
