Vegan Applesauce Waffles made with oat flour, coconut milk, and unsweetened apple sauce. Perfect to make for a nutritious breakfast!

Vegan Applesauce Waffles stacked on plate topped with blueberries and maple syrup

In our house, I like every item to have a space, a home, a location where we can always find it.

M can attest to the fact that I’m always tidying, organizing, and putting things away.

Which is why whenever he looks for his empty coffee mug to refill it, it’s already in the dishwasher.

Sorry, M!

Anyway, this is especially important for me in the kitchen during busy photoshoot and recipe testing days.

However, being a food blogger, I tend to amass a certain amount of kitchen gadgets that…have no home.

And living in a condo, let’s be honest, I don’t have the biggest kitchen.

So, these kitchen gadgets usually end up in our storage closet or the attic waiting for me to miss them and eventually unearth them 6 months later.

That is, they don’t get to take up *precious* kitchen real estate.

Yes, I’m sorry to admit that the ice cream maker, the air fryer, and the crock pot all live in varying degrees of dust and rumble when not making recipes.

However!

The waffle maker that I told you guys about recently might be the exception to the rule.

Because I just don’t have it in my heart to put away, so it might just have to live on the kitchen counter forever.

I don’t know how M will feel about it blocking the coffee grinder, but we can find out after I share this new recipe with you.

These Vegan Applesauce Waffles are made with oat flour and coconut milk for a nutritious breakfast.

Unsweetened apple sauce is the secret ingredient to making them brown and crispy!

What You Need to Make Vegan Applesauce Waffles

These Vegan Applesauce Waffles are made with ingredients you might already have in the pantry.

Here’s what you need to make Vegan Applesauce Waffles:

  • coconut milk lite
  • lemon juice
  • oat flour
  • baking powder
  • cinnamon
  • maple syrup
  • cashew butter
  • unsweetened applesauce

That’s it!

How to Make Vegan Applesauce Waffles

The first step to making these applesauce waffles is to create a vegan “buttermilk” with coconut milk and lemon.

Mix the coconut milk and lemon juice together in a small bowl.

Set this aside for about 5 minutes to make the vegan buttermilk.

Next, add in the wet ingredients: maple syrup, cashew butter, and unsweetened apple sauce.

The applesauce is the secret ingredient in this recipe to turn the waffles brown and crispy!

Finally, add in the dry ingredients: oat flour, baking powder, and cinnamon to the same mixing bowl.

Use a spatula or a whisker to gently mix the batter until combined.

The batter should be thick yet pourable.

Turn on and preheat your waffle maker according to which doneness level that you want.

Medium heat tends to work well for this recipe.

Using a ½ cup measuring cup, scoop out some batter and pour/spoon it into the middle of the greased waffle maker.

Press firmly to gently close counting to ten, then heat the waffles for 2-3 minutes, or until the waffle is golden brown and crispy on both sides.

I found that 3 minutes was the golden number for my waffles, but this might be different for your waffle maker!

Remove each waffle and place on a cooling rack to keep them crispy.

Continue with the rest of the batter until it’s all used up.

The recipe should make 5-6 waffles, depending on the size of your waffle maker and how much batter you spoon in.

For me, this recipe makes a pretty solid 6 waffles!

Swaps and Substitutions

I haven’t tried substituting any flours or milks in this recipe.

The oat flour and coconut milk is crucial for the best taste and texture.

While I love the neutral flavor of cashew butter, technically any nut or seed butter will work in its place.

If you don’t have lemon, apple cider vinegar will also work to create your vegan buttermilk.

Unsweetened applesauce is a vital ingredient, too, and testing without it yielded less impressive results!

Make sure to get unsweetened applesauce so the waffles aren’t overly sweet.

Pure maple syrup can be substituted with any other liquid sweetener of your choice.

Notes on Meal Prep

This recipe makes about 4-6 giant waffles or 6-8 smaller waffles, again, depending on your waffle maker.

If you’re not feeding lots of people breakfast, chances are, you will have leftover waffles.

That’s great, because these waffles can be saved!

Store leftover waffles in an airtight container in the refrigerator for up to one week and freeze them for long-term storage.

Reheat waffles in the microwave in 30 seconds intervals or in the oven at 350°F for ~10 minutes, or until warmed throughout.

How to Serve Vegan Applesauce Waffles

Serve these Vegan Applesauce Waffles plated topped with fresh berries and pure maple syrup.

I love mine topped with blueberries and a drizzle of maple syrup.

Some other topping ideas are coconut whipped cream, chocolate drizzle, or nut butter.

They’re perfect to make for an elevated vegan brunch or breakfast to share.

It’s also notable that they taste excellent with a warm cup of coffee.

However, if you’re making these waffles for yourself, they store well for meal prep for the week ahead.

Enjoy!
