This week I had my first in person game night since, pre-COVID 2020.
It was the first time I saw my sister and cousin up close and in person in over a year.
When I opened the front door and saw them standing on my welcome mat, I squealed with delight.
It was special and surreal and weird and wonderful all at once.
Yeah, we didn’t play any *actual* games, but we sure did do a lot of hugging.
Which is fine by me!
Who wants to play board games when you could choose a cuddle puddle?
This Strawberry Banana Bread is made in one bowl is almost as cozy as a cuddle.
It’s made with vegan, gluten-free, and refined-sugar-free with oats, almonds, and plenty of strawberries!
Strawberry Bread vs. Muffins
Strawberry bread always makes me nostalgic because we ate in in the summertime growing up.
I talk more about my mom’s amazing strawberry bread in my Strawberry Hemp Heart Muffins post.
So I’m back to boast my own strawberry bread recipe that’s vegan, gluten-free, oil-free, and naturally sweetened.
This recipe is unique because it’s one part strawberry bread and one part banana bread!
Both are amazing, separate, but what if we put them together, I mused.
The best of both worlds, if you ask me!

What You Need to Make Strawberry Banana Bread
Here’s what you need:
- flax eggs
- ripe bananas
- almond butter
- Eden Foods Organic Strawberry Applesauce
- pure maple syrup
- gluten-free old-fashioned rolled oats
- oat flour
- superfine almond flour
- baking powder
- fresh strawberries, diced and tossed in oat flour, + more for topping
- pecans
That’s it!
How to Start Strawberry Banana Bread
This Strawberry Banana Bread is made easily with one bowl and a bread pan!
Start by preheating the oven to 350°F and lining a bread pan with parchment paper.
Combine the ground flaxseed and filtered water in a large bowl and let them sit to gel.
Next, add in the mashed bananas, strawberry applesauce, almond butter, and maple syrup and stir everything to combine.
Eden Foods Organic Applesauce
In this recipe, I used Eden Foods Organic Strawberry Applesauce in place of oil!
This applesauce is flavorful and sweet without any added sugars.
In each jar is a beautiful blend of Michigan organic apple varieties – cored, peeled, cooked, and blended with puréed organic strawberries from northern Michigan family organic berry patches.
It’s lightly pink with a distinct strawberry flavor that hugs the apples with each bite.
Try spooning it in as delicious as a snack, dessert, or ingredient for baking, like this one!
In this recipe, it adds mild sweetness and moisture, replacing the need for oil and unnecessary sugars!
How to Make Strawberry Banana Bread
Next, add in the oats and sift in the oat flour and baking powder and mix everything until no clumps remain.
Finally, fold in the strawberries and pecans and stir it up with a spoon to distribute them evenly throughout the batter.
Pour the bread batter into the parchment paper-lined bread pan and smooth off the top with a spatula.
You can add optional additional diced strawberries on top, here, too!
Tips & Tricks
Bake the bread for 50-60 minutes, or until the top is golden brown, and a toothpick comes out cleanly or with minimal crumbs.
It should also smell amazing– banana-y, and berrylicious, like it is!
Remove the bread from the oven and let it cool it for about 30 minutes before slicing.
The bread will continue to set up and get firmer as it cools!
Because this bread is fruit-forward, so it’s normal for it to be a bit gooey when you sink your teeth into a strawberry or banana chunk.
Store the Strawberry Banana Bread in the fridge for 5-7 days and freeze it for long term storage.

Ingredients
- 2 flax eggs (2 TBSP ground flaxseed + 6 TBSP filtered water)
- 2 – 3 ripe bananas, mashed (~1 heaping cup)
- 1/4 cup almond butter
- 1/4 cup Eden Foods Organic Strawberry Applesauce
- ~1/4 cup pure maple syrup
- 1 1/4 cups gluten-free old-fashioned rolled oats
- ½ cup oat flour
- ¾ cup superfine almond flour
- 1 tsp baking powder
- 1 heaping cup fresh strawberries, diced and tossed in oat flour, + more for topping
- ½ cup pecans + more for toppings
Instructions
- Preheat the oven to 350°F and line a bread pan with parchment paper.
- In a large bowl combine the ground flaxseed and filtered water. Stir and set aside for 5-10 minutes to allow the mixture to gel.
- Add in the mashed bananas, almond butter, and maple syrup and stir to combine.
- Add in the oats and sift in the oat flour and baking powder and mix well until no clumps remain.
- Fold in the strawberries and pecans.
- Pour the batter into the parchment paper-lined bread pan and smoothing the top off with a spatula. Add optional additional strawberries on top.
- Bake for 50-60 minutes, or until the top is golden brown, and a toothpick comes out clean. Remove the bread from the oven and cool for 30 minutes before slicing.
- Store the Strawberry Banana Bread in an airtight container in the refrigerator for 5-7 days and freeze for long term storage.
