The snowstorm on the east coast left the world quiet and blinding bright white outside. 

However, inside, it’s been a bit of chaos as M and I try to keep Flora busy with puzzles and inside activities.

It’s been unseasonably cold throughout much of the U.S. the past few weeks, so I’ve mostly been hibernating indoors with deep gratitude for the heat. 

The days feel long and heavy lately and yet somehow January is slipping by oh so quickly with that strange mix of endurance and fleeting time.

This “snowed in” cabin fever feeling has given me eerie flashbacks to the pandemic, when everyone was stuck at home and practicing yoga online. 

I take comfort in knowing that the darkest days are behind us and we get a little more sunlight each day.

This January has been all about finding comfort in small, grounding routines that are reproducible and good for you. 

One of my favorite little acts of self-care lately has been making this Sweet & Spicy SunButter Spinach Wrap.

It’s made with creamy SunButter, fresh spinach, shredded carrots, and a hint of sriracha all wrapped up in a tortilla.

It’s simple, nourishing, and a little spark of warmth and heat on a cold winter day.

  • No Sugar Added SunButter

Description

Sweet and spicy SunButter spinach wrap with cranberries and sriracha. An easy vegan lunch or snack made with simple pantry ingredients.


Ingredients

  • 1 large tortilla (gluten-free as needed)
  • 2–3 TBSP No Sugar Added SunButter
  • ½–1 tsp sriracha, to taste
  • 1 packed cup fresh spinach
  • ¼ cup shredded carrots
  • 2–3 tablespoons dried cranberries

Instructions

  1. Warm the tortilla slightly until pliable.
  2. Spread the SunButter evenly over the tortilla.
  3. Drizzle the sriracha over the SunButter.
  4. Layer the spinach, shredded carrots, and dried cranberries down the center.
  5. Season lightly with salt, if desired.
  6. Roll the wrap tightly and slice in half before serving.

    I love a good wrap, and a Thaiesque nutty sauce. But the idea of wrapping sun butter makes me think about wrapping the sun. What’s the closest thing we have to wrapping the sun? Eclipses.

    In conclusion please create a thematically appropriate snack called “eclipse butter.”
