So here’s the state of affairs:

Yesterday I played a state guessing game on the phone with a friend.

I was presented with a map of the United States completed with bold black state borders.

When the game populates a state name, I had to accurately select the corresponding state by clicking on the correctly shaped territory.

Well, let me tell you friends, I was never good at geography.

After accidentally clicking New Jersey about 4 times instead of other north-eastern states, I knew I needed to brush up.

I did get 77% accuracy, which I’m going to take as a win.

If quarantine is making your world feel small, grab a map and explore a little.

Or, we could explore in the kitchen.

If you don’t feel like baking, how about an easy no bake dessert that’s packed with plant-based protein, fiber, and complex carbs?

Today I made this Black Bean Mousse that’s vegan, gluten-free, and naturally sweetened with pure maple syrup.

What You Need to Make Black Bean Mousse

Here’s what you need:

  • Farmer Direct Organic Black Beans
  • almond milk
  • raw cashews
  • coconut butter
  • unsweetened cocoa powder
  • pure maple syrup
  • Himalayan sea salt
  • cinnamon

That’s it!

How to Make Black Bean Mousse

Making mousse from cooked black beans couldn’t be easier.

Simply add all of the ingredients to a high speed blender or food processor and blend until the mixture is well combined and creamy.

Scrape down the sides as needed with a spatula to recombine.

The mixture is done when it’s thick and creamy without any trace of “bean-y” texture.

Cooking Black Beans From Scratch

Let’s talk about cooked black beans.

Have you tried making them yourself?

Making black beans yourself is wonderful because you can control the tenderness, the quality and quantity, and the saltiness!

I love using Farmer Direct Organic Black Beans in this recipe because their products are grown without the use of harmful pesticides, herbicides, and GMOs.

How to Serve Black Bean Mousse

Enjoy this Black Bean Mousse as a sensibly sweet breakfast, snack, or dessert.

Try whipping it up in advance to store in the fridge for easy snacking throughout the week when your sweet tooth strikes.

It’s perfectly acceptable for a nutritious snack, delectable dessert, or even a quick grab and go breakfast cup.

I topped mine with fresh blueberries, but any fruit or toppings work here.

It would also be fantastic with a a bit of granola or fresh fruit!

If you don’t have black beans on hand, try this recipe with kidney beans or red beans for a similar flavor and texture.

Description

Protein packed mousse made with black beans, cashews, and cacao powder sweetened with maple syrup. Perfect for a nutritious snack or sensible dessert!


Ingredients

  • 2 cups cooked Farmer Direct Organic Black Beans
  • 1/2 cup almond milk
  • 3 TBSP raw cashews
  • 2 TBSP coconut butter
  • 3–4 TBSP unsweetened cocoa powder
  • 1/4 cup pure maple syrup
  • pinch of Himalayan sea salt
  • dash of cinnamon

Instructions

  1. Cook the black beans according to package instruction. Cover and refrigerate until ready for use.
  2. Drain the beans well and measure out 2 cups for this recipe. Reserve the other beans for another use. Add beans to a high speed blender or food processor with the remaining ingredients and blend until smooth.
  3. Spoon into glass jars and serve with fresh fruit of choice.
  4. Store leftovers in the fridge for up to one week.

    Nice recipe! So grateful to be the first review! I was craving a healthy dessert and I have been trying to lose weight on a plant-based diet. I had the thought, “I bet someone has made a mousse with beans! So I did a search for black bean mousse and sure enough yours popped up! Thanks for being ingenious! I didn’t want oil or butter in mine so I left the coconut butter out, and added one more tsp of maple syrup. It worked out perfectly! So tasty and hit the spot. I put the rest in the freezer for when I have another craving. 🙂 Thank you!

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.
