I heard a quote recently that compared humans to nature that really struck me.

The gist of it was, that if nature has periods of rest that allows for an abundant, blossoming spring, why do we believe we should always maintain the same pace? 

Maybe it’s because it’s winter and I can see the houses across the woods from me through stick-man-like trees, but it made me stop and think.

Honestly, I feel behind on the race that is 2024.

But, if this year is a race, the only person I’m competing against is myself. 

And even then, why should I expect myself to always operate on one level of productivity? 

Let’s chew on this for the rest of the month:

Maybe beauty comes out of rest and relaxation. 

I have been inspired to get back to making plant-based foods after taking some time away. 

We also just watched “You Are What You Eat” on Netflix, which just inspired my love of sharing vegan recipes that much more. 

I’m writing down lots of new recipes to share, focusing on easy meal prep recipes packed with protein.

Did you watch the Super Bowl a few weeks ago?

M and I had a little watch party at home complete with beer, vegan burgers, and lots of, “What just happened?”

Neither of us are the biggest sports fans, and even though football has been explained to me approximately 32356 times, it still hasn’t sunk in. 

But the commercials were great and the food I made was even better. 

It was Super Bowl weekend when I dug out the air fryer and tested some new savory snacks.

It’s jarring when things that used to feel easy start to feel hard. 

Maybe it’s physical challenges, maybe it’s maintaining relationships, maybe it’s your routine. 

If I’m being honest, a lot of things feel hard for me personally, right now.

Every morning I snooze my alarm, wishing for *just 5 more minutes* of sleep. 

I struggle on the indoor climbing wall doing climbs that normally would be within my grade. 

Meeting up with friends feels like an epic adventure, one that I would rather embark on in pajamas, please. 

I’m ready for warmer weather, longer days, and lightness.

Do you ever feel like making dinner is the hardest thing you do all day? 

Sometimes it feels like that for me, and friends, I create food content for a living. 

Really I think the “hard factor” comes from the decision fatigue of food options as opposed to the actual cook time, you know?

After a long day, the last thing you want to is learn a new recipe, test new ingredients, or dirty every pot you own. 

So lately I’ve been focusing on getting back to classic recipes that allow me to think less about food, if that makes sense.

The shorter the ingredient list, the better! 

I’ve been keeping a 1-pot pasta from you for several years now, and I think it’s the perfect opportunity to share.

When I was little I used to tell myself that someday I was going to find an amazing person who was going to love me like a rom-com script. 

“Someday, someone is going to love you SO MUCH,” I chanted like a mantra while staring my brown eyes down in the bathroom mirror. 

I thought that achieving that kind of adoration from another human being meant that I had achieved something great, that I was something good, that I was enough. 

And, actually, I’ve been fortunate enough to love and be loved by some incredible people in my life so far. 

Partners, best friends, and family. 

So there has been no shortage of love and affection in my life and I’m so grateful for the opportunities to learn and grow from each relationship. 

But what I realized recently is that maybe that singular person that I promised myself when I was young isn’t going to come. 

Because maybe that person is already with me. 

I love you, M, but the person that I’m talking about is…me!

It’s both empowering and a little embarrassing to realize that maybe she’s been there all along, cheering, comforting, and constant. 

This Valentine’s Day, take some time to celebrate you!

Instead of looking for external validation to feel good, great, and enough, let’s create that dialogue internally. 

I don’t know about you, but treating myself to something chocolate and sweet is one of my favorite ways to say to myself, “I freaking love chocolate (and you)”.

Is anyone else spring dreaming right about now?! 

While I do my best to stay in the moment and appreciate the beauty of every season, I’d be lying if I said I wasn’t excited for warmer weather. 

My first ever cake was a carrot cake, AKA the cake my parents got me that my grubby one-year-old hands tore apart orange piece by piece. 

So carrot cake reminds me of my birthday, spring, and the promise of warmer days.

2024 had been testing me already, friends. 

As if getting sick last week wasn’t enough of an obstacle, the universe decided that my oven needed to go this week, too. 

Yes, this week we said RIP to my oven, that’s seen more F&V recipes that I can count come out of its belly. 

I’m grateful that we have a new one ordered and on the way with a delivery scheduled by the weekend. 

But for the interim, I’m oven-less in Maryland. 

Originally I was going to share a baked oatmeal recipe with you, but I’m kind of glad that the oven situation twisted my arm to make my oats on the stovetop. 

Because its lack gave birth to my gain.

I’m baaaaaaack!

Hi friends, I’m finally home and super excited to get back to recipe creation.

On the flight home, I kept myself busy making a giant handwritten list (I’m old school) of all of the recipes I want to make for me and for you this year.

And while I’m itching to get the creative juices flowing, I’m also equally interested in getting back to the basics.

That means making simple meals that focus on protein and greens while tasting delicious.

These two things were tricky for me living a vegan lifestyle on the go in Iceland.

How’s your new year treating you so far? 

Today I’m traveling home from Iceland after a month-long holiday in Europe!

While I had a beautiful trip, I’m *very* excited to get back to my kitchen to make some delicious recipes. 

I never have trouble finding fresh vegetables during my travels, but finding a vegan source of protein is usually the sticking point. 

Usually I lean on easy to source staples (depending on your location) like quinoa, beans, nuts, and seeds. 

In the new year, I’m focusing on amping up my plant-based protein to meet my protein goals. 

I’m excited to start a a new strength training program when I return, so I’m focusing on fueling my body for success!

One of the ways I usually incorporate more protein is with the use of vegan protein powder.

There was a time when I thought that I would perish if I didn’t have my daily protein shake. 

While I don’t feel that way anymore (there is plenty of protein in plants!), it is a nice way to supplement your daily meals.

I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

I love topping my soup with cilantro, @edenfoods Tamari Roasted Almonds, and @edenfoods Hot Pepper Sesame Oil. 

@edenfoods Tamari Roasted Almonds are infrared roasted organic almonds with complimentary organic tamari soy sauce. They’re a delicious snack packed with protein and fiber. You can enjoy them on their own, added to trail mix, on salads and bowls, or…on soup!
