Story time.

Dan came up home from work while I was photographing pretty pudding cups and before he could even change I dropped my camera, picked up the closest pudding cup, and shoved it in his face aggressively asking, “Would you eat this???”

“Yeah,” he said, and I quote, “Looks like a dessert a restaurant would serve.”

Well, shucks, thanks, babe.

I smiled gleefully, because I’d definitely want to dine at the restaurant that serves Chocolate Peanut Butter Pudding Cups for dessert, wouldn’t you?

They only require 5 ingredients and 10 minutes for the perfect protein packed pudding that’s oil free, gluten free, and naturally sweetened!

It’s not exactly a secret that I love my bean-based desserts.

I just really like my desserts to pack a whole foods protein punch instead of being void of all nutritional value.

Legumes have this magical way of melting into recipes to take on sweet flavors while leaving all of their “beaniness” business behind.

Of course, when Dan found at that these pudding cups were bean-based, he wasn’t crazy about it, but that’s why you’ve got to tell people after they’re drooling, OK?

I got my hair highlighted yesterday for the first time in a decade.

The last time was on a whim in college, and I’ll never forget watching in horror as the stylist descended on my capped head with sharp hooks that left my scalp hurting for days.

Oh, and the highlights were more like skunk-lights.

But this highlight left me feeling pampered and sunkissed– a much needed change.

Hi guys!

I didn’t go grocery shopping over the weekend like I always do, and it honestly surprised me how much lighter I felt when I woke up yesterday with hardly anything in the fridge.

Yes, bare fridges make me happy, in the same sort of the way a blank page makes me happy.

Instead of being dangerously full of fresh produce, it’s packed with potential.

Can you sense it?

The potential for perfectly stacked jars of Creamy Cauliflower Dip, y’all.

The 6-ingredient vegan, paleo, and oil-free veg-centric dip you need in your fridge and life ASAP.

In my bare bones fridge, I was able to finally see the head of cauliflower hanging out in the back corner, thinking it was a goner.

So here’s the thing.

I always buy a head of cauliflower at the store just to have on hand, much like I do most vegetables and produce that I tend to use on a regular basis.

I buy them on autopilot because I always do, more out of fear of not having them than excitement at having them.

But that empty fridge blissful feeling made me realize that I need to be a bit more mindful of what I’m bringing into the house, and make sure everything has a purpose.

So I gave that cauliflower a purpose!

You know those days in the kitchen when you sort of throw things in a blender with a blasé attitude?

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
