Hi friends!

Do you have a Cava near you?

I discovered this Mediterranean fast-food-ish type place a little over a year ago after meeting a friend there for lunch.

We were there during the work-week rush so I ordered in a hurry, fearing the wrath of the guys in suits behind me on business lunch hour.

I ended up getting something with harissa and veggies and it was gloriously good.

Recently and separately, Dan discovered it too, so when he told me, “There’s this place I think you would like…it has your type of food…”

I totally didn’t say I found it first…(HA).

But I did find this Moroccan Sheet Pan Meal first…#braggingrights.

This easy one-pan meal has a great combination of hot and cool flavors that keeps each bite interesting.

Spicy chili pepper and cayenne balanced out by creamy tahini and cooling mint.

Is it hot?

Is it cold?

It’s just YUM.

It definitely keeps the Cava cravings at bay, as the closest one to me is at least 30 minutes away!

How was your weekend?

Mine was pretty quiet in the best possible way.

We took the time to tackle a little spring-cleaning and rearrange areas of the condo that weren’t really working.

Sometimes it feels like the kindest thing I can do for myself is to tackle headfirst those big tasks that have been lazing around my TO-DO list for months, you know?

Home ownership, while being comforting and fulfilling, is also a whole lot of maintenance.

I never thought I’d miss that friendly repair man who came to fix everything in our old apartment whenever I wanted for FREE.

Last week our microwave filter needed to be replaced.

Last weekend I decided at about 7 PM on a Saturday that our pantry situation wasn’t working for me.

I poured a glass of red, cleared off some kitchen counter space, and took out every last item I had heaped onto the buckling woven shelves.

It was one of those situations where I had to make an alarming mess before achieving a fully organized outcome.

A few hours later (after counting that I have a whopping 25 + bags of granola– granola anyone???) I had a still-packed but mostly organized pantry.

(Dan said it looked exactly the same, but I pretended he didn’t say that.)

I’ve been in “stock up” mode since we moved into our condo because I love to keep the pantry filled with all of my favorites so when I’m cooking, I’ll never run out!

The problem with this, though, is if you keep stocking up without taking STOCK of what you have, you might end up with 25 bags of granola, like me.

One of my goals for 2018 is to get creative with foods from my cabinet, so I’m sharing a recipe like that today!

It’s Thursday and this post is a good one, friends!

I’m sharing a recipe that has been my favorite go-to lunch ensemble for the new year.

I first threw it together in a fit of post Hot Yoga Flow hanger on New Year’s Day.

One of those give me everything in the fridge and I don’t care what it looks like moments.

Luckily, it looked pretty good and tasted even better.

Recently, I keep seeing the cutest containers of coconut rolled dates at my local Mom’s Organic Market.

Multiple times now the container has almost made it into my cart, until I quickly chastise myself because…I could make that.

This weekend I’m going to Christmas Cookie Party with girlfriends!

I’m pretty excited about the whole thing.

Dan and I were lucky to spend time with tons of family, some that we haven’t seen in years.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
