Remember that time I made Spiced Cashew Chickpea Cookies and ate them all the time?

They’re my absolute favorite snack cookie because they’re so moist, low in sugar, packed with protein, and totally portable!

Well, after eating tons of those perfect little morsels on the go, there was one fateful day where I decided to sit down and spread a bit of jelly on top.

This made the cookies even more moist and delicious, so I’ve been dunking them in fruit spreads ever since.

I set out to create PB & Jam Thumbprint cookies to share my news finds, but found I had half of a steamed Japanese yam in the fridge,

Who else is loving citrus this spring?

I was beyond excited when I started seeing the dark rind of blood oranges appear in the citrus barrels at the grocery store.  I love the addition of blood orange to my meals for both flavor and coloring, so why not add it to dessert, too?

I used to have a blog called The Vegan Muffin Woman where I only created and shared muffins and cupcake photos and recipes.

Basically anything made in a muffin tin was fair game.

Sometimes when I make muffins now I remember TVMW and I have to laugh.

I remember the struggle to get excited about the same shape every post.

If you’ve been hanging with me for a while, you know that muffins hold a special place in my kitchen.

(Read about me  for my back story on my obsessions with all things muffin!)

Needless to say, I’m really excited to share these Double Chocolate Zucchini Muffins!

They’re kind of the superhero of muffins because they have special powers.

They take ordinary greens and transform them into mouth watering bites of chocolate.

Pretty cool, right?

I’m going through a serious “hidden greens” phase right now and these muffins are my latest experiment in their disappearing act.

They not only have one, but TWO greens hiding under their oatmeal exterior.

In the last phases of mixing, I remembered some extra spinach in the fridge and on impulse threw it in the blender with the zucchini to grate.

Now imagine carrot cake for breakfast. Yes?

Picture those two spectacular scenes smushed together plus all of the health benefits of eating a bowl of oatmeal and then some.

These Toasted Quinoa Carrot Cake Breakfast Cookies make all of those imaginings a reality next to your cup of coffee.

Fun fact: My first ever birthday cake was a carrot cake.

I remember seeing it in pictures, a yellow cake with the face of Big Bird smiling up at us under frosted yellow feathers.

Maybe just despite this, at an early age, I decided that I didn’t like carrot cake.

I cringed whenever someone selected it for their birthday.

It was too carroty, too nutty, too something.

Too much carrot and not enough cake.

I had a thing about texture in foods as a kid.

I didn’t do orange juice with pulp and I certainly didn’t do nuts in my breakfast cookies.

Apparently my younger self didn’t appreciate the beauty of sneaking vegetables in desserts (and everything).

My how times have changed, because I absolutely love the texture of these cookies.

They’ve got a little bit of everything.

They’re packed with creamy almond butter, nutty flax seed, hearty oatmeal, sweet raisins, crunchy walnuts, shredded carrots, and even a bit of banana and applesauce.

I didn’t want you to miss out on anything first thing in the morning, so I packed in all of the goods.

They’re full of fiber, protein, complex carbs, and healthy fats that will give you tons of energy for the day ahead!

Banana Chia Chocolate Chip Muffins

We go through a lot of bananas a week.

Like a lot.

I’m talking three bunches of bananas at the check out line with zero shame a lot.

Usually I get 1 really green bunch, 1 slightly underripe bunch, and one perfectly ripe bunch for eating right away.

This way the bananas ripen throughout the week and we use them in shakes and stuff as they come into their prime.

I periodically check throughout the week, freezing any super bruised and brown bananas for smoothies and leaving their better looking buddies on the counter.

Sometimes during a particularly hectic week I forget to do a freezing sweep and I’m stuck with a bunch of ugly bananas on Saturday/Sunday.

That’s when I take a hint from the universe that it’s time to make some Banana Chia Chocolate Chip Muffins.

I’ve been talking for a while about recreating a family recipe for Oatmeal Banana Chocolate Chip muffins that my mom used to make when I was a kid.

I even highlight these muffins in my About Me section, they’re that good.

My mom timed it perfectly so they’d emerge from the oven right as my sister and I walked into the door after hopping off the school bus.

I’d sit at the kitchen table, talking about homework and school cliques between mouthfuls of banana goodness with chocolate covered fingertips.

Let’s recreate that scene in adult life, shall we?

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
