It’s me, the vegan muffin woman, popping in to share another delicious muffin recipe.

The groundhog saw his shadow this past week, so, does that mean 6 more weeks of winter recipes?

I feel like I bake even more after Christmas than I do during the holiday season, just to fill these cold dark months with something warm and cozy.

It snowed here on Sunday so, naturally, I stayed in and experimented with beets and chocolate.

I can’t believe we’re almost half way through this first month of the year.

Hi, friends!

How has the new year been for you?

Have you been busy getting back into the swing of things after the holidays?

I’m actively reaching for those New Years intentions while trying to appreciate the steady “sameness” that comes with the post-holiday rush.

Did I tell you that I gave up caffeine for the first week of January?

To be fair, it did start rather unintentionally.

You know how your palette changes drastically when your sick?

Well, I just couldn’t fathom drinking inky black coffee in the mornings like usual so I went without.

Then, with the New Year approaching, I decided to continue the trend, just to see how it affected me.

While I did feel a bit calmer in the mornings, I was suffering from some pretty low energy levels during the day.

Like fighting the urge to crawl back to bed at 10 AM energy depletion.

Today I added back in a bit of Matcha green tea, and friends, I feel like a whole new LAUREN.

That, paired with a new shorter haircut, has got me feeling like 2018 is going to be pretty amazing.

And these bliss balls, of course, which are super energizing!

We’re one week in and I don’t know about you, but 2018 has got me craving some bliss balls!

I figured we could all use a quick nutritious snack to prep in advance to take on the day, this week, and the rest of the year.

Well hello there and HAPPY NEW YEAR!

How was your transition from 2017 to 2018?

Dan and I visited a new winery in the area and loved it so much that we decided to join and become members. New year, new wine?

We were home well before midnight and curled up on the couch with Harper to enjoy the last hours of the year.

I woke up on on New Years Day determined to try some new things and put my intentions to the test.

In life and in the kitchen.

One of my goals for 2018 is to incorporate more savory snacks and breakfasts.

Recently, I keep seeing the cutest containers of coconut rolled dates at my local Mom’s Organic Market.

Multiple times now the container has almost made it into my cart, until I quickly chastise myself because…I could make that.

So finally I did.

Well hello!

It dawned on me this morning that this time next week we’ll be at my parents rockin’ around the Christmas tree.

I’m listening to Christmas music a little obsessively at this point (“It’s Beginning to Look Like Christmas” is currently on as I type this post…) so I can feel like I got the most out of the season.

Keeping the oven in a constant rotation of sweets and treats makes the holiday feel deliciously imminent.

The countdown to Christmas has begun and this girl is officially WAY behind on her Christmas shopping.

This past weekend, Dan and I took Harper to a Christmas tree farm and cut down a beautifully symmetric six foot Blue Spruce!

It’s been our tradition to cut one down for about 5 years now and I hope it’s one we’ll continue as we get older.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
