Hi friends!

Amidst all of the holiday sides and festive cookies and cakes, I’d like to share with you a cozy dinner to break up the sameness. 

I think it’s important to have a few easy cozy dishes on repeat during this season when things can be so joyous yet so hectic. 

This recipe was born on a Friday evening; the best time to get a party started. 

Usually on Friday nights we have either A. pizza, or B. something new and elevated that we make together. 

This recipe is obviously not pizza, so it fell in the later category of Friday night dinners. 

We didn’t have a lot to work with that evening, but we managed to turn that ancient package of Ramen from the cupboard into something amazing.

These SunButter Ramen Noodle Bowls are made with rice noodles and stir-fried vegetables in a delicious SunButter sauce.

Serve them with optional tofu and enjoy this meal any time you’re craving noodles.

Friends, my house is officially decorated for the holidays. 

Now, I’ve always been a “let’s wait until after Thanksgiving and then everything is fair game” kind of a Christmas enthusiast. 

However, this year it feels like I need to get a head start. 

It was a very rational decision I made based on the fact that we leave for Germany in a month paired with the very emotional allure of the Christmas box.

After much debate, I decided to put out all of my Christmas decorations this week!

I’ve got to say, I have zero regrets about it, as I write this post in the multi-color glow of the ceramic Christmas tree my grandma made for me. 

And it’s fitting, really, because I have the ultimate holiday recipe for you today. 

This isn’t your grandma’s fruit cake, this is Vegan Holiday Fruit Cake!

If I lived somewhere that didn’t express all four seasons, I would miss the changes.

Mostly, I would miss fall. 

The colors on the leaves right now are absolutely stunning in Maryland! 

It’s funny, M was telling me about this particularly gorgeous tree in our neighborhood and I immediately knew exactly which one he was talking about. 

I shared the same towering sycamore tree on Instagram the day before. 

M remarked that the shades of red, orange, and yellow are so intense that they almost look unreal. 

It’s true, it almost looks copied and pasted into our neighborhood scene. 

In addition to brisk walks and photographing trees, I’m here to present you with a new cozy breakfast. 

It’s the perfect breakfast for the days you want something cozy and warm but don’t want oatmeal.

It’s soup season and I’m super excited to share my first soup of the season with you. 

When the weather starts getting chilly, I love to create a big soup on Sunday that ensures leftovers for the week ahead. 

It’s the perfect way to use old vegetables and make them new in a soothing broth-based bath. 

Call it meal prep, call it call-out-the-fridge, call it leftovers, call it whatever you want.

This October marks a year since I ran my first marathon! 

It’s hard to believe that a year ago I ran 26 miles because this year, well, I haven’t run much at all. 

This week I decided to commemorate all of the work I put in last year running a 5K around my neighborhood. 

It was humbling reminder of how goals change over time, and that that’s OK. 

Last year I trained to run marathon, and this year I’m focused on being the strongest version of me. 

I had forgotten how much I love running; propelling myself over concrete, grass, and asphalt while my worries take the backseat.

I started the month of September stocked with pumpkin, apple, and sweet potato; ready to make all of the fall things. 

So, while the temperatures are blazing hot outside, it feels and smells like fall inside my kitchen. 

I’m also getting back into a routine after being away last weekend celebrating my three year anniversary with M. 

We explored Colonial Williamsburg and Historic Jamestown and whole-heartedly ate our way through vegan food in Toana, Virginia. 

I still can’t believe it’s been three years since we matched on Bumble and I opened my heart to someone new. 

So, September is special. 

In September I also always experience a renewed joy for meal prep, so today’s recipe is something you can easily prepare in advance. 

These Apple Pie Overnight Oats are the quick fall breakfast you need for the changing seasons.

They’re made in advance with sautéed apples and a big spoonful of walnut butter. 

The best part is, you can enjoy them chilled or warm them up, depending on your mood and your local weather!

Did I tell you that we have hummingbirds?! 

We first spotted them on the nasturtiums that bloomed in late spring on our deck patio. 

“Hummingbird!!!” M shouted excitedly, pointing at the rapidly beating wings that darted away. 

My excitement can’t remotely compare to M’s in spotting one, so he went on to explain that there aren’t any hummingbirds in German, so seeing them here feels like magic.

They are quirky little helicopters, aren’t they?! 

Since then, we installed a hummingbird feeder that is now the social hotspot for the winged of the neighborhood. 

Naturally we started to name them, because they’re gushing with personality.

There’s Holga, she’s the queen bee who gives all of the others sass and is extremely territorial. 

Then there’s Hans, the elusive ruby-throated male that makes a quick appearance every now and then (otherwise, it seems that the feeder is women-owned).

Holly is tinier and petite and we recognize her because she always sits down to feed. 

There’s also an alleged Heidi and Heather, but they’re a little harder to tell apart.

Yes, they’re all names that start with the letter ‘H’! 

Anyways, it’s bringing us a lot of joy during this season to watch them while we eat our morning breakfast. 

When I tested these Protein Protein Oat Blender Pancakes this morning, they zipped and zoomed in and out of the window frame.

Apparently, hummingbirds will eat a lot in the next month as they prepare for their big migration to South America.

What if I told you that Christmas is a shocking four months away? 

That’s right, friends, we have only FOUR months to make our lists, check them twice, and then deck the halls. 

This year is flying by at a pace I can’t quite comprehend. 

But for now, let’s be present, let’s be in the moment, and let’s enjoy the end of summer. 

Labor Day always feels like a bittersweet ending, doesn’t it? 

It’s hard to imagine that other countries don’t have such a pronounced “end to summer”. 

Here in the U.S., I think most of us would agree that it feels like an abrupt end to to summer days.

It’s the last chance to jump in the public pool, the last day to fashionably wear white (No one listens to that, do they?), and the last weekend of summer break for kids. 

That’s a whole lot of lasts. 

But we should make those lasts, last, ya know? 

So I collected a bunch of my favorite recipes that I think you should eat before summer is over as a part of your Labor Day spread. 

Historically, my family did a classic American spread of burgers, chips, watermelon, and pie.

So, are you on Threads yet?

I finally joined last week just to see what all of the fuss was about. 

If you’re curious, it feels reminiscent of Twitter with a mix of circa ~2013 Instagram thrown in. 

It’s funny that I first heard about this trending new social media network via M, who really doesn’t use social media at all. 

I wanted to hop on to see if it might be a nice way to connect with the F&V community in a more conversational way. 

As social media platforms pop up and change, I’m super grateful that I have a forever home in this website. 

And all of you, friends, are my forever family! 

And since we’re family, we should really sit down this summer to a meal together, don’t you think?

Last weekend M and I went beachfront camping with two of our friends and their baby on the Nanticoke River in Maryland. 

Of all the camping trips we’ve done together, I think this one was the hardest. 

So, camping is always innately hard, right? 

For me, that’s part of the charm of it. 

It strips down your life, making all of those small mundane tasks you do without thinking more difficult, forcing you into the present by problem-solving. 

Need to do the dishes? You have to walk 5 minutes to the closest water station, lugging dirty pots and pans and detergent with you. 

Want to make coffee? You have to light the camp cooktop and boil some water in the camping kettle. 

Fancy a shower? Well, you may or may not be in luck, depending on how back country you are. 

Usually, by infusing my life with a little discomfort, it reminds me of the little joys in life. 

So I was prepared to do without and be on the water and in the summer sun, but I wasn’t prepared for the extreme heat, the thunderstorms, and the exposed campsite (without any shade!) 

We made it through one sweaty, sleepless night, narrowly dodging some severe weather. 

I swear I didn’t sleep at all, tossing and turning in my toasty sleeping bag, opening an eye every thirty minutes to check for the first signs of daylight; nature’s way of signaling an appropriate time to emerge from my tent. 

When the weather threatened for more storms the next evening with even higher temps, we did what any nature-loving experienced campers would do. 

We bailed. 

Honestly, if it wasn’t for the tarp our friends brought to create some man-made shade and these Blueberry Protein Overnight Oats for breakfast, we might have bailed even sooner.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
