Strawberry Cheesecake Overnight Oats

By Flora & Vino 2 Comments

Strawberry cheesecake overnight oats with raw cashews, rolled oats, and strawberries. Perfect to make in advance for a healthy breakfast!

Strawberry Cheesecake Overnight Oats served in mason jars on wooden board with spoons topped with sliced strawberry and raw cashews

This past weekend my hiking group completed our first hike of 2021!

We eased into the year of hikes exploring 5 miles of trails on Sugarloaf Mountain, in Dickerson, Maryland.

The morning of the hike, I fueled with one of my pre-hiking staples; overnight oats.

I *love* eating oats before being active because they’re packed with protein, fiber, and complex carbs.

They’re satiating, quick, nourishing, and did I mention delicious?

I had the idea early this year to make a vegan “cheesecake” overnight oats variation, and, well, here it is!

These Strawberry Cheesecake Overnight Oats are made with raw cashews, rolled oats, and strawberries.

They’re easy to mix up in advance for a healthy meal prep breakfast that will have you excited for breakfast and energized for whatever happens afterwards.

Blueberry Buckwheat Pancakes stacked on a plate with blueberries and maple syrup pouring on top by Flora & Vino

Do you have pancake nostalgia from childhood?

Because I do.

My mom used to make the most amazing Blueberry Buckwheat Pancakes on weekend mornings.

I asked my mom recently how she made her buckwheat pancakes and discovered that her classic recipe came from a mix.

So, I set out to recreate her pancakes from scratch to be completely vegan, gluten-free, and refined-sugar-free.

These Vegan Blueberry Buckwheat Pancakes are the best pancakes to wake up to!

Make a stack for a weekend breakfast packed with protein and fiber!

Curried Cauliflower Kale Salad with tart cherries, cashews, chickpeas, and avocado in a yogurt tahini dressing.  Perfect for winter lunches!

Curried Cauliflower Kale Salad served on a plate drizzled with Yogurt Tahini surrounded by cashews, spring onion, and dried cranberries by Flora & Vino

Let’s do a 2023 check in so far…how has it been?

It’s been so very full on my end– and all good things.

By morning I’m working through an inversion practice, using blocks and straps and prep to help me get upside down.

My goal is to be able to successfully hold an inversion by the end of the year!

By evening I’m learning German in a virtual course that just kicked off this week.

Sprechen Sie Deutsch?

It feels good to actively pursue my goals and dreams, and it feels even better to fuel them with my favorite foods.

I’m fiercely protective of my nourishment right now, because with all of the go-getting, there isn’t as much time for rest.

So, let’s make sure we have a cozy and nourishing lunch for the weeks ahead.

This Curried Cauliflower Kale Salad is made with tart cherries, cashews, chickpeas, and avocado in a creamy yogurt tahini dressing.

It’s the hearty salad you need for winter lunches in the colder months!

10 Vegan “Date Night In” Dinners

By Flora & Vino Leave a Comment

A collection of 10 simple and delicious vegan and gluten-free “date night in” dinners that are feel fancy but are easy to make and fun to share.

Sweet Potato & Avocado Rolls With Sriracha Tahini by Flora & vino

It’s that time of year where it’s easy to feel a little lost, yeah?

It’s cold.

It’s dark.

The holidays are over and the expanse of the year ahead can feel heavy and hard.

The worst part is, despite the cold and gloom, we haven’t had any significant snowfall here in Maryland!

So, I’ve been prioritizing quality time with friends, getting outside every day, and staying active to beat the winter blues.

Another activity in my “winter survival toolbox” is cozying up at home and making a fancy dinner.

Usually I make dinner here at F&V, because I’m typically brimming with ideas for recipe testing or serving up leftovers from a shoot.

But, whenever M does get involved in the kitchen, I remember how much fun it is to have a cooking partner!

We love our weekly takeout but some of my favorite dinners are the ones that we make and enjoy together.

Today I’m sharing 10 Vegan “Date Night In” Dinners!

These aren’t your average meal prep bowl; they feel elevated and fancy while still being easy to make together and fun to share.

And, if you’re living solo, take this post as inspiration to take yourself on a date to a big fancy dinner of your making.

Bookmark this post for birthday dinners, Valentine’s Day, anniversaries, or anytime you want to an elegant plant-based dinner without changing out of your PJs.

Favorite Plant-Based Thanksgiving Sides

By Flora & Vino Leave a Comment

My favorite plant-based Thanksgiving sides that are also hearty, delicious, and gluten-free! Mix and match to create a cozy vegan Thanksgiving spread.

Delicata Chickpea Bake With Almond Butter “Gravy” by Flora & Vino

I’ve seen 33 Thanksgivings but this will be the first year that I’m hosting people!

In preparation to be a good hostess, I have a lot of questions about hosting etiquette, like:

Is it too soon to decorate the house for Christmas?

How many camping chairs can I fit around the kitchen table?

Is there such a thing as too many Thanksgiving sides?

Thanksgiving sides are my *favorite* part of the whole holiday menu.

I’ve never found it hard to have an entirely plant-based Thanksgiving loading up on my favorite side dish recipes.

This collection of My Favorite Plant-Based Thanksgiving Sides has something for everyone this Thanksgiving Day.

I wish I could have you *all* over for Thanksgiving, friends, but I’m pretty sure I don’t own enough camping chairs for that, so this is the next best thing!

Mix and match these vegan and gluten-free dishes to create a beautiful bountiful holiday spread to share.

And these sassy sides aren’t just for Thanksgiving!

Save this recipe round and make them again for Christmas, New Years, and all of the winter holidays that bring you joy.

Candied Yams with Cacao Nibs & Pecans

By Flora & Vino Leave a Comment

Candied yams naturally sweetened with coconut sugar and pure maple syrup served with cacao nibs and pecans. Perfect for a vegan holiday side to share!

Candied Yams served in bowl with Cacao Nibs and Pecans by Flora & Vino

Whenever we went to my grandma and grandpa’s house my grandma served candied yams for dinner.

I loved them because to they tasted *so* much better than your average sweet potatoes.

That’s probably because they were dripping in sugar-y syrup, which little Lauren thoroughly appreciated.

I haven’t had candied yams in years, but I wanted to make a lightened up version that’s vegan and naturally sweet.

This version is totally refined-sugar-free and lightly sweetened with coconut sugar and pure maple syrup.

These Candied Yams with Cacao Nibs and Pecans are still sticky sweet and comforting.

Top them with cacao nibs and chopped pecans for a fun vegan holiday side to share!

5 Warm Salads to Make

By Flora & Vino Leave a Comment

5 Warm Salads to make when the weather is cold and you’re craving something cozy but fresh. Pair these with protein or grains for a side or main meal!

It feels like M and I have been away more than we’ve been home for the month of October.

I’m currently writing to you from Lexington, Kentucky, where we are visiting M’s family!

We’ve already seen a horse race and completed a tour at a local distillery.

From Kentucky we’re driving on to Indiana to see my family for our annual family reunion.

So, this trip in total will be a lot of driving, a lot of family, and, so far, a lot of fun!

I’m honestly not a road tripper, and being in the car usually makes me a bit nauseous and a lot antsy, restless, and moody.

Something about being trapped in a tiny space hurdling down highways makes me feel all kinds of existential and pensive.

However, it has its perks, like being able to pack whatever I want: i.e. a bag dedicated only to shoes and two coolers packed with meal prepped food.

It’s surprisingly warm in Kentucky, so I’m currently loving my classic chilled overnight oats and wraps.

However, it’s the time of year where I start craving warm cozy things all day long.

I’ve always been a firm believer in the warm salad, because when it gets cold raw salads just sound less appealing.

Today I’m sharing my favorite 5 Warm Salads to Make this season!

Try pairing them with grains or plant-based protein for a heartier meal or enjoy them solo for a light lunch or dinner!

They’re also perfect as a side dish to add some color to your upcoming holiday spread.

Let’s make warm salads a social norm, shall we?

Pumpkin Apple Baked Quinoa

By Flora & Vino 2 Comments

Pumpkin apple baked quinoa bakes in an hour for a delicious meal prep breakfast full of fall flavor. Serve warm or chilled with your favorite cozy toppings!

Pumpkin Apple Baked Quinoa served in a bowl with SunButter by Flora & Vino

When I was visiting North Carolina this past summer my family surprised me with all sorts of plant-based baking!

My favorite was an Apple Baked Quinoa that my aunt made for our Sunday morning breakfast.

It takes an hour to bake, so I recruited everyone for a family yoga session so we could stretch while it baked.

We moved into tree and triangle while the oven filled the living room with the smell of baking cinnamon and apples.

After savasana, we enjoyed the quinoa warm with nut butter, granola, and more baked apples.

It was so delicious that I immediately started scheming of my own variation…one including pumpkin.

This Pumpkin Apple Baked Quinoa bakes in under and hour for a delicious meal prep fall breakfast!

10 warm breakfast bowls to cozy up to on cold fall and winter mornings. Sweet and savory options packed with plant-based protein to start the day strong!

This week I’ve been craving hot breakfasts.

The kind that make stumbling out of bed and into the kitchen a little easier.

My go-to lately has been grain-free hot cereal with blueberries, granola, and nut butter.

These bowls will warm you from the inside out and are perfect paired with a mug of steaming coffee.

If you’re still in an only oatmeal rut, maybe you might want some cozy vegan breakfast bowl inspiration, too?

At first this post started as a collection of warm cereal bowls, but then I decided to add some savory breakfast bowls, too.

This collection of 10 Warm Breakfast Bowls to Make has sweet and savory options that are packed with plant-based protein to start the day strong!

I’ve included lots of creative options like baked quinoa, tofu scramble, and even millet for breakfast.

Halloween Recipe Round Up

By Flora & Vino Leave a Comment

20+ vegan and gluten-free Halloween inspired recipes including candies, baked goods, and snacks. Mix and match to create the perfect spooky spread.

Friends, I can’t believe that I’m running my first marathon THIS WEEKEND.

Me. 26.2 miles. Chicago. Let’s go.

As I tend to do with big milestones, I find myself subconsciously dividing my life into two eras: pre-marathon and post-marathon.

Mostly, it’s a lot me saying in response to any given task, “I’ll get to it after the marathon”.

But that’s because my brain is full of the race map, carb-loading, running gear, and, oh, you know, SURVIVING it.

The longest I ran on my training plan was 20 miles, which felt challenging but doable.

They say that the last 6 miles is all *mental*; a comforting belief that I’m clinging to.

At least I won’t be running it alone!

My friend in Chicago will be joining me for the race.

And M will be there, too, meeting me at checkpoints so I can throw layers at him and chug electrolytes and dried fruit.

In the midst of planning and prepping for a long weekend in the windy city, it occurred to me that I don’t have a proper Halloween recipe round up on F&V.

So, instead of stressing about whether I will or will not return a marathoner (I will, I will!), I put together a fun mix of Halloween recipes for you.

This Halloween Recipe Round Up includes over 20 vegan and gluten-free Halloween inspired recipes including candies, baked goods, and snacks.

Mix and match them this year to create the perfect spooky spread!
