I’m back from my second European adventure!

If you’ve been around here a while, you know that I made my first trip to Germany last December to meet M’s family in friends.

It was really special to be back again for warmer weather and see the countryside green and alive. 

When I arrived it was strawberry, cherry, and Spargel (asparagus) season! 

I also saw my first Schwimmbad (swimming pool) and Biergarten (beer garden) in M’s home town. 

We went on a camper van adventure to Austria and Switzerland, hiked the Zugspitze (tallest mountain in Germany), and attended the beautiful wedding of a friend. 

But probably my most favorite parts were hanging out at M’s house.

Plucking cherries straight from the tree, yoga on the patio, chess lessons from M’s little brother, reading with M sprawled across the couch. 

It was a busy but beautiful trip and my only regret is that I didn’t improve on my German more before going! 

I returned to the U.S. this past weekend tanned, tired, and craving all of the greens. 

This Summer Salad Inspiration is a collection of my favorite salads for warmer weather.

I’ll be making some to reset after traveling and hope you’ll join me!

Rainbow Rice Paper Wraps with Black Sesame Sauce

This year M and I have been making our way through the Marvel universe. 

It started with all of The Avengers films and led us all the way to, most recently, to Venom (which kind of loosely connects to the Spiderman world, right?). 

Anyway, this is all relevant because the night we made these Rainbow Rice Paper Wraps with Black Sesame Sauce I took a giant bite of rice paper wrap dipped in black sesame sauce. 

I overestimated the size of the bite and drippiness of the sauce so black sesame sauce dribbled down my chin while I greedily chewed. 

M took one look at me and burst out laughing, saying that I looked just like Venom. 

If you know, you know. 

Afraid to look at myself in the mirror, I hastily wiped the inky sauce off of my face with a wet paper towel. 

Anyway, these Rainbow Rice Paper Wraps with Black Sesame Sauce are too good to worry about looking cute while you eat them. 

They’re made with crunchy raw veggies and baked tofu with a delicious black sesame sauce that you’re going to want to drink.

It’s almost dad’s day in the U.S., friends. 

It occurred to me recently that I have a Mother’s Day Recipe Round Up but not one for Father’s Day. 

How did that happen?! 

To be fair, I think Mother’s Day has more hype surrounding food and food planning. 

Right or wrong, I associate Mother’s Day with brunches, breakfasts, and desserts and Father’s Day with outdoor summer adventuring. 

That’s probably because I’m used to Mother’s Day brunch and Father’s Day fishing trip. 

But that doesn’t mean that dear old dad doesn’t want a bite to eat on his day, too!

Blackberry Baked Quinoa

This past weekend I auditioned at a local studio for a potential yoga teaching position!

When I completed YTT200 back in 2020, I said it was for the personal development. 

“I just want to learn more about yoga and more about myself,” I said to anyone who asked about my intentions to teach. 

And I did. 

But in doing so, I realized that the gift of yoga was one that I actually loved sharing, even if it made me sweat and shake standing at the front of the studio. 

The nerves quickly melted away on Sunday as I lead the students through a flow of my creation. 

When we shared a collective inhale and exhaled “OMMMM” after Savasana I was *proud* of myself. 

Regardless of the outcome, it was deliciously satisfying to challenge myself to reach for more. 

You know what else is deliciously satisfying?

Quinoa…for breakfast!

There are just some meals or style of meals that I tend to make on a weekly basis. 

Wednesday is usually pasta night here at F&V. 

I love making pasta because it’s relatively inexpensive, easy to throw together, and tastes like a big hug mid-week. 

Growing up, pasta night usually meant red marinara on noodles with a a protein. 

But M isn’t the big fan of tomato sauces, which is fine, because  tomato sauces aren’t always the biggest fan of my stomach.

So, I’ve been experimenting with creamier sauce alternatives, like alfredo, pesto, and now…SunButter!

This 1-Pot SunButter Pasta is my latest favorite pasta dish. 

It’s made in in 1-pot with legume pasta and garden vegetables in a creamy SunButter-based sauce. 

It’s perfect to make for easy weeknight dinners– I usually get it on the table in less than 30 minutes before our standing Wednesday game night!

I’ve been on a *huge* peanut butter and jelly kick recently, friends. 

I think I approach the classic combination of fruit and nut butter with more curiosity after M explained that it really isn’t a thing in Germany.

It’s hard for me to divorce the nostalgia of childhood from mixing sweet jam and nut butter…in any form. 

With berry season well on its way, I thought I should get a head start on making recipes bursting with berries.

This week it felt hard to leave my house. 

Let’s be honest, it’s *so* much easier to stay home in sweatpants with my hair in a messy bun. 

I’ve always been a bit of a home body, but the pandemic only reaffirmed the fact that my home is my sanctuary, my happy place, my safe space. 

In my house, I’m completely in control.

I can work from home, workout from home, and dine from home, creating a menu and a routine and a rhythm. 

But this week when I had the opportunity to try out a new yoga studio space, I mixed things up. 

Although I felt a huge resistance to getting in the car and getting there, I’m so glad that I mustered up the courage and willpower to close the door and GO. 

As I settled into down dog, breathing with 12 yogis in a collective courageous attempt to make space for ourselves during our crazy day, I was content. 

*This* could be my new happy place, I thought. 

So, I challenge you to make some time for yourself today, whenever you’re ready this post. 

Do something different, something new, something that makes you a bit nervous.

How are the spring time allergies, buds? 

It looked like it was snowing today, there was so much plant and tree matter flying through the air. 

This is my first time navigating allergy season in Maryland, and I was really hopeful that the sniffles might just…skip me.

My symptoms are mostly triggered by those awful orange oak strings that litter the streets and sidewalks. 

So that was probably wishful thinking because our back porch faces a wooded area filled with oaks.

Doh. 

I’m limiting my time outdoors a lot more than I’d like and showering in the evenings to get the tree stuff off of me. 

It’s hard because this is the time of year when it’s the *perfect* temperature to do all things outdoors. 

However, I know something that tastes like spring and summer straight from the fridge.

I’m really excited about this recipe because it’s one of the breakfast staples in my house. 

If you’ve spent any time in the F&V breakfast archives, you know that I’m a consistent sweet breakfast eater. 

But whenever I *do* make the first meal of the day savory, it’s *always* with a tofu scramble! 

This tofu scramble, to be exact. 

So today I’m sharing the long overdue tofu scramble recipe that I’ve made, tweaked, and loved over the past few years. 

My Easy Tofu Scramble Plate is made with extra-firm tofu, garden vegetables, and nutritional yeast.

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
