Soooo have you played Among Us yet?

I first played this murder mystery game + aliens a few weeks back with friends from high school. 

I traced my finger around the space map, frantically tap tap tapping on doors and tasks without any idea how to kill or sabotage. 

Well, I’m not much better now, either. 

Last night I played virtually with a big group- friends, family, and friends of friends. 

I made my first kill as the imposter quickly and easily…and then proceeded to self report the death without realizing I self reported. 

So I got caught pretty fast as I stumbled to fabricate a story on the spot. 

Doh. 

I probably should have said that my alibi was smashing root veggies for this post, eh? 

In other news, Thanksgiving is nearly upon us, and I have a delicious and beautiful holiday plant-based sides for you.

I’m writing this in my recliner next to windows so mottled with raindrops that the leaves on the trees look like an impressionistic painting. 

The weather has been seriously gloomy this week. 

Which is kind of a bummer because that means no outdoor adventures.

Well, unless you count braving the grocery store in sheets of rain. 

The weather is a big switch from last week when I climbed Juliet’s Balcony at Great Falls National Park five times. 

It was a good day of climbing; the rock felt grippy and malleable under my chalked fingertips and my feet found impossibly comfortable footholds. 

At the top, I whooped and hollered and at the bottom I sat with M and we ate Pumpkin Apple Bliss Balls. 

Usually when climbing outdoors pre-packaged bars are my go-to for refueling. 

So it really was a treat to sink my teeth into these energy bites made with apple, oats, and pumpkin.

My quads are *still* sore from hiking Old Rag Mountain this past Tuesday. 

The last time I hiked this 10.2 mile loop trail was back in 2015 and I don’t quite remember my quads screaming at my in this acute fashion. 

My one goal in setting out was to stay well hydrated because last time I trekked up 3,284 feet I ran out of water at the tippy top. 

Luckily, a fellow hiker tossed me a spare bottle that I chugged with Dan before the descent. 

So this time I vowed to have plenty of  H20. 

I took multiple bottles, which ended up being a *really* good idea. 

In the first 10 minutes, I unscrewed my purple Lifefactory glass bottle and, in a tragic slip, dropped it on the ground; 22 oz of filtered water watering the leaves around my hiking shoes. 

It ended up fine because my 48 oz Nalgene magically sustained me for the remainder of the climb. 

I even passed some energy bars to a hungry hiker on the way up, to give back that Old Rag good karma that I received last time. 

The autumn colors at the top were absolutely beautiful, guys! 

M and I sat shaded by a boulder, eating food smashed for our packs and looking out over a sea of burnt sienna, evergreen, and amber tree tops. 

The only thing missing on a long hike are the greens.

This Garlic & Lemon Roasted Broccoli is my current favorite side dish that’s sure to ehance any of your plant-based meals!

Do you ever moments where you completely forget we’re in the middle of a pandemic?

Usually the knowledge is acutely present in the forefront of my consciousness, but every now and then I completely forget.

It mostly happens when I’m outdoors, mask-free, soaking in the sunshine, walking and laughing with M.

Guys, those moments are the best.

It also happens when I’m writing– sharing content Instagram by means of a virtual connection that I was accustomed to far before it was the new normal.

Or when I’m scurrying around the kitchen, throwing plants in pans to make dinner.

Let’s do more things that make us forget about the precariousness of the current age.

Chocolate Almond Butter Granola

There’s a running joke in my house that if something doesn’t have chocolate in it, it won’t get eaten.

Which is partially true.

The banana bread loaves that come out of the oven clustered with chocolate chunks definitely goes faster than those that don’t sport dark chocolate spots.

Then there’s my favorite store bought Chocolate Peanut Butter Granola which is absolutely delicious and *highly* addictive.

You’ve been warned.

Naturally I grab for the big granola hunks with the chocolate chips, first, because those are the best.

Wouldn’t you?

Well, last week, M peered into the resealable ‘nola bag and asked deadpan if I had eaten all of the chocolate out of the granola mix *again*.

Er, guilty.

Since then, we’ve established that said granola is mine to do as I please.

Which means eating all of the chocolate first, because there’s no wrong way to eat a bag of granola.

Can I get a witness?

Naturally I wanted to try to recreate a highly addictive granola of my own, but make it oil-free with as much dark chocolate as I want.

This Chocolate Almond Butter Granola is so good, I might even save a bit for you.

How was your Labor Day?

My long weekend was pretty good.

I went outdoor climbing for the first time.

Yesterday, for Labor Day, I actually mostly spent, ironically, laboring.

I cleaned the house from fans to baseboards and conquered a meal prep of the likes my fridge hasn’t seen since 2019.

I’m talking pre-made quinoa, fresh chopped celery, gleaming clean berries, and fresh baked sweet potato rounds.

I even made a batch of my Sweet & Spicy Tomato Jam to properly send off summer.

Tomorrow is the day.

I’m going outdoor climbing for the first time!

Last night I practiced how to tie myself into the harness and belay over and over and over again.

My figure eight knot is looking a lot more recognizable as an 8 instead of a mess of twisted rope and my stopper knot actually stops.

Also, we had a pretty solid makeshift anchor situation going, guys.

The rope looped around the stairway banister and cascaded down the steps to the basement.

As I ascended steps, I practiced the motion of belaying.

We’re packing the car tonight with the supplies and gear and FOOD.

Wait, you *knew* I would come to the crag prepared with snacks.

Ever since I moved into my townhome as a renter, things have been, well, falling apart.

The first offender was the dishwasher, that, to be honest, never really cleaned dishes very well from the beginning.

Then there was the great dryer debacle of 2020 where, for the span of three months, I hung all of my clothing to dry on a flimsy hang dry rack.

Crunchy towels and jeans are not fun, friends.

The doorbell stopped working after about a month so I’ve grown accustomed to listen intently for persistent knocks.

I’ve also cohabited with a mouse, a swarm of ants, and a lot of web-making spiders.

I joked to my parents on the phone a few weeks back that the only thing that hasn’t gone wrong yet was the AC.

I spoke too soon.

This past Saturday morning I woke up to a stuffy hot home with temperatures on a steady upward incline.

My Nest thermostat didn’t respond to all of my prodding and pushing on the dial so I diagnosed the AC– *gasp*– BROKEN.

Luckily, we’ve had several days in the low 80’s and mid-70’s here in Virginia, making it possible for me to have the windows down and the ceiling fans on.

So the past few days I’ve been limiting my oven use to stay cool.

Luckily, I made Fig Newton Breakfast Bars when the AC was still kicking.

It’s true that the hardest part of doing something is starting.

I ran this morning for the first time in over a month.

After lacing up my Brooks running shoes I did three invigorating laps around the paths just beyond my neighborhood.

The pavement felt like it was propelling me forward each time it connect with the sole of my cushioned shoe and my iPhone felt weightless in my hand despite the fact that I left my running belt at home.

Kind of like this post, that for whatever reason, I felt like procrastinating.

Writing about food isn’t always as much fun as eating it, you know?

Unless it’s a stuffed vegetable, which, if you’ve been following me for a while, you know is my forte.

I spent Independence Day from the comfort of my own home with good food and good company.

The only fireworks I saw this year were the sparklers that lit up the asphalt on my neighborhood streets.

Every time we heard a bang I ran to the window, craning my neck left to right for any trace of glowing sky.

You’d be proud to know that I took the entire weekend off work to really relax and commemorate the red, white, and blue.

It’s honestly been hard to get back into the swing of things this week after a long holiday weekend.

This past Monday I woke up and had to take a few hours to center myself back into the work and kitchen mindset.

Can’t I just eat leftover watermelon and plant-based burgers all week?

Well, maybe…

But one of the things that always makes me feel more grounded and prepared is make ahead breakfast.
