This weekend I cut my hair for the first time in….a while.

And I don’t mean a trim, I mean a *real* haircut.

The kind where your hair stylist chops off inches and holds it up in the mirror for you to gasp in excited horror. 

I had been committed to growing out my hair since I had my pixie cut back in 2013. 

Sure, I had a few slip ups where I went short instead of long,  but for the most part, I’ve been on the “grow out” train for about 10 years. 

So it felt so liberating to walk in and show my girl pictures of lobs (long bobs) with a deep side part and say, “Let’s do this!”

The change feels so fresh and fun and I can’t stop reaching for the excess hair like a phantom limb where I used to be able to pull it back into a long pony. 

I have a fun new recipe for you to try today. 

It’s a bit snacky, a bit dessert-y, and a lot delicious. 

It’s a Cookie Dough Protein Truffles, made with my favorite Evo Hemp Cookie Dough Hemp Protein Bars and dark chocolate for a sweet bite packed with protein. 

You’re going to love them for a quick pick me up that’s packed with protein and energy and gift-wrapped in chocolate!

Why Make Cookie Dough Protein Truffles

I also love this recipe because it’s SO simple, but you might not think of it unless you saw the recipe. 

When I first tried Evo Hemp Cookie Dough Hemp Protein Bars they tasted like a decadent dessert to me. 

I was immediately obsessed with their “fudgey” texture and cookie dough flavor.  

These hemp bars are made with quality ingredients including hemp seeds, cashew butter, and chocolate chips. 

They have 12 grams of plant-based hemp protein to support your active lifestyle.

I loved taking these bars with me on my recent trip to Germany, and I always have them in my purse and gym bag as a quick snack. 

Hemp protein is super easy to digest, making these vegan and gluten-free bars ideal for anyone with food sensitivities.

What You Need to Make Cookie Dough Protein Truffles

Here’s what you need to make Cookie Dough Protein Truffles:

  • Evo Hemp Cookie Dough Hemp Protein Bars
  • virgin coconut oil 
  • vegan dark chocolate chips 

That’s it!

How to Make Cookie Dough Protein Truffles

Prepare a sheet pan meal with parchment paper and set aside. 

Melt the coconut oil in a small saucepan over medium-low heat. 

Add the bars to a high-speed blender or food processor along with the melted coconut oil and pulse until the bars are in a rough ball.

Be careful not to over-blend or you’ll lose all of the chocolate chips, which would be a travesty! 

The dough should stick together when pressed with your fingers. 

If it’s too crumbly, add a *tiny* bit more melted coconut oil. 

Scoop the dough out of the blender using a cookie scoop and roll it into balls with your hands.

Chocolate Tips & Tricks

Add the chocolate to a saucepan over medium heat and heat until the chocolate is fully melted.

Transfer the melted chocolate to a small bowl.

Dip the cookie dough balls in the melted chocolate until they’re completely coated.

My truffle hack: I like to use a toothpick or two forks to allow the melted chocolate to drain off better! 

Allow the excess chocolate to drain before transferring them to the parchment lined baking sheet.

Toppings for Cookie Dough Protein Truffles

Complete this process until all of the cookie dough protein balls are coated in chocolate.

At this point, you can leave the truffles plain or sprinkle them with Evo Hemp Hemp Hearts.

I highly recommend adding a bit of hemp hearts for a little more protein and aesthetics! 

If you used a toothpick, be sure remove it before allowing the balls to harden.

Transfer the cookie dough balls to the freezer or refrigerator for 10-30 minutes to harden. 

Store the cookie dough truffles in an airtight container in the refrigerator for up to 2 weeks and freeze them for long term storage.

How to Serve Cookie Dough Protein Truffles

Enjoy these Cookie Dough Protein Truffles as a delicious and fun snack or dessert. 

I love to store them in the refrigerator to grab in the afternoon when I’m feeling low energy and craving chocolate.

Each ball is roughly half of one Evo Hemp Cookie Dough Hemp Protein Bars and contains ~6 grams of protein.

That’s not bad for satisfying your sweet tooth, right? 

They look beautiful topped with hemp hearts, so make them to share with your friends as a fun pre/post workout snack. 

They also make for a sensible dessert in the evenings alongside a cup of decaf coffee or tea.

Description

Easy Cookie Dough Protein Truffles made with Evo Hemp Cookie Dough Hemp Protein Bars and dark chocolate for a sweet bite packed with protein.


Ingredients

  • 6 Evo Hemp Cookie Dough Hemp Protein Bars (Use Code “FLORA20” for 20% off!)
  • 1–2 tsp virgin coconut oil
  • ~1 cups vegan dark chocolate chips 

For serving

  • Evo Hemp Hemp Hearts

Instructions

  1. Prepare a sheet pan meal with parchment paper and set aside. 
  2. Melt the coconut oil in a small saucepan over medium-low heat.

At this point, you can add a sprinkle of hemp hearts on top or leave the truffles plain. If you used a toothpick, remove it before allowing the balls to harden. Transfer the cookie dough balls to the freezer or refrigerator for 10-30 minutes to harden. 
  7. Enjoy immediately! Store cookie dough truffles in an airtight container in the refrigerator for up to 2 weeks and freeze for long term storage.
