In the past week, Flora took her first 1-mile walk with us! 

The walk, which should normally take about 20-ish minutes, ended up taking over 30 because of lots of…

“Leave it, Flora!”, zig-zagging, “Drop it, Flora!”, dragging, “Heel, Flora!”, pulling…you get the idea. 

Long story short: we’re still working on leash walking, and it’s a PROCESS. 

She immediately came home and proceeded to lap water ferociously, lay down dramatically, and then initiated more play 10 minutes later. 

Well, I guess we can’t tire her out. 

With all this dog walking and dog training, I’m relying on healthy snacks to get me through this fall. 

I’ve always been a sweet snacker, and this SunButter Date Caramel Apples hits just right for the season.

This good-for-you snack is made with your favorite apples topped with homemade caramel and rolled in sunflower seeds and dark chocolate chips.

It’s the best fall snack and a great way to use up all of those apples we collect this time of year!

What You Need to Make SunButter Date Caramel Apples

This thick vegan caramel is so easy to make in a blender with 3 ingredients. 

Here’s what you need to make the SunButter Date Caramel:

  • Medjool dates, pitted
  • unsweetened almond milk
  • No Sugar Added SunButter

That’s it!

How to Make SunButter Date Caramel

Combine the dates, almond milk, and SunButter in a high speed blender or food processor and blend everything until it’s completely smooth and creamy.

Test the consistency and adjust as needed.

For a thinner consistency, add more almond milk in 1 TBSP increments.

For a thicker consistency, throw in a few extra dates.

Blend everything again to combine and repeat until you achieve your desired consistency.

I do recommend a thicker consistency for this recipe so that the SunButter Date Caramel is thick enough to coat the apples. 

The vegan date caramel should be thick and scoopable.

The “nutty” flavor of this No Sugar Added SunButter is delicious to compliment dates in this caramel! 

It’s also packed with plant-based protein and healthy fats for a superior snacking situation. 

I love that it adds a hint of sea salt and makes this recipe allergen-free. 

If you’d like to make this recipe entirely nut-free, try using soy or oat milk based milk.

How to Assemble SunButter Date Caramel Apples

Poke a lollipop stick or skewer that has been trimmed into each apple slice or whole apple.

Alternatively, you can poke the lollipop stick into a full apple, however, I think the apple slices are easier to eat. 

Use a spoon or spatula to smear the caramel onto each apple.

It doesn’t have to be perfectly coated; we’re going for imperfection in this recipe!

Toppings for SunButter Date Caramel Apples

For serving, I love adding some toppings. 

Toppings also make the date caramel less sticky and will allow you to place the apple on a parchment lined plate without it sticking.

Roll the caramel coated apple sliced with any additional toppings, like sunflower seeds and dark chocolate chips.

I personally love sunflower seeds and dark chocolate chips, but anything works!

You can also use granola, shredded coconut, or dried fruit.

Notes on Meal Prep

Store leftover vegan caramel apples in the refrigerator for up to 5 days.

If you’re preparing this recipe, I recommend storing the apples slices and caramel separately and combining just before serving. 

Store leftover date caramel in the refrigerator for up to two weeks and serve re-warmed or chilled.

Note: the vegan date caramel will develop a film on top and look darker the longer it sits in the refrigerator. 

This is completely normal and will not affect the flavor or freshness. 

Simply stir the caramel to remove the film and then serve. 

If you’d like to store the caramel coated apple slices ready made, try wrapping them in parchment paper for easier storing.

How to Serve SunButter Date Caramel Apples

Enjoy these SunButter Date Caramel Apples as an easy and festive fall snack. 

Try making it instead of peanut butter and apples as a quick snack. 

It would be great as a healthy snack for kids’ lunchboxes and after school eats, too! 

I love enjoying the dip throughout the week with apple slices for a mid-morning snack. 

If you have leftovers date caramel, try spreading it on toast, pancakes, or ice cream. 

It’s the perfect spoonable addition to any snack or breakfast.
