Lately I’ve been struggling with feeling like I should be getting back to Fall routines that no longer exist.
Kind of like that weird back to school feeling post-graduation, where there is no class to go back to.
So, what are we coming back to?
Well, I’m honestly not sure.
There are some consistencies, like the weather getting cooler, the seasonal produce, the leaves beginning to change color.
But so much has changed, like my family hosting the holidays virtually, kids being homeschooled, and voting by mail.
Maybe it’s time to make new routines, guys.
I made these Apple Butter Oatmeal Cookies that could become a part of your new fall routine.
These delicious cookies are packed with hearty oats and naturally sweetened with apple butter!
Eden Foods Organic Apple Butter
With fall right around the corner, I figured we could curb our enthusiasm with a naturally sweet apple recipe.
Apple butter is one of my favorite fall treats.
And no one does store-bought apple butter than Eden Foods Organic Apple Butter!
Each jar boasts a blend of family orchard Great Lakes’ organic Apple varieties slowly kettle simmered with organic apple juice concentrate.
It creates a tangy apple-y sweet spread without any refined sugars!
I love mixing it in my oatmeal, spreading it on toast.
Add Apple Butter to Cookies
So, why not bake apple butter into cookies?
Apple butter naturally sweetens these cookies and infuses them with fall flavor.
You can easily mix up these cookies in one bowl!
Aaand they only take 15 minutes to bake!
What You Need to Make Apple Butter Oatmeal Cookies
Here’s what you need:
- ground flaxseed
- almond butter
- maple syrup
- Eden Foods Organic Apple Butter
- gluten-free old-fashioned rolled oats
- gluten-free oat flour
- baking powder
- Himalayan sea salt
That’s it!
How to Make Apple Butter Oatmeal Cookies
The mixing method here is so simple!
Mix all of the ingredients in a bowl until you have a well combined sticky batter.
Fold in optional walnuts and raisins for extra texture and intrigue.
Dried cranberries, almonds, or any other nut and seed will work as an addition here as well.
Scoop the batter with a cookie scoop or a spoon to make 1 TBSP rounds.
You can leave the cookie dough rounded for a dome shape or smash it down with a fork for smaller flatter cookies.
Because the apple butter will turn the cookies slightly brown, be careful not to over bake them.
Your Apple Butter Oatmeal Cookies are done when the edges and bottom are golden brown and firm to the touch.
Allow the cookies to cool slightly before taking a big bite.

Apple Butter Oatmeal Cookies

Description
Oatmeal cookies with gluten-free oatmeal and no-sugar-added apple butter! Perfect for a healthy fall-inspired breakfast, snack, or dessert.
Ingredients
- 1 flax egg (1 TBSP ground flaxseed + 3 TBSP filtered water)
- 1/4 cup almond butter
- 1/2 cup maple syrup
- 1/2 cup Eden Foods Organic Apple Butter
- 3/4 gluten-free old-fashioned rolled oats
- 1 cup gluten-free oat flour
- 1/2 tsp baking powder
- pinch of Himalayan sea salt
- 1/2 cup walnuts, chopped (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat oven to 350°F and line a cookie sheet with parchment paper.
- Mix up your flax egg in a large mixing bowl and allow it to sit for 5 minutes to gel.
- Next, add in the almond butter, maple syrup, and apple butter and whisk with a fork to combine.
- Add the rolled oats, oat flour, baking powder, and Himalayan sea salt and mix well to combine.
- Fold in the chopped walnuts and raisins if adding.
- Drop cookies onto the parchment lined baking sheet in 1 TBSP mounds and bake for 15 minutes or until the edges are brown.
- Allow cookies to cool slightly before serving. Store leftovers in an airtight container in the fridge for up to one week.
