Hey you, how was your weekend?

I had girlfriends over for brunch on Saturday with an F&V inspired spread, followed by an epic trip to Target (does an un-epic version even exist?), and some serious fall cleaning around the house.

The usual combination of fun and mundane before the workweek begins again.

Oh, and most importantly, I made these Avocado SunButter Swirl Brownies!

They require only eight ingredients and are packed with healthy fats, protein, and plenty of fudgy chocolate flavor.

Are you team chewy or team fudgy brownie?

My high school boyfriend used to eat around edges of the big brownie sheet pan his mom made, enjoying the crispy edges, so when I came over only the haggard center remained.

Which was fine by me, because I’m more of a center brownie-pan kind of a girl.

You know, the ooey gooey center part that’s kind of half-baked, intensely chocolatey, and amazing?

That’s what these Avocado SunButter Swirl Brownies are– for the WHOLE pan.

What You Need to Make Avocado SunButter Swirl Brownies

Here’s what you need:

  • flaxseed
  • avocados
  • SunButter
  • maple syrup
  • oat flour
  • almond flour
  • cacao powder
  • baking powder

That’s it!

Ever tried baking with avos?

You might have, if you’ve made my Almond Butter Avocado Chocolate Chip Cookies last year– the cookies I tell anyone who will listen about.

So I’ve basically been planning my avocado brownie bash since then.

It’s here.

Avocados are IDEAL for baking in brownies because they add intense creaminess with whole foods healthy fats and zero added oils.

Smash them up well in this batter and they sort of melt into the mixture like magic.

I found smashing mine with a fork was enough to not notice any avocado texture, but if you’re really worried about it, try pureeing them in a food processor or blender first before adding to the batter .

The SunButter Swirl

Since we’re talking about healthy fats, we’ve got to talk about that seductive SunButter swirl, no?

The combination of sunflower seed butter, raw chocolate, and avocado is so good in a dessert, guys!

The recipe calls for 2 TBSP of SunButter in the batter and then more dolloped on top and swirled around abstract expressionism style.

You can add more post-baking, too, because too much SunButter isn’t a thing!

How to Serve Avocado SunButter Swirl Brownies

These Avocado SunButter Swirl Brownies are perfect for an anytime healthier dessert.

The recipe is naturally sweetened with pure maple syrup.

I used a 2:1 mixture of oat flour and almond meal to get that perfect fudgy center.

If you’re looking for a grain-free alternative, I tested an all almond flour version that wasn’t quite as sturdy, but still delicious.

Description

Avocado SunButter swirl brownies made with avocado and SunButter. Perfect for a clean chocolate-y dessert packed with healthy fats.


Ingredients

  • 2 TBSP flaxseed + 5 TBSP filtered water
  • 2 avocados, smashed (~1.5 cups)
  • 1/4 cup SunButter + 1/4 cup for swirling
  • 1/2 cup maple syrup
  • 1/2 cup oat flour
  • 1/4 cup almond flour
  • 1/3 cup raw cacao powder
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350°F and line a 9 x 5 or 8 x 8 baking pan with parchment paper.
  2. Prepare your flax egg in a large mixing bowl by whisking together the flaxseed and filtered water with a fork and allow it to sit and gel for 5 minutes.
  3. Add the smashed avocado, maple syrup, and SunButter to the same bowl and mix to combine.
  4. Add the oat flour, almond flour, raw cacao powder, and baking powder and mix again until everything is well-combined.
  5. Pour the brownie mixture into the lined baking pan and spread it into an even layer with a spatula
  6. Top the brownies with SunButter, dropping a few dollops around the pan. Use a knife or toothpick to create swirls. Lightly shake the pan to redistribute the batter if it gets clumpy.
  7. Transfer the pan to the oven and bake the brownies for 35-40 minutes, or until the center comes clean with pierced with a toothpick.
  8. Allow brownies to cool for at least 30 minutes to 1 hour before cutting and serving. The brownies will appear undercooked at first and will firm up slightly after cooling.
  9. Serve slightly warm! Store leftover brownies in the refrigerator for up to one week and freeze for longterm storage.

    Do you have any substitutions for the almondflour that are nut free? This looks like something my son would enjoy but he is allergic to nuts. I recently discovered your blog and absolutely love your recipes and photography.

      You can use gluten-free oat flour if you don’t mind using grains. Hope this helps!

    I made this the other day and subbed some ingredients:
    Tahini for Sun Butter, Hazelnut Flour for Almond Flour and also added a hint of vanilla extract and some espresso powder.
    They turned out delicous, but, they are a very unique brownie. They are more of a pudding or cream formed into a brownie. Super interesting but tasty! I baked them for the required time until they were set up. I also keep them in the fridge. They are a delicious treat!
