This holiday weekend I set a PR for most shooting stars seen in one evening.
On Memorial Day, M and I drove to the Shenandoah to see the Tau Herculids Meteor Shower.
We chose the Shenandoah because it’s low in light pollution with dark skies and great views, so it’s perfect for star gazing.
I yawned and grumbled getting there, but once I was cozied up in my camp chair with blankets surrounded by the glittering night, I was happy to be there.
Around 1 AM we watched stars streak across the sky while M took photos, hoping to catch a beautiful bright arch across the frame.
It’s always humbling to stare up at the night sky, feeling so incredibly small compared to those fire balls whizzing through space.
I can’t share the cosmos with you, but I can share some cosmic brownies with you that are pretty out of this world.
These Vegan Cosmic Brownies are made with almond flour and topped with Chocolate SunButter and dotted with sprinkles for a fun dessert!
Sometimes I have to remind myself that I need to keep testing dessert recipes.
M and I aren’t the biggest “dessert” people, so I usually test my sweets when I have plans with friends or family so I can pawn the sweet stuff off on them.
These Vegan Cosmic Brownies, however, I was sad to see go with M to his work.
It’s OK, because I recipe tested enough variations to have leftovers for days.
These Vegan Cosmic Brownies are the kind of brownies you want hanging around this summer.
What Are Cosmic Brownies?
If you’re on social media these days, you might have seen all of the variations of “cosmic brownies”.
They all looked delicious and decadent, but I was slightly confused at first.
Naturally, I Googled what a cosmic brownie was.
I mean, aren’t all chocolate baked things pretty, er, cosmic?
Apparently a cosmic brownie is defined as a super fudge-y brownie distinguished with chocolate frosting and sprinkles.
OK, so here’s my version.
What You Need to Make Vegan Cosmic Brownies
Here’s what you need to make my cosmic brownies:
- flax “eggs”
- unrefined coconut sugar
- unsweetened almond milk
- Organic SunButter
- almond flour
- raw cacao powder
- dairy-free dark chocolate chips
That’s it!
How to Make Vegan Cosmic Brownies
Preheat the oven to 350°F and line an 8 or 9-inch square baking dish with parchment paper.
I like to do this for easy clean up.
Alternatively, you can also also lightly grease the baking pan with coconut oil.
In a large mixing bowl, combine the ground flaxseed and filtered water and whisk to combine to form your flax “egg”.
Set this mixture aside for 5-10 minutes to gel.
Next, add in the coconut sugar, almond milk, and Organic SunButter and whisk everything until it’s smooth.
Sift in the almond flour and cacao powder and mix until all of the ingredients are well-combined.
The batter should be thick and pourable.
Finally, fold in the dark chocolate chips.
Pour the batter into the parchment lined baking dish and smooth the top off with a spatula.
Transfer the pan to an oven and bake the brownies for 20-22 minutes, then remove them from the oven to cool.
This is important: be sure not to over-bake your brownies.
The brownies will appear underdone when removed from the oven, but will firm up while cooling.

And let’s not forget the frosting:
- Chocolate SunButter
- vegan sprinkles

How to Decorate Vegan Cosmic Brownies
Let the brownies cool for 30 minutes before decorating them.
Now, this is the fun part, friends.
This is what takes these brownies from “regular” to “cosmic”.
Frost the cooled brownies with Chocolate SunButter and sprinkle them with your favorite vegan sprinkles.

From the first taste I had of Chocolate SunButter, I knew it would be *perfect* as a frosting.
This delicious creamy blend of sunflower seed butter and cacao is perfectly sweet and addicting!
It’s equal parts decadent and nutritious; packed with plant-based protein and healthy fats.
Spread it on these vegan brownies for an added layer of chocolate-y deliciousness.
Finally, sprinkle them with your favorite sprinkles (I love a naturally dyed vegan sprinkle), and voila.
Totally cosmic.
Slice the brownies into squares with a knife and serve!

YUM! Great brownie recipe. These turned out thinner for me but they’re so fudgy and rich that I didn’t mind that at all! I used half tahini and half almond butter, and I added a pinch of salt to the recipe too. I loved it! I will definitely make these again!
